Vegan Lentil Salad with Apples and Carrot image

This is a simple and healthy lentil salad that I love, especially in summer since it tastes great warm or cold. If you like it spicy, you can add a little bit of fresh jalapeno to the salad.

1 cup brown lentils, picked over
2 apples, cored and chopped
1 carrot, cubed
½ bunch chives, chopped
1 tablespoon chopped fresh parsley, or more to taste
5 tablespoons olive oil
2 tablespoons cider vinegar
1 teaspoon Dijon mustard, or to taste
salt and ground black pepper to taste

Steps:

  • Place lentils in a saucepan. Add enough water to cover by 1 inch. Bring to boil. Reduce heat and simmer, uncovered, until lentils are tender but not mushy, 15 to 20 minutes. Drain.
  • Combine lentils, apples, carrot, chives, and parsley in a bowl. Stir together olive oil, vinegar, mustard, salt, and pepper in a cup and pour over lentil mixture. Mix and serve.

Lentil Salad with Mushrooms and Apples image

Number Of Ingredients 12

Kosher salt and freshly ground black pepper
2 cups red lentils or orange dal
1 cup butternut squash, peeled, seeded and cut into 1/2-inch dice
1/2 cup extra-virgin olive oil
8 fresh sage leaves, chopped
8 ounces oyster mushrooms, broken into pieces
1/2 cup walnuts, chopped
2 tablespoons Dijon mustard
2 tablespoons white wine vinegar
1/2 cup fresh parsley leaves, chopped
8 radishes, thinly sliced
1 apple (unpeeled), cut into 3/4-inch dice

Steps:

  • Preheat the oven to 425 degrees F. Line a sheet tray with parchment paper.
  • Bring a large saucepan of water to a boil. Season with salt and add the lentils. Cook until just tender, 10 to 12 minutes. Drain and transfer to a large bowl to let cool to room temperature.
  • Meanwhile, spread the squash in a single layer on the prepared sheet tray. Sprinkle with salt, drizzle with 2 tablespoons olive oil, and sprinkle with pepper and the sage. Roast the squash until it begins to brown, 15 to 20 minutes.
  • Toss the mushrooms in a bowl with 2 tablespoons oil and salt and pepper to taste. Add the mushrooms to the squash and roast until the squash is tender, about 10 minutes longer. Toss in the walnuts and continue to cook to toast the walnuts, another 3 to 4 minutes.
  • Whisk together the mustard, vinegar, salt and pepper to taste and the remaining 1/4 cup olive oil in a small bowl. Set aside.
  • Add the squash, mushrooms and walnuts, parsley, radishes, apples and vinaigrette to the bowl of lentils and toss to coat evenly. Serve.

  • Begin by cooking the lentils. Place the lentils and vegetable stock in a saucepan and bring to a boil before reducing to a simmer. Simmer for 25 minutes or until the lentils are tender. Drain and set aside to cool.
  • Place a large ]frying pan over a high heat. When the pan has come to heat (don't add oil) add 1/3 of the mushrooms. Leave for 2 minutes before then give the pan a shake to flip them over. The mushrooms should be lightly golden. Cook for a further minute before removing from the pan and repeating with the remaining mushrooms.
  • Reduce the heat to medium low and add 2 tsp of olive oil or vegan butter and add the shallot or onion. Cook until slightly golden on the edges and return the mushrooms to the pan and add the garlic and chilli flakes and cook for 2 minutes, or until the garlic is fragrant, but not browned as it will taste bitter. Set aside to cool.
  • Toss the lentils, mushroom and garlic together along with the lemon juice and the extra virgin olive oil. Season to taste and add the parsley and rocket just as you're serving.

  • Cook the lentils, with the salt, according to the package instructions. Make sure you don't overcook them, you just want them to be tender. I check every minute or two toward the end of the cooking time.
  • In the meantime, chop up your apples and toss them in a bowl with the lemon juice. Store in the fridge for now.
  • When the lentils are done, drain them and rinse with cool water to stop the cooking process. Stick them in the fridge to cool.
  • Once cooled, toss the lentils with the apples and the remaining ingredients. Toss with the dressing (add as much as you want, this is totally based on preference.)
