BELLY OF PORK WITH GARLIC, LEMON AND THYME

Belly of Pork With Garlic, Lemon and Thyme image

From the Daily Mail. It's seems a good way to use up my over abundant herb garden. I love the thought of garlic, lemon and thyme and a crisp crackling. I plan to try this soon - I have the meat in the freezer. I'm entering it now in case I lose my scrap of paper. The recipe says: serve with plenty of mashed potatoes. This needs overnight marinating. There is no indication of how many it will serve. I've made this and it was really delicious. A bit of fussying around, but worth it for a special occasion.

Categories     Pork

Time P2DT13h

Yield 1 roast

Number Of Ingredients 13

1 (1 1/2 kg) pork belly, piece
12 garlic cloves, peeled and bruised
3 lemons, zest of
2 tablespoons of chopped thyme
2 tablespoons olive oil
salt & freshly ground black pepper
1 bunch flat leaf parsley
1 bunch basil
1/2 bunch coriander
2 roasted garlic cloves, peeled
150 ml olive oil
lemon juice
salt & freshly ground black pepper

Steps:

  • Pierce the skin of the pork all over with a skewer, going through the fat but not the flesh. Pour boiling water over the skin, drain and dry well.
  • Mix the garlic, lemon zest, thyme, olive oil and salt and pepper together. Rub mixture well into the fleshy side of the pork and leave to marinade overnight.
  • Preheat the oven to 200C/400Fgas mark 6. Place the pork on a wire rack skin-side up and place the rack over a roasting tin half filled with water. Sprinkle with skin with salt and roast for 15 minutes to start the crackle forming. Then reduce the temperature to 180C/350F/gas mark 4 and continue to cook for one and a half hours. Top up with water in the roasting tin as necessary.
  • Meanwhile make the salsa verde. In a food processor, mix the herbs and garlic to a paste and gradually pour in the oil so that it becomes emulsified. Season to taste with salt and pepper and lemon juice.
  • Increase the oven temperature to 230C/450F/gas mark 8 and roast the pork for a further 15 minutes.
  • Remove from oven, slice and serve with salsa verde.

LEMON THYME PORK LOIN ROAST

Lemon Thyme Pork Loin Roast image

Serve with Apple Cranberry Salsa for something just a little different.

Provided by Food Network

Yield Makes 12 servings

Number Of Ingredients 8

1 boneless pork loin roast, about 3 pounds (about 10 - 12 inches in length)
1 tablespoon extra virgin olive oil
1 tablespoon balsamic vinegar
4 strips lemon zest (2 x 1/2-inches, about the zest of 1/2 lemon), bitter white pith removed
3 cloves garlic, peeled
1 teaspoon kosher salt
1 teaspoon thyme (use 2 - 3 teaspoons if using fresh thyme leaves)
1/2 teaspoon black peppercorns

Steps:

  • Tie the pork roast with butcher's twine at one - inch intervals to help it maintain a round shape for even cooking (a butcher will also be able to do this for you). The pork roast should be approximately 12 - inches in length, not doubled and tied. Rub the roast with the oil and vinegar. Place the lemon zest, garlic, kosher salt, thyme, and peppercorns in the work bowl of your Cuisinart® Food Processor. Process on Grind for 10 seconds, stop and scrape the work bowl, process on Grind 5 - 10 seconds longer, until the mixture resembles a coarse paste. Rub the paste evenly all over the surface of the roast. The meat may be roasted immediately or covered loosely with waxed paper, and refrigerated for up to 8 hours (the longer the rub is on the meat, the more intense the flavor will be). If refrigerated for longer than 1 hour, take the meat out of the refrigerator 20 - 30 minutes before roasting. Arrange the rack in Position A and preheat the Cuisinart® TOB-Series Toaster Oven Broiler to 450 degrees F Bake Setting. Arrange the rack in the drip pan in the upper most position and coat lightly with cooking spray. Center the roast on the rack and roast in the preheated 450 degrees F oven for 15 minutes. Lower the temperature to 325 degrees F and continue roasting for an additional 35 - 45 minutes, until the temperature when tested in the center of the roast is 155 - 160 degrees F. Turn off the oven, transfer the roast to a warm platter, and let rest for 10 minutes before slicing. Use the Cuisinart® CEK - 40 Electric Knife to carve roast into slices 1/4-inch thick or less, as preferred.

PAN-SEARED PORK CHOPS WITH SAGE, DATES AND PARSNIPS

Pan-Seared Pork Chops With Sage, Dates and Parsnips image

This easy dish combines sage, brown butter and dates for a blast of sweet-salty flavor. Brining the pork chops in advance ensures tenderness: You can allow them to sit in the thyme-infused brine overnight, but even two hours of marinating will improve the taste and texture of the chops. This recipe calls for parsnips, but sweet potato or roasted squash would also work well. (And if you can't find medjool dates, pitted prunes are a worthy stand-in.)

Provided by David Tanis

Time 2h30m

Yield 4 servings

Number Of Ingredients 11

1/4 cup kosher salt (Diamond Crystal), plus more for boiling
2 tablespoons granulated sugar
1 large thyme sprig
4 bone-in pork chops, about 3/4-inch thick (about 2 pounds)
2 pounds parsnips, peeled and cut into 3-inch sticks
2 tablespoons olive oil
4 tablespoons salted butter
12 large sage leaves
12 pitted medjool dates, halved
Freshly ground black pepper, to taste
1/2 lemon, plus more to taste

Steps:

  • Brine the chops: Put salt and sugar in a large bowl. Whisk in 4 cups water to dissolve. Add thyme sprig and pork chops. Cover and refrigerate for at least 2 hours or up to overnight. When ready to cook, remove chops from brine and pat dry. Discard brine.
  • Heat oven to 350 degrees. Put a large pot of well-salted water over high heat. When it boils, add parsnips and bring to a brisk simmer. Cook until parsnips are tender, 8 to 10 minutes. Drain parsnips and keep warm.
  • Meanwhile, set a large skillet over medium-high heat and add olive oil. When oil is wavy, sear chops until nicely browned, about 3 minutes per side. (Work in batches if you don't have a large skillet.)
  • Transfer chops to a roasting pan or sheet pan in one layer. Bake for 10 to 15 minutes, until meat is 140 degrees when probed with an instant-read thermometer. Remove from oven and let rest while you make the sauce.
  • Wipe out the skillet and return to medium-high heat. Add butter and let it begin to brown. Add sage leaves and dates, and let sizzle for about a minute. Add pepper and lemon juice, and pull off heat. Taste, and add more pepper or lemon to taste.
  • To serve, place chops and a spoonful of parsnips on warm plates. Spoon butter mixture over chops and parsnips.

  • To prepare the pork chops, lay them out flat on a clean surface. On the exposed side of each, drizzle a ½ tsp of olive oil and a pinch of salt and pepper. Gently massage these ingredients into the pork chops.
  • If you own a well seasoned iron skillet, use this to sear the chops on high heat. Otherwise, use a small skillet that has been sprayed with pan spray. Lay each pork chop, seasoned side down, in your skillet and drizzle an additional ½ tsp of olive oil and pinch of salt and pepper on the raw side. Sear both sides of the pork chops for 1-2 minutes per side.
  • Preheat an oven to 375 degrees. Prepare a sheet tray by spraying it with pan spray and drizzling the second amount of olive oil. Place the seared pork chops evenly spaced on the tray. Crush the garlic cloves and arrange them with the thyme (about 8 sprigs) on the tray.
  • Slice the lemon into 4 slices and place one on top of each pork chop. You can arrange the ends of the lemon on the tray as well. Finally, dice the butter into tiny cubes, and arrange these across the pork chops and thyme sprigs.

  • Open the butterflied pork shoulder with the top fat layer on the bottom and cut side up, and lie flat on a work surface. Sprinkle 1 teaspoon of Kosher salt evenly over the whole section. If your pork shoulder is smaller than 3.5 pounds, use less salt. Let it rest on the counter while you prepare the herb mixture.
  • Separate and remove the fat from the remaining pan juices. Add about 3 tablespoons of dry Vermouth and the remaining 1/2 cup stock. Set the skillet on a burner and turn the heat to medium. Scrape the bottom and sides of the pan with a wooden spatula or spoon to dissolve all the caramelized bits. Skim off as much fat from the liquid as the sauce simmers. Carefully add any juice that has accumulated on the carving board from the pork roast to the pan juices. Taste and correct the seasoning and put in a spotted serving dish. The sauce could take around 5 - 10 minutes to make.
  • Remove the string that is tied around the length of the roast and the first string located closest to your carving end. Slice the pork into slices no thicker than ½ inch. Remove the strings as you carve.
