- In a large saucepan, combine the cranberries, sugar, water, Triple Sec and lemon juice. Cook over medium heat until berries pop, about 15 minutes., Remove from the heat; stir in lemon zest. Transfer to a small bowl. Chill until serving.

- Empty a 12-ounce bag of fresh or frozen cranberries into a saucepan and transfer 1/2 cup to a small bowl. Add 1 cup sugar, 1 strip orange or lemon zest and 2 tablespoons water to the pan and cook over low heat, stirring occasionally, until the sugar dissolves and the cranberries are soft, about 10 minutes. Increase the heat to medium and cook until the cranberries burst, about 12 minutes. Reduce the heat to low and stir in the reserved cranberries. Add sugar, salt and pepper to taste and cool to room temperature before serving.

- In a medium saucepan over high heat, combine all ingredients and stir well. Bring to a boil, then reduce heat to low heat. Simmer for 10 minutes, stirring occasionally, until all cranberries have "popped" open and the sauce has thickened. Mash the cooked cranberries with the back of a wooden spoon to break up the cranberries and make the sauce thicker.
- Remove from heat and let cool for a few minutes before placing in a serving dish. Serve warm or cover with plastic wrap and chill in the refrigerator until ready to use. The sauce is better if made the day before to give time for the flavors to meld together.
