Steps:
- Peel potatoes and boil in salted water along with cumin seeds.
- Drain and mash potatoes along with cumin seeds. Set aside.
- Cook sauerkraut seperately until sauerkraut is boiling. Drain.
- Cook bacon until brown. Drain reserving 1/2 cup bacon fat.
- Mix potatoes and sauerkraut with milk. Pour bacon and fat over or mix them in, which ever is prefered.
- Serve with roast pork or any smoked meats.

PIEROGIES WITH POTATO AND SAUERKRAUT FILLING
Times are very vague due to the hand work involved, I am slow but it is a labor of love. Take your time and enjoy working with the dough. This makes a great side dish sliced steak and green salad.

- Prepare the sauerkraut filling by melting the butter in a skillet over medium low heat. Stir in the onion, and cook until light brown, about 20 minutes. Add the drained sauerkraut and cook for an additional 5 minutes. Season to taste with salt and pepper, then remove to a plate to cool.
- For the mashed potato filling, melt the butter in a skillet over medium heat. Stir in the onion, and cook over medium low heat until light brown, about 20 minutes. Stir into the mashed potatoes, and season with salt and white pepper.
- To make the dough, beat together the eggs, oil and sour cream until smooth. Sift together the flour, salt, and baking powder; stir into the sour cream mixture until dough comes together. Knead the dough on a lightly floured surface until firm and smooth. Divide the dough in half, wrap half in plastic wrap then roll out the other half to 1/8 inch thickness. Cut into 3 inch rounds using a biscuit cutter.
- Place a small spoonful of the filling into the center of each round. Moisten the edges with water or egg wash, fold over, and press together with a fork or pinch with fingers to seal.
- Bring a large pot of lightly salted water to a very slow boil add 6-8 perogies at a time (do not crowd them) and cook for 3 to 5 minutes or until pierogi float to the top. Remove and drain.
- Serve with melted butter and carmelized onions spooned over the top.
- Or serve with horsesradish and sour cream.

GERMAN SAUERKRAUT AND POTATO BALLS
Who said they didn't like sauerkraut? C'mere! I got something for ya'! (I'll make you a believer yet!) The dipping sauce I used in the pic is honey mustard, but you could use whatever you like.

Steps:
- Place potatoes in a medium sized saucepan and cover with water; salt lightly.
- Bring to a boil over medium heat and cook until fork-tender; drain.
- Place potatoes in a large bowl and mash; then allow to cool for 5-10 minutes.
- Stir onions, drained sauerkraut, egg, salt, pepper, caraway, flour, and breadcrumbs into potatoes, forming a thick mixture.
- Pour some flour in a small bowl; do likewise to some bread crumbs.
- Beat 2 eggs in a small bowl also, set aside (Add more egg later if necessary).
- Heat deep fryer or oil (several inches deep in a frying skillet) to a temperature of 350 degrees.
- Take heaping tablespoonfuls of the potato mixture and roll in flour.
- Then coat with egg, then roll in bread crumbs.
- Do the same with several others.
- Fry balls (which should be the size of large meatballs) in small batches for 2-4 minutes or until golden brown.
- Drain on paper toweling, and serve hot.
- Makes 25 extra-large balls, or enough to serve about 6 people.
KRAUT TOPPED MASHED POTATO CASSEROLE
Great side dish for pork or pretty much any meat. If you have leftover mashed potatoes, use 'em.... just heat them first.

- Preheat oven to 375. Lightly spray/grease a 13 x 9 baking dish; set aside.
- Cut the potatoes into chunks and boil in salted water until tender.
- Drain the potatoes. Return to the pot and mash with the 1 tbsp butter, reduced-fat sour cream, milk, salt and pepper until mashed and fluffy.
- Spread mashed potatoes into bottom of prepared 13 x 9 baking pan.
- While potatoes boil, melt the 4 tbsp butter in a medium saucepan. Add the chopped onion and saute for about 5 minutes.
- Add the 2 packed tbsp of brown sugar; stir to dissolve.
- Add the drained sauerkraut and pepper. Stir and cook for about 2 - 3 more minutes.
- Evenly spread the sauerkraut mixture over the mashed potatoes. Sprinkle with the caraway seeds.
- Bake uncovered at 375 for 25-30 minutes or until sauerkraut topping begins to slightly brown.

- 1. SET THE OVEN AT 350 DEGREES.
- 2. In a small bowl, combine the water, brown sugar, vinegar, garlic, pepper; set aside.
- 3. In the skillet, heat the sauerkraut over medium high heat for 1 minute. Add the brown sugar mixture, stir well, and continue cooking for 10 minutes or until the liquid evaporates; set aside.
- 4. Meanwhile, in a large saucepan, combine the potatoes with cold water to cover and a generous pinch of salt. Bring to a boil and simmer the potatoes for 10 minutes or until they are tender.
- 5. Drain the potatoes and return them to the pan. With a potato masher, beat in the milk a little at a time with 1 tablespoon of the butter, salt, and pepper. Mash until smooth, then Combine all ingredients+mix well, Dot with the remaining 1 tablespoon of butter and sprinkle with salt and pepper. BAKE UNCOVERED FOR 30-40 MINUTES or until the top is golden brown.
