Lebkuchen image

The German town of Nuremberg has been famous for its lebkuchen since the late 1300s. The soft, cakey cookies are traditionally made with several spices, candied citrus peel, hazelnuts, and almonds.

3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground mace
1/4 teaspoon ground cloves
1/3 cup blanched whole almonds (about 1 3/4 ounces), toasted, plus more untoasted for decorating
1/3 cup blanched hazelnuts (1 1/2 ounces), toasted
1/3 cup diced candied orange peel
1/3 cup diced candied lemon peel
4 Medjool dates, pitted and chopped
3 ounces almond paste, crumbled into small pieces
1/3 cup apricot jam
3 large eggs
3/4 cup packed light-brown sugar
1/2 cup plus 3 tablespoons confectioners' sugar
2 tablespoons whole milk

Steps:

  • Whisk together flour, baking powder, salt, and spices. Pulse almonds and hazelnuts in a food processor until very finely chopped. Add candied peels and dates, and pulse until finely chopped. Add almond paste, and pulse to combine. Add jam, and pulse. Add eggs and brown sugar, and pulse. Add flour mixture, and pulse. Transfer dough to an airtight container, and refrigerate overnight (or up to 3 days).
  • Preheat oven to 325 degrees. Using a 2-inch ice cream scoop (1/4 cup), drop dough onto parchment-lined baking sheets, spacing cookies 3 inches apart. Place 3 almonds close together on top of each cookie. Bake until golden brown, about 14 minutes. Let cool completely on sheets on wire racks.
  • Whisk together confectioners' sugar and milk, and brush over cooled cookies. Let stand until set.

1 egg
¾ cup brown sugar
½ cup honey
½ cup dark molasses
3 cups sifted all-purpose flour
½ teaspoon baking soda
1 ¼ teaspoons ground nutmeg
1 ¼ teaspoons ground cinnamon
½ teaspoon ground cloves
½ teaspoon ground allspice
½ cup slivered almonds
½ cup candied mixed fruit peel, finely chopped
1 egg white, beaten
1 tablespoon lemon juice
½ teaspoon lemon zest
1 ½ cups sifted confectioners' sugar

Steps:

  • In a large bowl, beat the egg, brown sugar and honey until smooth. Stir in the molasses. Combine the flour, baking soda, nutmeg, cinnamon, cloves and allspice; stir into the molasses mixture. Stir in the almonds and candied fruit peel. Cover or wrap dough, and chill overnight.
  • Preheat the oven to 400 degrees F (200 degrees C). Grease cookie sheets. On a lightly floured surface, roll the dough out to 1/4 inch in thickness. Cut into 2x3 inch rectangles. Place cookies 1 1/2 inches apart onto cookie sheets.
  • Bake for 10 to 12 minutes in the preheated oven, until firm. While still warm, brush the cookies with the lemon glaze.
  • To make the glaze: In a small bowl, stir together the egg white, lemon juice and lemon zest. Mix in the confectioners' sugar until smooth. Brush over cookies.

MENNONITE SOFT WHITE COOKIES



Mennonite Soft White Cookies image

A sugar cookie that is not too sweet, but deliciously soft! I was served cookies like these by a Mennonite couple, and searched desperately for the recipe until I found this one on a Mennonite cooking website! They've been a big hit wherever I've taken them, and they're a family favourite! I've modified the recipe to have coconut on top, like they were first served to me. If necessary, add an extra 1/4-1/2 cup of flour to keep the dough from being too sticky, and if you don't have buttermilk, use 1 cup milk + 1 tsp. vinegar and let stand for 5 minutes before use. The measurements for the icing are approximate, as I don't usually measure the amounts exactly and they aren't given on the recipe site; make more if you need/like more! Enjoy!

1 cup shortening
1 1/2 cups sugar
2 eggs
1 teaspoon vanilla
1 cup buttermilk
4 cups all-purpose flour
4 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons butter or 2 tablespoons margarine
1/8 cup milk
1/2 teaspoon vanilla
1 1/2-2 cups icing sugar
1/2 cup shredded coconut (optional)

Steps:

  • Cream shortening and sugar together.
  • Add eggs and vanilla, beat well.
  • Mix flour, baking powder, baking soda, and salt in a separate bowl.
  • Stir flour mixture, alternately with the buttermilk, into the creamed mixture, until it forms a soft ball. Add extra flour if necessary.
  • Cover and chill in the fridge for about 1 hour.
  • Roll out on a floured surface to about 1/4 inch thickness, cut into circles or desired shapes and place on cookie sheets.
  • Bake at 375 degrees F. for 9 minute.
  • Mix all icing ingredients until mixture is of spreading consistency. Make sure butter/margarine is softened before using. You can also add food colouring if desired!
  • When cookies are cool, ice with icing.
  • Sprinkle coconut on tops as desired.

6 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon cream of tartar
1 tablespoon vanilla extract
1 cup all-purpose flour
½ cup packed brown sugar
½ cup shortening

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine the 1 cup flour, 1/2 cup brown sugar and 1/2 cup shortening. Mix until it reaches a coarse crumb mixture.
  • Stir together eggs, sugar, oil, and buttermilk. Then add dry ingredients and vanilla. Drop from tablespoon onto ungreased cookie sheet. Sprinkle crumb mixture on dough.
  • Bake until slightly browned, 8 to 10 minutes.

Steps:

  • Cream together the sugar and the butter. Add in eggs.
  • In another bowl, mix baking soda and flour. Add to sugar mixture. Add sour cream. Mix well.
  • Drop by teaspoonful on to a greased cookie sheet. Bake in a preheated oven at 350 degrees F (175 degrees C) for 12-15 minutes.

This is a Pennsylvania Dutch recipe for Lebkuchen.

1 ½ cups all-purpose flour
1 tablespoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground cloves
½ teaspoon cream of tartar
2 eggs
1 cup packed dark brown sugar
⅛ pound chopped candied citron
⅛ pound chopped almonds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a large baking sheet (approximately 14x16 or 11x17 inches).
  • Sift the flour, cinnamon, nutmeg, cloves and cream of tartar together.
  • Mix the eggs and sugar thoroughly. Combine this with the flour mixture and stir in the citron and almonds.
  • Roll dough out on a floured surface to 1/4 inch thick. Cut sheet of dough to fit on your baking sheet.
  • Bake at 350 degrees F (175 degrees C) for 15 minutes. Cut into squares or diamonds while still warm. Ice thinly with white or lemon frosting.
