4 (6 ounce) skinless, boneless chicken breast halves
¼ cup all-purpose flour
1 tablespoon butter
1 tablespoon olive oil
½ cup white wine
¼ cup fresh lemon juice
2 tablespoons capers
2 teaspoons minced garlic
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Place each chicken breast between 2 sheets of heavy-duty plastic wrap. Pound breasts to 1/2-inch thickness using a meat mallet or small heavy skillet.
  • Spread flour into a wide, shallow dish. Press chicken into flour to coat completely.
  • Melt butter with olive oil in a large skillet over medium-high heat; cook chicken in hot butter mixture until no longer pink in the center and the juices run clear, 3 to 5 minutes per side. Remove chicken from skillet to a serving platter and cover with a lid to keep warm.
  • Pour white wine, lemon juice, capers, and garlic into the pan. Bring the liquid to a boil while scraping the browned bits of food from the bottom of the pan with a wooden spoon; cook at a boil until slightly thickened, about 2 minutes. Season the mixture with salt and pepper.
  • Drizzle sauce over and around the chicken; garnish with parsley.

4 small boneless skinless chicken breasts (1 lb.)
1/4 cup KRAFT Mayo with Olive Oil Reduced Fat Mayonnaise
22 round buttery crackers, finely crushed
2 Tbsp. olive oil
2 tsp. chopped fresh parsley
1/2 cup chicken broth
1 Tbsp. butter
1 Tbsp. capers

Steps:

  • Cut half of 1 lemon into 4 thin slices; squeeze juice from remaining 2-1/2 lemons. Coat chicken with mayo, then cracker crumbs.
  • Heat oil in large skillet on medium-high heat. Add chicken; cook 5 min. Turn; cook on medium heat 5 min. or until chicken is golden brown on both sides and done (165ºF). Transfer chicken to platter; sprinkle with parsley. Cover to keep warm. Carefully wipe any crumbs from skillet with paper towel.

Steps:

1 pound boneless, skinless chicken breasts, cut crosswise in half
Kosher salt and freshly ground black pepper, to taste
1/2 cup all-purpose flour
4 tablespoons unsalted butter, divided
2 cloves garlic, minced

3/4 cup chicken broth
1/4 cup dry white wine*
Juice of 1 lemon
1/2 cup heavy cream

  • In a large pot of boiling salted water, cook pasta according to package instructions; drain well. Season chicken with salt and pepper, to taste. Working one at a time, dredge chicken in flour. ¼ teaspoon salt (or to taste)

Steps:

1 lb boneless skinless chicken breast halves, (butterflied into thinner cutlets, then cut in half cross-wise)
Kosher salt and black pepper
1/2 cup flour for dredging, (use whole wheat flour, all-purpose flour, or gluten free flour of your choice)

  • Heat the oven to 200 degrees F (this is to keep the chicken warm as you work in batches).
  • Pat the chicken breast pieces dry and season with kosher salt and black pepper on both sides. Lightly coat the chicken on both sides with the flour (shake off any excess flour).
  • In a large cast iron skillet, heat the extra virgin olive oil over medium-high heat until shimmering but not smoking. Cook the chicken on 1 side for about 3 minutes, then turn over to cook for another 3 minutes (do this in batches and do not crowd the pan).To keep the chicken warm, place the cooked chicken pieces in an oven-save dish and keep them in warm oven while you finish.

Steps:

  • Prepare your chicken for dredging by cutting it into smaller sections and gently pounding out with a meat tenderizer (or rolling pin) you want your chicken to be very thin so it cooks quickly. In a low sided dish mix together flour, corn starch ,garlic powder and a pinch of salt and pepper.
  • In a large skillet heat 2-3 tbsp olive oil (or oil of your choice for frying) over medium heat.
  • Coat each piece of chicken with your flour mixture, gently shaking off any excess, and put aside on a plate. When all pieces are coated, begin cooking them. Be sure to let them cook 2-3 mins a side and flip. Repeat until all chicken is cooked (we normally do it in 2 batches).
  • Remove chicken from the pan and set aside.
  • Reduce heat to medium-low and add in wine, water, lemon juice and capers. Scrape up any bits from the chicken and let your sauce come to a low simmer. Add the chicken back into the pan with 1/2 of your chopped dill and let cook 2 mins until sauce is thick.

4 boneless skinless chicken breasts (or vegetarian chicken breasts)
1 large lemon
1 -2 tablespoon capers

Steps:

  • Pound the chicken breast until it is flat- about ¼" thick- don't be afraid to make it too thin. The point is that you want cook the chicken quickly before it drys out. On a plate mix some flour- maybe about ¼ cup or so- enough to coat the chicken. Salt and pepper the flour. Coat the chicken with the flour mixture.
  • Use a skillet big enough for all the chicken to lay flat. Heat the skillet to med-high and lightly coat the bottom of the pan with olive oil.
  • Cook the chicken for about 2 minutes a side(use your judgement here!) You will know when it is done- it is white, slightly golden- do not overcook or it will be dry. Since it is thin it should be fairly easy to tell if it is still pink.
  • Take the chicken out of the pan and put on a plate- cover with foil.
  • Pour enough white wine (I like a nice dry Sauvignon Blanc or Chardonnay, or Pinot Grigio) so there is about 1/4" or more of liquid in the bottom of the pan. The goal here is to make enough sauce to generously to pour over each piece of chicken and you have to start with enough because you want to reduce it to burn off the alcohol. Make sure the pan is hot enough so that the liquid boils. This will only take a minute or so, keep and eye on it- you don't want to evaporate all of your liquid. Taste it- when it tastes good- the harsh alcohol has burned off, reduce heat to low, add the juice of one whole large juicy lemon that you have already squeezed. Add about 2 tablespoons of capers. Put the chicken back in pan to coat in sauce and to reheat. Serve immediately. Put a piece of chicken on each plate and pour lots of sauce on each piece. Yummy.

There's also a rounded umami from the mushrooms. And to be honest, the chicken thighs are way better than the turkey breast I used in my original application - never send breasts to do a job better suited to thighs. 1/2 cup chicken broth
6 tablespoons white wine, such as Sauvignon Blanc
1 large lemon, half sliced into 6 wafer-thin slices and half squeezed to make 1 1/2 tablespoons juice
6 (4- to 5-ounce) boneless, skinless chicken thighs
1 tablespoon kosher salt
1/2 teaspoon freshly ground black pepper, plus more for serving
1 cup all-purpose flour
4 tablespoons unsalted butter, cut into tablespoon-sized pieces
3 tablespoons extra-virgin olive oil
8 ounces white button mushrooms, thinly sliced
3 tablespoons capers, drained but not rinsed
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Combine the broth, wine, and lemon juice in a liquid measuring cup and set aside. Season the thighs with 2 teaspoons of the salt and all of the pepper.
  • Dump the flour into a gallon-size freezer bag and add one thigh. Push out as much air as possible and seal the bag. Shake to coat then lay the bag (and the thigh) flat on a counter or cutting board and pound (as gently as you can) with a meat pounder. When the thigh is about 1/4-inch thick, remove to a plate and repeat with the remaining pieces.
  • Place a heavy 11-inch, straight-sided sauté pan with a tight-fitting lidA good braise requires a good seal. over high heat for 1 minute. Add 1 tablespoon each of the butter and oil to the pan and when the butter just stops bubbling, carefully slide two thighs into the fat. Reduce the heat to medium-high and cook, giving the pan a gentle shake every now and then, until bolden brown - 2 to 4 minutes. Flip the thighs and repeat.
  • Remove the chicken from the pan to a large plate or platter, add another tablespoon each of butter and oil, and cook another two thighs as before. Then follow with the final two thighsAvoid the urge to overcrowd the pan, or the thighs will stew rather than brown..
  • When the last pieces of chicken exit the pan, immediately add the mushrooms and the remaining teaspoon of salt. Sauté until the mushrooms start to turn golden brown - 5 minutes, give or take.
  • Stir the mushrooms out to the circumference of the pan and add the capers right to the middle, stirring until they start to brown and pop - 1 minute. Deglaze with a third of the wine-broth mixture, stirring to dissolve any browned goodness stuck to the bottom of the pan.
  • Return the chicken to the pan, overlapping the pieces as needed, and pour in the remaining wine-broth mixture. Arrange the lemon slices atop the chicken, slap on the lid, reduce the heat to low and cook until the chicken is fork-tender - 5 minutes.
  • Evacuate the thighs and arrange on the plater. Boost the heat back to high, add the final tablespoon of butter to the sauce, and stir constantly until the sauce begins to thicken - 1 to 2 minutes. Pour over the chicken, garnish with new lemon slices if desired, top with the parsley and serve.

  • Whisk sauce ingredients: In a small bowl or liquid measuring up, whisk chicken broth, lemon juice + zest, garlic powder, and capers together. Set aside for later.

Lemon Chicken Piccata image

A classic Italian dish of lemon chicken piccata chicken that is perfectly cooked, tender, delicious and coated in a tangy lemon-caper sauce.

4 skinless boneless chicken breast halves (about 6 oz. each)
3/4 cup all-purpose flour
1/4 cup fine grind semolina flour
1 tablespoon fresh thyme, finely chopped
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons coconut oil or peanut oil
2 tablespoons butter
1 garlic clove, grated
1/2 cup low-sodium chicken broth
1/4 cup freshly squeezed lemon juice
1 whole lemon, thinly sliced
1/4 cup capers, drained
1/4 cup chopped fresh flat-leaf parsley (for garnish)

Steps:

  • Place chicken breasts between 2 sheets of plastic wrap and gently pound chicken with the flat side of a meat pounder or rolling pin to 1/2 inch thick.
  • In a shallow dish stir together flour, semolina flour, chopped thyme, salt, and the pepper.
  • Using paper towels, wipe the chicken pieces to remove the moisture then dredge all of the chicken pieces in the flour mixture, coating each one completely and shaking gently to remove excess. Place on a plate.
  • Heat the oil in a large heavy skillet over moderate heat until hot but not smoking. Working in batches of 2 chicken breasts at a time, add the dredged chicken cutlets to the skillet. Cook the cutlets for 2-3 minutes (depending on how thin you pounded them), until golden brown, carefully turn them over and cook the other side for 2-3 minutes. Transfer the cutlets to a platter and proceed with frying the remaining two cutlets. It may be necessary to add a little more oil to the skillet. Cover the cooked cutlets with foil to keep them warm.
  • Pour off any remaining oil in the skillet and wipe it out with a paper towel. Over low heat, add the butter and heat until the foam subsides. Add the garlic and cook just until fragrant, add the broth, lemon juice, and the lemon slices. Bring the sauce to a boil, and cook for about 5 minutes to reduce and thicken slightly, stir in the capers. Return the chicken to the sauce, reduce the heat to low and simmer for 3 to 5 minutes.
  • To serve: Transfer the chicken to a serving platter and spoon the lemon sauce over the chicken, sprinkle generously with the chopped parsley and garnish with the cooked lemon slices.

I love Lemon Piccata recipes. This one is made with Chicken but you can substitute Veal and works great. The original recipe came from the back of the Meyers Lemon Juice bottle that you get from William Sonoma.

1/2 cup all-purpose flour
salt and pepper
4 boneless chicken breasts
3 tablespoons extra virgin olive oil
1/3 cup of chopped shallot
1/4 cup dry white wine
1/2 cup lemon juice
1/2 cup chicken stock
2 tablespoons capers
1 1/2 teaspoons minced fresh sage
1 tablespoon unsalted butter
1 tablespoon chopped fresh flat leaf parsley

Steps:

  • In a shallow bowl put the flour, salt and pepper and dredge your chicken, shaking off excess.
  • In a large fry pan over a medium high heat, place 2 Tbs. of oil and heat until almost smoking. add the Chicken and cook until browned and opaque throughout, about 8-9 minutes total. Place chicken on a warm platter and cover while you make the sauce.
  • In the same pan over a medium high heat, warm the remaining 1 Tbs. of oil . Add the shallots and sauté until soft and translucent, 1-2 minutes. Add the wine and reduce to about half. Use a wooden spoon and scrape the bottom of pan to loosen the brown bits. Add the lemon juice, stock and capers and cook until thickened, about 5 minutes. Whisk in the sage, butter and parsley. Spoon the sauce over the chicken and serve.

2 skinless and boneless chicken breasts, butterflied and then cut in half
Sea salt and freshly ground black pepper
All-purpose flour, for dredging
6 tablespoons unsalted butter
5 tablespoons extra-virgin olive oil
1/3 cup fresh lemon juice
1/2 cup chicken stock
1/4 cup brined capers, rinsed
1/3 cup fresh parsley, chopped

Steps:

  • Season chicken with salt and pepper. Dredge chicken in flour and shake off excess.
  • In a large skillet over medium high heat, melt 2 tablespoons of butter with 3 tablespoons olive oil. When butter and oil start to sizzle, add 2 pieces of chicken and cook for 3 minutes. When chicken is browned, flip and cook other side for 3 minutes. Remove and transfer to plate. Melt 2 more tablespoons butter and add another 2 tablespoons olive oil. When butter and oil start to sizzle, add the other 2 pieces of chicken and brown both sides in same manner. Remove pan from heat and add chicken to the plate.
  • Into the pan add the lemon juice, stock and capers. Return to stove and bring to boil, scraping up brown bits from the pan for extra flavor. Check for seasoning. Return all the chicken to the pan and simmer for 5 minutes. Remove chicken to platter. Add remaining 2 tablespoons butter to sauce and whisk vigorously. Pour sauce over chicken and garnish with parsley.
