Yield Makes 1 focaccia

Number Of Ingredients 9

1 package (1/4 ounce) instant yeast
5 cups all-purpose flour, preferably organic
2 1/2 teaspoons fine sea salt
Olive oil, for bowl and baking sheet
1/2 pound Pecorino Pepato, thinly sliced
2 lemons, very thinly sliced crosswise
1 sprig rosemary, leaves only
1/4 teaspoon fleur de sel
2 tablespoons extra-virgin olive oil

Steps:

  • In a large bowl, combine yeast and 2 1/2 cups flour with 2 cups water; whisk to combine. Let stand 15 minutes.
  • Add remaining 2 1/2 cups flour and salt; mix until well combined. Turn dough out onto a lightly floured work surface; knead until wet and tacky, but not sticky, 8 to 10 minutes. Transfer to a well-oiled bowl and cover with plastic wrap. Let stand until doubled in size, 3 1/2 to 4 hours.
  • Oil a large rimmed baking sheet and press dough evenly into baking sheet. Let rise until puffy, about 1 hour.
  • Preheat oven to 500 degrees. Cover dough with Pecorino Pepato and lemon slices and sprinkle with rosemary leaves and salt; drizzle with extra-virgin olive oil. Transfer to oven and bake for 15 minutes. Rotate baking sheet, and continue baking until lemons and crust are golden brown, about 15 minutes more.
  • Remove bread from baking sheet and transfer to a wire rack to cool at least 10 minutes before serving.

Bell peppers, herbs and mozzarella cheese punch up the flavor in this easy-to-make flatbread.

2 3/4 to 3 cups Gold Medal™ all-purpose flour
2 tablespoons sugar
1/2 teaspoon salt
1 package regular or quick active dry yeast
1 cup water
1/4 cup olive or vegetable oil
1/2 medium green bell pepper, cut into thin slices
1/2 medium red bell pepper, cut into thin slices
1/2 cup shredded mozzarella cheese (2 ounces), if desired
1/2 teaspoon dried basil leaves
1/2 teaspoon dried oregano leaves
1/2 teaspoon garlic powder
1/2 teaspoon salt

Steps:

  • Mix 1 1/2 cups of flour, the sugar, 1/2 teaspoon salt and the yeast in large bowl. Heat water and 2 tablespoons of the oil until very warm (120°F to 130°F); stir into flour mixture. Beat with electric mixer on low speed about 30 seconds, scraping bowl occasionally, until batter is springy and pulls away from side of bowl. Stir in enough remaining flour to make a soft dough. Cover and let rise in warm pace about 1 hour or until double. (If using quick yeast, omit 1-hour rising; cover and let rest on floured surface 10 minutes.)
  • Grease 2 cookie sheets. Stir down dough; divide in half. Place each half on cookie sheet; press into 12-inch circle. Brush each circle with about 1 tablespoon of the remaining oil. Top each with half of the bell peppers, cheese, basil, oregano, garlic powder and 1/2 teaspoon salt. Let stand 10 to 12 minutes.
  • Heat oven to 425°F. Bake 12 to 15 minutes or until crust is golden brown. Cut into wedges. Serve hot.

POTATO, SAGE AND LEMON ZEST FOCACCIA



Potato, Sage and Lemon Zest Focaccia image

There are a lot of focaccia styles out there. There are thick and fluffy ones, loaded with toppings, and crispy, oily ones with a minimalist sprinkle of salt. Then there's everything in between. I decided to stick to this middle ground and bake up something that had crisp edges while still being light and soft in the center. Baking the focaccia in a cake pan, a trick I learned from the Los Angeles chef Nancy Silverton, does just that. It encourages the exterior of the loaf to turn crunchy as it absorbs heat from the sides of the pan, while allowing the dough to rise nicely in the middle. A cake pan also made for a nice-looking, gently domed loaf, more evenly shaped than the flatter, hand-pressed focaccias I've made in the past.

1 ball focaccia dough (see recipe)
1/4 cup olive oil
3 cloves garlic, smashed and peeled
1 medium Yukon Gold potato (about 4 ounces), peeled
1 tablespoon sage, finely chopped
Finely grated zest of 1 small lemon
1/4 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Heat oven to 450 degrees. Place a small skillet over medium heat and add olive oil. Add garlic and cook until caramelized and golden brown, 2 to 6 minutes. Remove from heat and cool. Using a mandolin or knife, thinly slice potato. Toss with 1 tablespoon garlic oil (reserve remaining oil and garlic), sage, lemon zest, salt and pepper. Pour remaining garlic oil into bottom of a 9-inch cake pan.
  • Pat dough evenly into pan, leaving a small gap between dough and edges of pan. Chop garlic cloves and press into dough. Layer potato-sage mixture on top. Bake until potatoes and focaccia are golden brown, 30 to 35 minutes.

An incredible bread! Using lemons on a focaccia seemed so unusual to me, I just had to try it--absolutely loved it! All these flavors play together so nicely. Recipe adapted from "A New Way to Cook", by Sally Schneider. I use Peter Reinhart's recipe for pizza dough, which I hope to post soon.

1 lb pizza dough
1 tablespoon fruity extra virgin olive oil (I used quite a bit more)
2 teaspoons finely chopped fresh rosemary
fresh ground black pepper
1 lemon, scrubbed and dried
1 tablespoon freshly grated parmigiano-reggiano cheese (or 1/2 teaspoon flake sea salt or kosher salt)

Steps:

  • Preheat oven to 425F thirty minutes before baking, and place a baking stone, baking tiles, an inverted large cast-iron skillet or griddle, or a heavy baking sheet in oven to heat (I use a baking stone).
  • Flour the work surface lightly and roll the dough into a rough circle 11 inches in diameter. Place a sheet of parchment paper roughly the size of the dough on a baker's peel (this is what I use), inverted baking sheet, or a rimless cookie sheet. Transfer dough to the parchment; reshape with your fingers.
  • Prick the dough with a fork and brush lightly with some of the olive oil. Grind pepper over it and sprinkle evenly with the rosemary. Cut the lemon in half lengthwise through the stem (reserve other half for another use), then slice crosswise as thinly as you can; remove any seeds. Arrange lemon slices evenly over the dough and brush them lightly with olive oil. Cover loosely with plastic wrap and set aside to rise for 15 minutes.
  • Slide the focaccia, still on the parchment, onto the hot stone. Bake until the crust is puffed and golden brown, about 20 minutes. Brush with remaining oil and sprinkle with the cheese or salt. Cut into wedges and serve at once.

LEMON HONEY THYME FOCACCIA

Another lemon bread recipe, which can be made entirely in the bread machine (and is thus, no longer a focaccia) or taken out as dough and hand-formed into the focaccia and baked in the oven. Note: the amount of yeast depends on the preparation, 2 teaspoons for machine or 1 tablespoon for the hand-formed loaf.

3/4 cup water
3 tablespoons honey
2 large egg whites
1/4 cup vegetable oil
1 tablespoon lemon zest, finely minced
4 tablespoons nonfat dry milk powder
1/2 cup whole wheat flour
1/2 cup cornmeal
2 cups unbleached white flour
1/2 teaspoon salt
2 teaspoons fresh thyme, minced
2 teaspoons yeast, for baked in bread machine or 1 tablespoon yeast, for hand-finished focaccia bread
1/3 cup honey, for focaccia, omit if finished in machine
1/3 cup honey, for dipping

Steps:

  • With all ingredients at room temperature, place in bread machine except the 1/3 cup honey. Program for Dough and start. After the final cycle, remove the dough to a lightly floured work surface.
  • Use your hands to pat the dough into a 10-inch disk and place it on an oiled pizza pan or baking sheet. Allow the dough to rise 30 minutes and then use your finger to gently poke a dozen slight indentations around the top of it.
  • Preheat the oven to 400F with the rack in the center position. Bake the focaccia for 12 minutes at 400F, then lower the temperature to 375°F Remove the focaccia and quickly drizzle the honey over the top:it should collect in the holes as well as drip over the entire surface. Continue baking an additional 12 - 14 minutes. If the top is getting too brown, cover it with a tent of foil (so as not to disturb the honey). Cut the focaccia into wedges and serve hot, warm, or at room temperature with a dish of additional honey for dipping.

1 1/2 cups bread flour
1/4 ounce dry yeast
3/4 cup water
1 pinch salt
1/2 cup virgin olive oil
1 tablespoon chopped fresh rosemary
1/2 lemon, thinly sliced and de-seeded
fresh ground black pepper
1 tablespoon grated parmesan cheese (I use more)

Steps:

  • Mix all bread ingredients together in a large mixing bowl and knead for 10 minutes.
  • Allow to rest uncovered for 10 minutes.
  • Roll out dough on a floured board or between two sheets of parchment paper, to a 14-inch circle of ½ inch thickness.
  • Place the dough on an oiled baking sheet, or pizza pan, and brush heavily with olive oil.
  • Evenly powder with the chopped rosemary and pepper.
  • Place lemon slices evenly over bread in a design.
  • Cover with a cloth and allow to rise 20 to 25 minutes in a warm area.
  • Preheat oven to 425 degrees.
  • To get the olive oil to stay in place, make light indentations in the bread with your fingers.
  • Bake at 425 decrees 15 to 20 minutes or until golden brown.
  • Remove from the oven and brush with more olive oil.
  • Sprinkle with Parmesan cheese.

  • Whisk half of the water, sugar, and yeast together in the bowl of a stand mixer fitted with a dough hook. Cover and allow to rest for about 5 minutes, or until mixture becomes foamy.
  • Add the remaining water, olive oil, salt, and 1 cup flour. Beat on low speed until mixed, then add 2 and 1/2 cups (325g) more flour. Beat on low speed for about 2 minutes. If the dough is still sticking to the sides of the bowl, add the last 1/2 cup (60g) of flour. Turn the dough out onto a lightly floured surface and knead the dough for 3-4 minutes. If the dough is still too sticky, add more flour 1 Tablespoon at a time until the dough does not stick to your fingers when kneading and the dough bounces back slowly when poked.
  • Lightly grease a large bowl with a teaspoon of olive oil. Place the dough in the bowl, turning it to coat all sides in the oil. Cover the bowl with a clean kitchen towel. Allow the dough to rise at room temperature for 2-3 hours or until doubled in size.
