I've served this main dish numerous times for dinner guests and have received many compliments. In fact, every time I make it for my husband, he'll comment, "This is the best chicken I've ever had."

- Place chicken in a shallow glass dish. Combine remaining ingredients; pour over chicken. Cover and refrigerate at least 4 hours or overnight. Drain, discarding marinade. Grill chicken over medium-hot heat, turning once, until juices run clear, about 15-18 minutes.

LEMON-LIME CHICKEN

Steps:
- Preheat the oven to 400 degrees F.
- Warm ¼ cup of olive oil in a small sauce pan over medium-low heat, add minced garlic (about 9 cloves) and cook for just 1 minute, be careful not to burn the garlic.
- Off the heat, add ⅓ cup of dry white wine, the zest of 1 lemon and 1 lime, the juice of ½ lemon and ½ lime, 1½ teaspoon of dried oregano, and 1 teaspoon of salt and pour into 8 x 8 inch baking dish (or use 9 x 12 if your chicken pieces are big).
- Pat the chicken dry and place them skin side up over the sauce. Brush the chicken with olive oil and sprinkle them with salt and pepper. Cut ½ lemon and ½ lime into wedges and tuck it among the pieces of chicken. Place springs of thyme on top of the chicken.
- Bake for 30-40 minutes, depending on the size of the chicken, until the chicken is done and the skin is lightly browned. You can also put it under the broiler for 2 minutes, if the chicken isn't brown enough.
- Cover the pan with foil and allow to rest for 10 minutes. Serve hot with the pan juices.
LEMONY LIME SLOW COOKED CHICKEN
Fresh lemon and lime juices paired with apple juice serve to rev up the natural tastes in this slow-cooked comfort dish. It's a snap to put together, even before heading off to work. Like it hot? Throw in a teaspoon or two of dried chilies. Add quartered bell peppers or frozen peas for the last half hour of simmering and they will take care of the veggie portion of your balanced dinner. Just be sure to have lots of rice or orzo to soak up the vibrant sauce.

- Remove all excess fat from chicken. If using large chicken breasts, slice each into two pieces. Turn slow cooker to high and pour in the apple juice. Sprinkle with cornstarch and stir until dissolved.
- Add the juice from the lemon and the lime, honey and seasonings. Stir to blend. Add chicken, turning to evenly coat, then place chicken bone-side up. Cover and cook on high for 3 ½ to 4 hours or on low for 5 to 6 hours.
- Place chicken on plates and spoon some of the sauce over top. If serving with rice or orzo, liberally pour sauce over them as well. Serve remaining sauce in a pitcher. Garnish with Italian parsley, fresh coriander or torn basil leaves.

- Combine all marinade ingredients with the chicken breast and leave for 20 minutes.
- Coat the chicken breast first in flour, then eggs, and finally panko breadcrumbs.
- In a medium-sized saucepan heat the oil to 325˚F (170°C),
- Deep fry the breaded chicken for about 3-4 minutes until the coating is golden brown.
- In a small frying pan, combine the chicken stock, lemon juice, and sugar. Bring the mixture to a boil.
- Mix the corn flour with the water, then add the mixture to the frying pan to thicken the sauce.
- Add the chicken to the frying pan and coat with the lemon sauce.
- Serve on top of rice. (We garnished ours with green onions and sesame seeds.)

- In a saucepan whisk together the zests, the juices, the sugar, the garlic, the cayenne, and salt and pepper to taste and simmer the mixture, stirring, for 5 minutes, or until the sugar is dissolved. Whisk in the oil and let the marinade cool.
- In a large dish arrange the chicken, pricked in several places with a fork, in one layer, pour the marinade over it, and let the chicken marinate, covered and chilled, turning it once, for 1 to 3 hours. Transfer the chicken with tongs to an oiled grill set about 6 inches over glowing coals or to an oiled ridged grill pan set over moderately high heat and grill it, basting it with the marinade for the first 20 minutes (discard any remaining marinade). Turn the chicken over and grill it for 20 minutes more, or until it is cooked through.

- Dredge chicken in flour.
- In medium skillet, melt butter and oil until it sizzles.
- Saute chicken until cooked through.
- Remove chicken and set aside.
- Add lemon juice to chicken stock and whisk into skillet.

- On a cutting board, cut the chicken breasts in half, widthwise.
- Lay chicken flat and season both sides with salt and pepper.
- Gently coat the chicken pieces in the flour, shaking off any excess.
- Heat a skillet on medium-high heat and add the butter and oil, swirling together to coat the pan.
- Place the chicken breasts into the pan and cook for 3-5 minutes or until golden brown.
- Flip the chicken and cook the other side, another 3-5 minutes, or until chicken is cooked through.
- Remove the chicken from the skillet and set aside.
- Pour ¼ cup (60 ml) of the chicken stock in the pan and scrape up any bits that may have stuck to the bottom of the pan.
- Add the rest of the stock and the cream and stir.
- Season with salt and pepper, and add the lemon juice.
- Simmer for 5 minutes. Add the chicken back to the pan and top with sliced lemons.
- Spoon the sauce over the chicken.
- Remove from heat. Sauce will thicken as it cools.
- Serve with parsley and extra sauce.
- Enjoy!

- In a small bowl, mix together salt, black pepper, cayenne, paprika, 1/4 teaspoon garlic powder, onion powder, thyme and parsley. Sprinkle spice mixture generously on both sides of chicken breasts.
