LEMON RAISIN FILLED COOKIES

My mother-in-law gave me the recipe for these soft and moist cookies 38 years ago, and they've been a family favorite ever since!

Yield about 4 dozen.

Number Of Ingredients 15

1 cup shortening
2 cups packed brown sugar
3 large eggs
4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
FILLING:
1 cup sugar
2 tablespoons cornstarch
1 cup water
1 cup raisins
1 large egg, beaten
1 tablespoon butter
3 tablespoons lemon juice
1 to 2 teaspoons finely grated lemon zest

Steps:

  • In a bowl, cream shortening and brown sugar. Add eggs, one at a time, beating well after each addition. Combine flour, baking soda and salt; add to creamed mixture and mix well. Cover and chill overnight. , For filling, combine sugar and cornstarch in a saucepan. Add water; stir to dissolve. Add raisins; cook and stir 2 minutes more. Remove from the heat. Stir a little of the hot mixture into beaten egg; return all to saucepan. Bring to a gentle boil; cook and stir for 2 minutes. Remove from the heat; stir in butter, lemon juice and zest. Cool. , Divide chilled dough into thirds. Roll out a portion at a time on a lightly floured surface to 1/8-in. thickness. Cut into 2-1/2-in. circles. Place 1 teaspoon filling on half of the circles; top with remaining circles. Pinch edges together to seal; place on greased baking sheets. Bake at 375° for 12 minutes or until lightly browned. (Use any leftover filling in tarts or as a dessert sauce over cake.)

2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 cup shortening
2 eggs
1 ½ cups white sugar
¼ cup lemon juice
2 teaspoons lemon extract
1 cup rolled oats
1 cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 2 cookie sheets.
  • In large bowl, cream shortening, sugar, eggs, lemon juice and lemon extract. Mix until well blended. Blend in the flour, baking soda and salt. Stir in the oats and raisins. Drop dough by spoonfuls 2 inches apart on to cookie sheets.
  • Bake for 12 to 15 minutes and transfer to racks to cool.

1/2 cup butter-flavored shortening
1/2 cup plus 3 tablespoons sugar, divided
1/3 cup packed brown sugar
1 large egg
1/2 teaspoon grated lemon zest
1/2 teaspoon lemon extract
1/4 teaspoon vanilla extract
1-1/3 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1/4 teaspoon salt

Steps:

  • In a bowl, cream the shortening, 1/2 cup sugar and brown sugar. Beat in the egg, lemon zest and extracts; mix well. Combine the flour, baking soda, cream of tartar and salt; gradually add to creamed mixture and mix well. Refrigerate dough for 1-2 hours or until firm., Shape dough in to 1-in. balls; roll in remaining sugar. Place 2 in. apart on greased baking sheets. Flatten with a fork, forming a crisscross pattern. Bake at 375° for 8-10 minutes or until lightly browned. Remove to wire racks to cool.

3/4 cup sugar
1/4 cup shortening
1/4 cup butter, softened (or margarine)
1 egg
1/2 teaspoon vanilla extract (or lemon)
1 3/4 cups all-purpose flour
3/4 teaspoon cream of tartar
3/4 teaspoon baking soda
1/4 teaspoon salt
1 cup raisins

Steps:

  • Heat oven to 400 degrees.
  • Mix sugar, shortening, butter, egg and extract in large bowl. Stir in remaining ingredients.
  • Shape dough by rounded teaspoonfuls into balls. Place 3 inches apart on ungreased cookie sheet. Flatten in crisscross pattern with fork dipped in flour (or use the potato masher!).
  • Bake 8 to 10 minutes or until light brown. Remove from cookie sheet. Cool on wire rack.
