LEMON SUPREME PIE
A friend and I often visit a local restaurant for pie and coffee. When they stopped carrying our favorite lemon supreme pie, I got busy in the kitchen and created this version, which we think tastes even better! - On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. deep-dish pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°. , Line crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is golden brown, 20-25 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack. , For lemon filling, combine 3/4 cup sugar, cornstarch and salt in a small saucepan. Stir in water until smooth. Bring to a boil over medium-high heat. Reduce heat; add remaining sugar. Cook and stir until thickened and bubbly, about 2 minutes. Remove from heat; stir in butter, lemon zest and, if desired, food coloring. Gently stir in lemon juice. Cool to room temperature, about 1 hour. , For cream cheese filling, beat cream cheese and confectioners' sugar until smooth. Fold in whipped topping and lemon juice. Spread over pie shell., Cover cream cheese filling with lemon filling. Refrigerate pie overnight. , If desired, dollop additional whipped topping over lemon filling. Refrigerate until serving.

- Combine the cookie crumbs and sugar; stir in butter. Press onto the bottom of a lightly greased 9-in. springform pan. Place on a baking sheet. Bake at 350° for 8-10 minutes or until crust just begins to brown. Cool pan on a wire rack., In a large saucepan, combine sugar and cornstarch. Stir in water until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat. Stir a small amount of hot filling into egg yolks; return all to pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat. Gently stir in the lemon juice, butter and zest. Cool to room temperature without stirring., In a small saucepan, sprinkle gelatin over lemon juice; let stand for 1 minute. Heat over low heat, stirring until gelatin is dissolved. Remove from the heat. , In a large bowl, beat cream cheese and sugar. Gradually beat in gelatin mixture until combined. Fold in the whipped cream and lemon peel. , Spoon three-fourths of cheesecake mixture into crust; build up edges slightly. Chill for 5 minutes. Spoon lemon filling over cheesecake layer to within 1/2 in of edges. Top with remaining cheesecake mixture. Cover and refrigerate overnight. , Carefully run a knife around edge of pan; remove sides of pan. Refrigerate leftovers.

LEMON SURPRISE PUDDING
This lemon self-saucing pudding is a delight! Light, fluffy sponge with a zesty lemon sauce beneath.

- Preheat the oven to 180C/160C Fan/Gas 4. Butter a 2 litre/3½ pint shallow ovenproof dish.
- Grate the zest from two of the lemons, then squeeze the juice of all three.
- Cream the butter with the sugar and lemon zest. Beat in the egg yolks one by one. Don't worry if the mixture curdles. Next beat in the flour a spoonful at a time, alternating with slurps of milk and lemon juice.
- Once that is all in, whisk the egg whites in a separate bowl until they form stiff peaks, and fold lightly into the lemon batter.
- Pour the mixture into the baking dish, then stand the dish in a roasting tin. Pour enough boiling water around the dish to come about halfway up the sides.
- Bake in the oven for 40-45 minutes until the pudding is golden brown. Serve hot or warm, with or without cream.
LEMON SURPRISE
Iced lemon cream with meringues

- Finely grate the rind and squeeze the juice from the lemons
- Whisk the egg whites until very stiff then add the caster sugar a spoonfuly at a time, whisking well after each addition until the mixture is very thick
- Whisk both the double and single creams together until softly stiff. Place aside 1/3 of this cream. Then combine the remaining 2/3 with the egg yolks and mix well together. Then fold it evenly and smoothly into the whisked whites with the lemon rind and juice
- Turn the mixture into ot 1.1 litre pudding basin, cover and freeze until firm.
- To make the meringues, preheat the oven 250F Gas 1/2 . Line a 2 baking trays with non stick paper
- Whisk the egg whites until very stiff then gradually add the caster sugar, whisking very well after each addition of sugar. Pipe or spoon blobs of mixture about the size of an egg cup on to the lined baking sheet. Bake for about 2 hours or until they are dry and crisp. Carefully remove from baking tray and let them cool on a wire tray.
- Take the iced lemon cream from the freezer and dip the pudding basing in and out of hot water to help it from the bowl. Run a knife round the edge and turn the lemon cream out on to a serving plate. If the surface seems at all sticky return the cream to the freezer for another 30 mins or until firm again.
- Spread the reserved cream over the surface of the lemon cream and cover with the meringues. Leave the bomb for about 30 mins before servining as this will mean that the centre will be soft enough to slice.

- In a large mixing bowl, whisk milk and instant lemon pudding mix until set. It may take 4-5 minutes to thicken. Spread evenly on top of the lemon cream cheese mixture.

- Place your greased pan into a larger roasting pan or dish. Big enough that there's room for water around the outside of the baking pan with the pudding in.
- Zest the lemons into a large bowl, or the bowl of your stand mixer and squeeze the juice into a jug. Leave the juice to one side.
