GLUTEN FREE SCONES

Gluten free scones image

A simple gluten free scone recipe with an easy strawberry jam to enjoy on the side. Perfect for a gluten free cream tea - cream first! Add a large handful or two of sultanas to turn these into gluten free fruit scones.

Provided by Sarah Howells

Categories     Baking

Time 30m

Number Of Ingredients 10

300 g gluten free self-raising flour, (plus extra for dusting)
50 g golden caster sugar
50 g unsalted butter, (cut into cubes)
1 large egg
100 ml semi-skimmed milk, (plus extra for brushing)
1.5 tsp baking powder
1/2 tsp xanthan gum
350 g strawberries, (hulled and halved)
200 g caster sugar
1 lemon (juice only)

Steps:

  • Preheat the oven to 200'C and line a baking tray with a sheet of baking paper. Set aside while you make the scone mix.
  • Add the butter and sugar to a large mixing bowl and sift in the gluten free flour, baking powder and xantham gum. Using your fingers, rub the mix together until it resembles breadcrumbs.
  • Add the milk to a jug and then crack in an egg and beat lightly until combined. Pour into the flour mix and use a wooden spoon to bring the mix together. As soon as it comes together as a dough, lightly flour the worktop and turn it out.
  • Knead the dough a couple of times to bring it together (you don't want to over-knead) then use your hands to bring the dough into a circle. Flatten using your hands (or a rolling pin) to approx 3cm thick. Using a 5cm fluted cutter, cut out 12 circles from the dough. When you run out, just roughly bring the leftovers together and flatten again - don't keep kneading in between, it doesn't matter if they're a bit rustic!
  • Place the circles on the lined baking tray with a 2cm gap between them. Brush each scone with a little milk. Bake in the oven for 10-12 minutes, until golden on top. Cool on a rack before serving. These are best served fresh and warm, approx 5-10 minutes after removing from the oven.
  • Add the strawberries, lemon juice and sugar to a pan and place on a low heat. Bring to the boil and allow to boil steadily for 10-15 minutes until the jam is set. To test it, spoon out a tiny bit of the jam onto a cold plate and leave for a minute. If you can push it with your finger and it doesn't flood back, it's ready. Once cooked, leave to cool for 15 minutes before placing in a sterilised, airtight jar ready for serving.

LEMONADE SCONES - GLUTEN FREE

Lemonade Scones - Gluten Free image

A great scone recipe using gluten free flour and lemonade. Use a good flour blend- the better the mix the better the scones. Also do not overmix as it will make a heavy scone (what my Dad calls a "doorstopper" ). This is an Australian recipe and uses bubbley lemonade soda/soft drink- not the traditional lemonade made on real lemons and sugar. I use "Orgran" brand flour for this recipe. After the first review on this recipe, I have made the scones again. The oven temperature is correct and the recipe worked fine. I have posted some photos now. Similar recipes on this site also use the same oven temperature. I have recently had the temperature on my oven tested and corrected. The temperature stated in this recipe is correct. You could use a lower temp and cook for longer. The quick cooking gives a firm outer layer and a beautiful soft steamy centre- perfect straight from the oven

Time 35m

Yield 10 serving(s)

Number Of Ingredients 3

3 cups gluten free self-raising flour
1 cup thickened cream (do not use light cream)

  • Cut with a scone cutter and place on a lightly greased baking tray (or you can use a good quality baking paper). Place the scones close together. Lightly brush the top of scones with a little milk.

This is the easiest and most reliable scone recipe in the world. My mum gave it to me and then I found all the gals at work knew it too, but I haven't seen it on recipezaar - so here it is! The ratio is 3:1:1

  • ) Preheat the oven to 425° and then prepare a cookie sheet with a Silpat or parchment paper and set aside.
  • ) In a large bowl, add the dry ingredients and whisk to combine and break up any lumps. Using a pastry cutter or two knives, cut the butter into even smaller pieces – about the size of a green pea. It’s ok if all the pieces aren’t the same size and set aside.
  • ) In a small bowl, combine the milk, egg, maple syrup, and lemon extract and whisk to break up the egg and blend the mixture.
  • ) Slowly pour the milk mixture into the flour mixture and fold to incorporate. This is where you might need that extra 1/4 cup of flour. If the mixture is too wet and resembles a batter rather than a dough, you can slowly add the extra 1/4 cup of flour into the dough to stiffen it up.

  • Sift the flour into a large bowl. Whisk in baking powder and salt if not using self-raising flour. If you want sweeter scones, you can also whisk in the sugar at this point.
  • Stir in the coconut cream and 1/2 cup lemonade to form the dough. Add the remaining coconut cream only if needed to moisten the dough.
  • Flour a surface and turn the dough out on it. Sprinkle with more flour and carefully knead over just a couple of times. Divide the dough into 2 and place on a baking sheet (I use parchment on mine). Pat each half into a disk of 3/4 to 1 inch thickness.

  • Combine the flour, cream and lemonade in a bowl and mix until flour is mostly combined. Do not over mix, it will make the scones dense! The dough should be soft and fairly sticky.
  • Turn out onto a floured surface, and knead gently just 3 - 5 times to bring dough together, then gently pat into a disc shape 2.5cm/1" thick.
