6 pork chops, trimmed of fat
1 medium onion, sliced & rings separated
1 lemon, washed and sliced
1/4 cup olive oil
1 1/2 tablespoons lemon juice
1 tablespoon lemon pepper
1 tablespoon adobo seasoning

Steps:

  • Mix marinade ingredients.
  • Place pork chops in slow cooker.
  • Cover pork chops with marinade and top with onion rings and lemon slices. Cook on high for 2-4 hours or low for 4-6 hours depending on how quickly your slow cooker cooks.
  • Pork is medium well done when it is 160° and is well done when it is 170°.

4 5 ounces each boneless pork chops
4 garlic cloves (minced)
3/4 teaspoon salt
1/2 teaspoon ground pepper
1/2 teaspoon paprika
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon crushed dried rosemary
juice of 1/2 lemon
2 tablespoons minced flat-leaf parsley

Steps:

  • Trim any fat from the pork chops. Place the pork chops and garlic in a large bowl. In a small bowl, stir together the salt, pepper, paprika, oregano, thyme and parsley. Sprinkle the salt mixture over the pork chops and garlic, and turn to coat.
  • Squeeze the lemon juice over the pork chops. Let rest for 15 minutes.
  • Preheat the broiler. Line a baking sheet with foil. Lightly coat with cooking spray. Place the pork chops on the baking sheet.
  • Broil the pork chops until just cooked through, about 4 to 5 minutes per side.
  • Sprinkle the pork chops with parsley. Serve.

1 large egg, lightly beaten
1 cup seasoned bread crumbs
8 thin boneless pork loin chops (2 ounces each)
1/4 teaspoon salt
1/8 teaspoon pepper
1 tablespoon olive oil
1 tablespoon butter
1/2 pound sliced fresh mushrooms
2 garlic cloves, minced
2 teaspoons grated lemon zest
1 tablespoon lemon juice
Lemon wedges, optional

Steps:

  • Place egg and bread crumbs in separate shallow bowls. Sprinkle pork chops with salt and pepper; dip in egg, then coat with crumbs, pressing to adhere., In a large skillet, heat oil over medium heat. In batches, cook pork until golden brown, 2-3 minutes per side. Remove from pan; keep warm., Wipe pan clean. In skillet, heat butter over medium heat; saute mushrooms until tender, 2-3 minutes. Stir in garlic, lemon zest and lemon juice; cook and stir 1 minute. Serve over pork. If desired, serve with lemon wedges.
