I was surprised when I couldn't find a lemon French toast recipe here, so I came up with this...it's simple yet healthy and delicious!

Number Of Ingredients 7

2 eggs
1/2 cup Egg Beaters egg substitute
1 cup light vanilla soymilk
1 dash salt
2 teaspoons lemon zest
8 slices Italian bread
cooking spray

Steps:

  • Lightly beat eggs. Add egg beaters, soy milk, salt, and lemon zest.
  • Spray skillet and put over medium heat.
  • Soak bread and cook 2 at a time, until lightly browned.
  • Serve with maple syrup or fresh blueberries and vanilla yogurt.

1-1/2 cups half-and-half cream
3 large egg yolks
3 tablespoons brown sugar
2 teaspoons vanilla extract
3/4 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
8 slices day-old brioche bread (1 inch thick)
Optional toppings: Butter, maple syrup, fresh berries, whipped cream and confectioners' sugar

Steps:

  • In a shallow dish, whisk together the first 7 ingredients. Preheat a greased griddle over medium heat., Dip bread in egg mixture, letting it soak 5 seconds on each side. Cook on griddle until golden brown on both sides. Serve with toppings as desired.

VERY VANILLA FRENCH TOAST

This is so simple to make and the flavor is scrumptious! My husband loves french toast. We love to top it with our homemade buttermilk syrup- don't let the name scare you off. I can't go back to using maple syrup ever since I tried it. The syrup is so sweet and yummy, please give it a try! Fresh cut strawberries and whipped cream would also taste great. DO NOT use instant pudding mix. Note: If you don't have buttermilk on hand, you can make your own to substitute. Just combine 1/2 cup milk with 1 1/2 tsp. lemon juice or vinegar. Let it sit for 10 minutes before using. I usually don't have buttermilk so that's what I do and it turns out the same.

1 cup milk
1 (3 ounce) package vanilla pudding mix
1 egg
1/2 teaspoon cinnamon
8 slices thick bread
2 teaspoons butter or 2 teaspoons margarine
powdered sugar, if desired
1/2 cup butter or 1/2 cup margarine
1 tablespoon light corn syrup
1/2 cup buttermilk
1 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon vanilla extract

Steps:

  • For syrup, melt butter in saucepan over medium heat. Add buttermilk, corn syrup, and sugar. Stir and bring to a boil. Cook, stirring constantly for 1 minute.
  • Remove from heat; add vanilla and baking soda. Syrup will be foamy. Let stand for 5-10 minutes.
  • Meanwhile, in a shallow dish, whisk together milk, pudding mix, egg, and cinnamon for 2 minutes or until well blended.
  • Melt butter on hot griddle or in a skillet. Dip bread in mixture, coating both sides.
  • Cook over heat for 2-4 minutes on each side or until golden brown.
  • Serve with syrup and powdered sugar or with fresh fruit and whipped cream.
  • Store leftover syrup in refrigerator.

This is my FAVORITE french toast recipe. Cooks up light and fluffy and so flavorful every time. Recipe found on website of Stonyfield Farms (maker of yogurt and milk). I have made this recipe with all kinds of bread and it's fabulous. . .doesn't need to be cinnamon raisin bread. I actually just made it with Hawaiian Sweet Bread this morning and it was fabulous. Also feel free to use banana or strawberry yogurt instead of vanilla. Have fun with this recipe; you won't be disappointed!

6 slices cinnamon raisin bread
1/2 cup low-fat vanilla yogurt
1/4 cup low-fat milk
2 eggs
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon vanilla extract

Steps:

  • In a mixing bowl, beat together eggs, yogurt, milk, salt, spices and vanilla extract.
  • Heat a lightly oiled griddle or skillet over medium-high flame.
