CUCUMBER CREAM CHEESE SPREAD
A creamy, yet light and refreshing spread that is perfect to use on crackers, baguettes, bagels or on top of vegetable slices.

Steps:
- Add cucumber to food processor bowl.
- Cut the roots off green onions and place in food processor.
- Cover and process until coarsely chopped - be sure to not over process. You want chunks not puree/liquid.
- Add cream cheese, Worcestershire sauce and salt to the bowl and cover and process until smooth. Transfer mixture to a serving bowl.
- Cover and refrigerate overnight to allow the flavors to meld.

THE BEST CUCUMBER SPREAD
That's the way the recipe was titled when I got it from a friend and I saw no reason to change the name. Summer is coming and this is the perfect snack for warm weather. I prefer baked wheat crackers as a base but I'm sure any other cracker or thinly sliced miniature bread loaf will work well too. Don't be put off by the initial steps; it's worth the effort! No cooking and prep time does not include a cool down in the refrigerator to blend the flavors.

- Peel the cucumbers. Slice them in half lengthwise; remove the seeds with a spoon or melon baller. Grate the cucumber halves by hand or with a food processor.
- Here is the part that makes it work; squeeze the liquid out of the grated cucumbers by the handful, then place them on several layers of paper towels. Cover with additional layers and press down hard to squeeze out all the moisture. The rest is easy!
- In the bowl of a food processor fitted with a steel blade (or in the medium mixing bowl of an electric mixer), combine the cream cheese, green onions, parsley, mayonnaise, garlic salt, chives, pepper and hot pepper sauce; process or mix until well blended.
- Carefully stir in the cucumbers. Add more mayonnaise if needed, to get a spreading consistency. Refrigerate for a few hours before serving.
- Store in a covered container in the refrigerator for a maximum of 7 to 10 days.

- Place cucumber slices between 2 paper towels set in a colander. Allow liquid to drain, about 10 minutes.
- Mix cream cheese, mayonnaise, garlic powder, onion salt, and Worcestershire sauce in a bowl until smooth.
- Spread cream cheese mixture evenly on one side of each bread slice.
- Divide cucumber slices over half of the bread slices; sprinkle lemon pepper on cucumber.

BEST BENEDICTINE SPREAD
This Louisville staple is an easy and refreshing cucumber spread or dip and can be served with almost anything you could imagine. Dipping club crackers or pita and French bread toast points are favorites, but carrot sticks and pretzels are great too. We use it for cucumber sandwiches, spread it onto our BLTs, and use it as a sauce on poached salmon. You can serve it immediately or refrigerate it to firm up and let the flavors meld.

- Process cucumber chunks in a food processor until finely chopped. Put chopped cucumber and white onion in a piece of cheesecloth and twist to squeeze into a bowl as much liquid as possible from the vegetables, reserving the liquid.
- Assure the food processor bowl is dry before returning cucumber and onion mixture to the food processor. Add cream cheese, dill, hot pepper sauce, green food coloring, and cayenne pepper. Process the mixture until smooth, scraping down the sides of the food processor bowl a few times to make sure everything is integrated. If too thick, add reserved liquid a teaspoon at a time.

- PREP -- SOFTEN CREAM CHEESE: Set out the cream cheese to get to room temperature about 1 hour before making the sandwiches. To bring to room temp quicker: cut cream cheese into small cubes and spread out on a plate. Let sit in a warm place for about 15-20 minutes. Or, remove the cream cheese from the packaging and microwave for 15 seconds, flip and microwave for another 15 seconds. It should be very soft to the touch.
- SPREAD: In a large bowl, add the softened cream cheese, mayo, and packet of seasoning mix (don't prepare according to the packet directions). Use a hand mixer to beat the mixture until completely smooth and creamy. Tightly cover and refrigerate to firm up and allow flavors to meld-- about 20 minutes.
- CUCUMBERS: Wash and thoroughly dry the cucumbers. Cut off and discard about 1 inch from each end of the cucumbers -- this part is very bitter. Then thinly slice cucumbers. (Use a mandolin for speed here!) I cut cucumbers 1/4-inch thick.
- ASSEMBLY: Spread the cream cheese mixture on each slice of white bread -- be generous here! On half of the slices of coated bread, add cucumbers. Overlap to cover the bread fully. If cucumbers are super thin, add 2 layers of cucumbers. For thicker (1/4th-inch) cucumbers, one layer should do the trick. If desired, add a small sprinkle of cracked pepper. We find the seasoning mix has plenty of salt, but you can add a little here too if desired. Sandwich together and press gently yet firmly to combine the sandwich. If desired, cut off the crusts and then cut the sandwiches in half to form triangles. Alternatively, cut into quarters for smaller sandwiches. Layer on a platter and serve.
