EASY LEMON PEPPER CHICKEN WINGS
My family and I love chicken wings, especially during football season. I just got tired of spending so much money on wings for our party that I decided to whip up my own version of Wing Stop's® lemon pepper chicken wings. The ending result was an empty platter and pleased bellies.

LEMON PEPPER WINGS
Yet another great variation on the ever-popular tailgating and sports-bar snack and very simple and easy to make. I have tried this with several brands of lemon pepper seasonings and found I actually liked the cheapest one the most. It was a tad twangier than the others and was more suited to my liking. I found it at my local food store in the seasoning section. I also tend to lean towards a lemon pepper seasoning that includes a white pepper and less black.

- Let’s prepare the dry mix, also known as the seasoned flour. For this, take a medium-sized bowl and in it, pop in a cup of flour, along-with kosher salt, and pepper. Stir your flour mix until it’s well blended.
- Time to focus on your wings. Dressing the chicken wings is important because it is the look of the dish that appeals first. So, start by making cuts in the joints of the wings. Remember, each wing has two joints. Thinking should you or should you not get rid of the flappers in the wings? Well, you could chuck it off and use it to make stock in the future or toss it out in the bin. Frankly, the choice is yours. Once your chicken wings are dressed, it’s time to get them breaded.
- Drown your chicken wings in a bowl full of season flour. Ensure that the wings are well-coated. Now take it out and dust off the excess. Do not leave in any extra flour.

- Place one rack in the center of the oven and one in the upper third. Preheat the oven to 450 degrees F. Line a large baking sheet with aluminum foil. Lightly coat the rack with nonstick spray. Set a large mixing bowl on the counter.
- With a paper towel, pat the wings dry. Trim off the wing tips and separate the drumette from the flat part of the wing: Start by cutting off the wing tip by wiggling your knife edge at the joint “soft spot.” It should separate fairly easily, but if not, put the blade in place, then carefully but firmly hit the top of your knife to apply extra pressure. Discard the trimmed tip. Cut the wing again, this time at the second wing joint, slicing down through the skin to separate the small drumstick (drumette) from the flat portion of the wing. Again, feel for the “soft spot” and wiggle your knife as needed. Place the divided wings in the mixing bowl as you go.
- Top the wings with the canola oil, honey, and 2 teaspoons lemon pepper seasoning. Stir to coat, then arrange the wings in a single layer on the prepared baking sheet. Bake for 12 to 18 minutes, until the wings are cooked through. The skin will start to shrink away from the ends of the bones, and the wing juices will run clear when pierced with a fork.
- Move the pan to the upper third of the oven and turn the oven to broil. Broil for 2 to 3 minutes, until the wings darken and crisp a bit more. Do not walk away to make sure the wings do not burn.

- Heat the canola oil in a dutch oven to 250-275 degrees, which is about medium-low. It should bubble gently when the chicken is added to it so adjust the heat accordingly as needed.
- Use stainless steel tongs to carefully place the chicken wings, 6-7 at a time, into the heated oil. The temperature of the oil will drop temporarily when the chicken is added so give it a few minutes to rise back up.
- The wings will cook slowly, which will maintain the moisture inside of the chicken and prevent them from becoming too dry. Cook for approximately 25-30 minutes, until the outside begins to brown slightly. Use the tongs to remove them from the oil and place them on a paper towel-lined plate to allow excess oil to drip off.
- Let the wings cool completely. From here, you can freeze or refrigerate until ready to serve if not serving immediately. This is a helpful prep-ahead step.
