LEMON & DATE CHUTNEY
This is a Greg Malouf recipe from his book "Arabesque" (published by Quadrille publishing) and is just gorgeous, although I think it could do with a touch more ginger.

Steps:
- Mix together lemon, zest, extra lemon juice and salt. Let sit overnight.
- Combine all ingredients, except sugar and dates, in a heavy pan.
- Bring to a boil.
- Then lower temperature and simmer for 5 minutes.
- Add sugar and dates, stir well and simmer for 45-60 minutes, until thick and reduced.
- Stir regularly to prevent sticking.
- Pour into sterilised jars.
- Let the chutney mature for 6 weeks.

- Chop the garlic cloves and the red onions. In a deep pan pour the oil, add the garlic and onions and fry on a low-medium heat until transparent.
- In the meantime, cut the ripe tomatoes into small pieces. Add to the pan and fry for two minutes on high heat. Add the raisins, the white vinegar, the brown sugar and the spices: sweet paprika, chopped chilli peppers and the cardamom seeds. Simmer all the ingredients into a medium heat, uncovered for 20 minutes or until thickened.

- Halve the melon and remove the seeds. Remove the pulp from the shell and finely dice. Peel the oranges thoroughly and chop the fruit. Rinse and halve the peppers. Trim the peppers, remove the seeds and membranes, and finely dice.
- Add the melon, oranges, peppers, raisins, sugar, vinegar, and 1/2 teaspoon of salt and allspice to a pot. Pour in 250 ml (approximately 8 ounces) of water and simmer for 30 minutes. Fill the prepared jars to the brim with the chutney and seal tightly. Turn upside down to cool for 20 minutes. Turn right side up and cool completely.
