THYME TURKEY BURGERS WITH GOAT CHEESE
Thyme goes so well with turkey. These are slightly more sophisticated and company-worthy burgers. Serve plain or with a toasted flatbread.

- Preheat your grill or pan if using the stove.
- Combine all the herbs together in a small bowl.
- Divide the turkey into four, equal-sized portions.
- Mix 1/4 of the herb mixture into each portion or turkey, and mix well with your hands.
- Mix in salt and pepper if desired.
- Cook or grill turkey burgers, turning a few times, for about 6-7 minutes per side.
- Check for doneness by cutting into the center of one.
- If no longer pink, then they are done.
- Smear room-temperature goat cheese on the hot burgers.
- Serve with grilled sweet onions and tomatoes or on their own.

- In a large bowl, mix together the ground turkey, bread crumbs, lemon zest, lemon juice, thyme, salt, and pepper. Form into two (2) patties the same size as the bread you are serving it on, place on a plate, cover with plastic wrap, and refrigerate until ready to grill.
- In a large frying pan with olive oil, sautonion until almost caramelized. Add bell pepper and sauttill heated through and softened. Sprinkle with a little salt and pepper. Remove from heat and set aside.
- Preheat barbecue grill; brush and oil the grates. Grill turkey patties approximately 5 to 6 minutes on each side or until internal temperature reaches 165 degrees F. on your meat thermometer. Top each turkey patty with cheese slices during the last few minutes of cooking to melt.
- While the turkey patties are cooking, cut open the bread the size you want for this open face sandwich, then cut in half for two servings, and butter each half. Grill bread slices, opened end down to form grill marks, or toast in toaster.

- To a medium-large bowl, add turkey, bread crumbs, whisked egg (just whisk a large egg in a small bowl until well combined, then measure out 2 tablespoons to add to turkey), lemon juice, lemon zest, rosemary, thyme, 1 teaspoon salt, and 1/2 teaspoon black pepper. Mix well. I like to just use my hands, for quickest and best overall mixing of ingredients.
- Divide mixture into six equal portions, and then divide each of those portions in half, to equal twelve portions. Form each portion into a 4" patty and place on a wax paper-lined rimmed pan.
- Place goat cheese on centers of six turkey patties, a strong 1/2-tablespoon of goat cheese each. I like to use a small (4-oz. size) goat cheese log and slice off coin-shaped pieces that equal a bit more than 1/2 tablespoon of goat cheese. Place a bare turkey patty on top of each patty with goat cheese, and then pinch edges together to seal patties and enclose cheese. Sprinkle a bit more kosher salt and black pepper over tops of finished burgers. Cover and refrigerate for 30 minutes.
- Preheat grill to medium/medium-high heat, and then oil cleaned grates. If you have a griddle for your grill, that works great. Or heat a large griddle over medium/medium-high heat on the stovetop. Turkey burgers are generally more loose than beef burgers, but the breadcrumbs, eggs, and refrigerator chilling helps to keep these burgers together. If you have any issues keeping these together, stick to using a griddle on the grill or stovetop. Place burgers on hot griddle or oiled grill grates and let cook for 5 minutes without moving. Gently flip burgers over and cook for 5 to 7 minutes more, or until burgers are cooked through to an internal temperature of 165° F.
