2/3 cup panko (Japanese dried bread flakes)
2 tablespoons minced fresh parsley
1 teaspoon grated lemon zest
Kosher salt and freshly ground black pepper
2 tablespoons good olive oil
Four 6- to 8-ounce salmon fillets, skin on
2 tablespoons Dijon mustard
2 tablespoons vegetable oil
Lemon wedges, for serving

Steps:

  • Preheat the oven to 425 degrees.
  • In a small bowl, mix together the panko, parsley, lemon zest, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Drizzle with the olive oil and stir until the crumbs are evenly coated. Set aside.
  • Place the salmon fillets, skin side down, on a board. Generously brush the top of the fillets with mustard and then sprinkle generously with salt and pepper. Press the panko mixture thickly on top of the mustard on each salmon fillet. The mustard will help the panko adhere.
  • Heat the vegetable oil over medium-high heat in a 12-inch cast-iron skillet or large heavy, ovenproof pan. When the oil is very hot, add the salmon fillets, skin side down, and sear for 3 to 4 minutes, without turning, to brown the skin.
  • Transfer the pan to the hot oven for 5 to 7 minutes until the salmon is almost cooked and the panko is browned. Remove from the oven, cover with aluminum foil, and allow to rest for 5 to 10 minutes. Serve the salmon hot or at room temperature with lemon wedges.

1 egg
¼ cup chopped onion
½ cup seasoned dry bread crumbs
1 tablespoon olive oil

Steps:

  • Drain and reserve liquid from salmon. Mix egg, onion, bread crumbs and salmon together.
  • Make into patties. If mixture is too dry to form into patties, add reserved liquid from salmon.
  • In a frying pan, heat olive oil. Place patties in pan. Brown on each side, turning gently. Drain on paper towels and serve.

1 can (14-3/4 ounces) pink salmon, drained, skin and bones removed
3/4 cup whole milk
1 cup soft bread crumbs
1 large egg, lightly beaten

LEMON SAUCE:
2 tablespoons butter
4 teaspoons all-purpose flour

Steps:

  • Preheat oven to 350°. In a large bowl, combine first 9 ingredients. Fill 8 greased muffin cups with 1/4 cup salmon mixture. Bake 45 minutes or until browned. , Meanwhile, melt butter in a saucepan; stir in flour until smooth. Gradually stir in milk; bring to a boil over medium heat. Cook and stir for 2 minutes or until thickened. Remove from heat; stir in lemon juice, salt and cayenne. Serve with patties.

2 can(s) pink salmon, drained bones & skin removed
1 medium red onion chopped
1 medium yellow onion chopped
1 medium green bell pepper, chopped
5-6 medium mini red peppers, chopped
1 Tbsp lemon pepper (no salt added)
1 Tbsp granulated garlic
2 c all purpose flour seperated
5 large eggs slightly beaten, divided (3 plus 2)
2-3 Tbsp coconut oil or canola (start with 2, add more if needed)
PANKO BREAD CRUMB MIXTURE
2 1/2-3 c panko bread crumbs
1 1/2-2 Tbsp old bay seafood seasoning
2 tsp paprika

Steps:

  • 1. Drain canned salmon and add to a large bowl, remove bones, and skin and any undesirable pieces, then flake into pieces.
  • 2. Chop bell peppers, mini peppers, & onions and add to bowl along with 1 CUP of flour and slightly beaten eggs. Mix together to combine and shape into desired patties.
  • 3. Add the Panko breading ingredients into a large gallon size closable bag and shake together to blend, set aside till needed.
  • 4. Add the remaining cup of flour to a plate or platter, and coat each patty on both side with flour, add more when & if needed. With the remaining eggs, add 2 tablespoons of water beat till blended, in a small pan or bowl, and carefully place each patty in egg wash coating each side then coat with Panko bread crumbs on both sides. Allow patties to sit at least 10 to 15 minutes so crumbs will adhere to surface.
  • 5. Melt oil in large skillet over medium high heat, when hot, add the patties,& brown on one side then flip to other side about 5 to 7 minutes per side.
  • 6. Serve with lemon wedges and other condiments as desired.

  • In a separate small bowl, combine sauce ingredients.

3/4 lb cooked salmon, from fresh (see Jubes' Simple and Healthy Poached Salmon)
3 tablespoons canola oil, divided
1/3 cup red bell pepper, finely chopped
2 green onions, sliced (green part)
1 1/2-2 teaspoons lemon-pepper seasoning
salt
3 -4 tablespoons mayonnaise
1 tablespoon Dijon mustard
1 whole egg, lightly beaten
1 cup panko breadcrumbs, divided (plain or seasoned)
mixed salad green (optional)
1 cup plain Greek yogurt
1/3 cup sour cream
3/4 cup peeled seeded and chopped cucumber
lemon juice (to taste)
1 tablespoon olive oil
salt and pepper
1 teaspoon minced garlic

Steps:

  • Break cooked salmon into pieces into a mixing bowl. (Make sure the pieces are not too small; when you form the cakes the salmon should look like lump crab does in crab cakes.) Set aside.
  • In a large nonstick skillet, heat 1 tablespoon oil over medium heat. Add red pepper and green onions; saute until soft. Cool a few minutes, then add to the salmon. Add lemon-pepper, salt, 3 tablespoons mayonnaise, Dijon, egg and 1/2 cup panko bread crumbs. Mix gently. If the mixture seems too loose, add more mayonnaise and more bread crumbs.
  • Shape the mixture into patties. When all the patties are formed, place the remaining 1/2 cup panko on a plate. Lightly coat both sides of each patty with panko (use more if needed). Set the panko-coated patties on a plate and refrigerate for 30 minutes.
  • When ready to cook, heat the remaining 2 tablespoons oil over medium heat in the same skillet you used to saute the red pepper and onion. Working in batches if necessary, cook the salmon patties about 3 minutes on each side or until lightly browned. Remove from the skillet; serve on a bed of salad greens. Top with tzatziki, if desired.
  • To make the sauce, stir together all tzatziki ingredients. Chill for 30 minutes before serving.

3/4 cup plain Greek yogurt
1/4 cup finely diced peeled cucumber (, squeezed dry of any excess liquid)
3 tablespoons finely diced red onion
1 clove garlic (, finely diced)
1 teaspoon lemon juice
1/4 teaspoon kosher salt
pinch of black pepper
1 pound fresh salmon filet
4 tablespoons extra virgin olive oil (, divided)
1/4 teaspoon garlic powder
pinch of salt
few turns of cracked black pepper
3 tablespoons unsalted butter (, divided)
1 cup finely diced sweet onion
1/3 cup finely diced celery
1 cup Panko bread crumbs ((Japanese bread crumbs))
2 large eggs (, lightly beaten)
3 tablespoons mayonnaise
1 teaspoon Dijon mustard
1 teaspoon lemon juice
1 teaspoon Worcestershire sauce
1 teaspoon Old Bay seasoning
1/4 cup fresh parsley (, minced)

Steps:

  • In a medium bowl, combine all of the tzatziki ingredients. Taste and adjust seasoning to your liking. Cover and chill until ready to use.
  • Preheat oven to 375 degrees F. Coat a rimmed baking sheet with nonstick cooking spray.
  • Place salmon skin-side down on the baking sheet. Brush with 1 tablespoon olive oil and season with the garlic powder, salt, and pepper.
  • Bake uncovered until the salmon easily flakes with a fork, about 12-15 minutes (time will vary based on the size and thickness of the fillets.) Remove from oven, cover with foil, and rest 10 minutes. Discard skin, flake salmon with forks, remove any bones, and cool to room temperature.
  • Warm 1 tablespoon each of olive oil and butter in a medium nonstick skillet over medium heat. Once it bubbles, add in the onion and celery. Sauté until softened and golden (about 5 minutes) then remove from heat.
  • In a large mixing bowl, add the cooled flaked salmon, sautéed onion and celery, bread crumbs, eggs, mayonnaise, mustard, lemon juice, Worcestershire sauce, Old Bay seasoning, and fresh parsley. Stir gently to combine.
  • Form mixture into 13-14 even patties, pressing them together so they're compact, then gently flattening them into 1/3 to 1/2-inch thickness.
  • In the skillet you used to sauté the vegetables, warm 1 tablespoon each of olive oil and butter over medium heat. Once bubbling, add half of the salmon cakes and sauté 3 1/2 to 4 minutes per side or until golden brown and cooked through. (Keep a close eye on them and if they brown too quickly, reduce heat.)
  • Transfer salmon cakes to a paper-towel lined plate to drain.
  • Add remaining 1 tablespoon oil and butter and repeat cooking the remaining salmon cakes.
  • Serve with Tzatziki sauce and enjoy!
