Steps:

  • In a medium sized bowl, whisk together Greek 100 Protein, whipped topping, honey and lemon extract until smooth.
  • Add mousse to individual cups and refrigerate.
  • When cool and ready to serve, garnish with lemon zest, mint and assorted berries.

5 eggs
1 cup sugar
4 ounces butter, melted and cooled
1 cup fresh lemon juice
1 tablespoon lemon zest (optional, if you want a smooth custard, don't add this)
2 cups heavy cream
1 sprig of fresh mint (to garnish)

Steps:

  • Beat eggs and sugar until pale, about 5 minutes.
  • Beat butter into sugar mixture in a thin stream.
  • Add lemon juice.
  • Pour into top of double-boiler.
  • Cook over moderate heat, whisking constantly, until mixture thickens, about 15 minutes. Add lemon zest (but not if you want a smooth custard).
  • Transfer custard to a medium bowl, place piece of plastic wrap directly onto surface of custard to prevent skin from forming and refrigerate atleast two hours.
  • Beat cream until soft peaks form.
  • Fold into chilled custard.
  • Serve in stemmed glasses, garnished with mint.

This mousse is very nice for any time of day, it's not too sweet, but definatly sweet enough for a desert, you can try adding things such as Whipped cream and fruit, a fruit sauce, or even just some extra sugar for a different taste, very easy to make, and even the kids can help out with the whisking. I got this recipe out of a manga book called Kitchen Princess by Natsumi Ando and Miyuki Kobayashi. Extra note from recipe: "Yogurt is made with fermented milk, Dairy bacteria is good for your stomach and insestines and works to regulate your immune system." And remember, as long as you keep the basic recipe the same, you can do what ever you like with thisa, some suggestions I got from my family when I served it to them was perhaps in a cannoli or in-between cake layers.

1 cup plain yogurt
3 tablespoons sugar
1 cup whipping cream
2 teaspoons unflavored gelatin (or one packet of knox gelatin)
3 tablespoons hot water (For dissolving gelatin)

Steps:

  • Mix the yogurt and sugar in a medium sized bowl,.
  • In a different bowl, pour whipping cream in and whisk until it whips up. Make sure it has the same texture as the yogurt.
  • In a small bowl, put in hot water and gelatin and mix to dissolve, stir as you pour the gelatin in tso it doesn't clump up.
  • Put the hot water and gelatin from step three in the yogurt and stir fast to keep it from clumping up.
  • Add the whipped cream from step 2 into the bowl from step 4 and mix. After mixing, pour into 4 glass cups and chill for about an hour.

At just 100 caloriesper serving, this looks like a delightful dessert that will satify a sweet craving without guilt. This preparation is a little tricky so have all your ingredients at the ready so that each step can be followed before the mousse sets. A perfect accompaniment for this mouse would be a drizzle raspberry sauce or strawberry coulis.

1 cup plain nonfat yogurt, preferably Greek
1 teaspoon lemon zest, finely grated
3 tablespoons lemon juice, strained
1 teaspoon pure vanilla extract
1/4 cup warm water
1 (2 1/2 teaspoon) envelope unflavored gelatin
2/3 cup egg white, about 4-5 large egg whites
1 pinch salt
3/4 cup sugar

Steps:

  • In a medium bowl, quickly whisk together the yogurt, lemon zest, lemon juice and vanilla. (Do not strain the yogurt as the whey helps maintain the right consistency and flavor.).
  • Place the gelatin in a small bowl and add the warm water. Allow this to sit so that the gelatin gets dissolved.
  • To prepare the meringue, create a double boiler using a saucepan and bowl that will set securely over the pan. Fill saucepan half way with water and bring to boil over medium heat. Combine egg whites, salt, and sugar in the bowl which will become the top portion of the double boiler . Mix the eggs, salt and sugar a bit until mixed. Place the egg whites onto the bottom of the boiler or saucepan with water. Whisk the egg whites until light, fluffy and foamy and the sugar is fully dissolved. Fold in the dissolved gelatin from step 2.
  • Remove the bowl from the heat and whisk with an electric mixer (using the proper attachment if you have it). Whip the egg mixture until the eggs are cooled, using the sides of the bowl as your gauge. Be careful not to overmix or the eggs mixed with the gelatin will coagulate.
  • Quickly pour the yogurt into the eggs in a stream, folding the two mixtures together. Again, if you fold too slowly the mix will begin to thicken too early.
  • Divide the mousse into eight serving bowls or glasses. Cover each with plastic wrap and place in the icebox until you are ready to serve.
  • Note: This can be made up to a day ahead of serving.

1 (85 g) package soft ladyfingers
1 (250 g) package cream cheese, softened
1 lemon, juice and rind
2 (85 g) packages lemon Jell-O gelatin
1 1/4 cups boiling water
2 cups ice cubes
1 (1 liter) container Cool Whip Topping, thawed
1/2 cup fresh raspberry, or frozen thawed and drained
1 (85 g) package raspberry Jell-O gelatin
1 cup boiling water
1 cup ice cube

Steps:

  • Line inside rim of greased 9 inch springform pan with ladyfingers, set aside.
  • Beat cream cheese, lemon juice and rind in a large bowl of electric mixer on low speed until blended.
  • Dissolve jelly powder in boiling water.
  • Add ice cubes, stirring until slightly thickened.
  • Add jelly slowly to cream cheese mixture while beating on low speed.
  • Increase speed and beat just until well blended.
  • Fold in topping.
  • Pour into prepared pan, arrange raspberries on top and chill.
  • Dissolve raspberry jelly powder in boiling water, add ice cubes and stir until slightly thickened.
  • Immediately spoon over cake.
  • Chill at least 4 hours.

Although it sounds like a bit of trouble, it actually isn't, and can actually be made in about 45 minutes. It takes about 2 hours to chill, which I have not included in the prep time. But, if serving for guests or a special occasion, simply make it in the morning and forget about it until time to serve.

1 (1/4 ounce) envelope unflavored gelatin
4 medium lemons, juice and zest of, grated
6 large eggs, separated, room temperature
1/3 cup sugar
2 tablespoons sugar
5 tablespoons sugar (or to taste)
1 teaspoon vanilla extract
1 cup heavy cream, cold
4 cups fresh blueberries

Steps:

  • Sprinkle gelatin over lemon juice and zest of 3 lemons in small saucepan; let stand 5 minutes to let gelatin soften. Heat over very low heat just until gelatin dissolves completely; then let cool completely.
  • Beat egg yolks in bowl until thick. Gradually beat in 1/3 cup sugar and continue to beat until very thick and very pale. Beat in vanilla and cooled gelatin mixture.
  • Beat egg whites in another bowl until foamy. Gradually beat in 2 T. sugar and continue to beat until stiff peaks form (but not dry).
  • Whip cream until soft peaks form. Using rubber spatula, gently fold cream into the egg yolks, then fold in egg whites.
  • Transfer to large serving bowl. Refrigerate covered at least 2 hours but no longer than 24 hours.
  • Meanwhile, make blueberry sauce. Combine blueberries, the zest and juice of 1 lemon, and 5 T. sugar (or so) in a medium saucepan. Heat to boiling over medium heat, stirring occasionally; reduce heat and boil gently until juice is slightly thickened and syrupy, 10-15 minutes. Let cool completely, then transfer to serving bowl and refrigerate until ready to serve.
