Lemon Orzo with Parmesan, Kale, and Cherry Tomatoes image

Looking for a side dish for dinner? Whip up this Parmesan-kissed Lemon Orzo with kale and cherry tomatoes. It's fresh and flavorful!

1.5 cups dry orzo pasta
1/2 tsp oil
1 shallot
1/4 tsp garlic powder
salt and pepper (to taste)
1/2 lemon (, juiced)
3 TBSP unsalted butter
1.5 oz freshly grated parmesan cheese
12 cherry tomatoes
2 cups kale (, cleaned and chopped)
1/4 cup vegetable broth (or chicken broth)

Steps:

  • Bring a medium pot of water to a boil. Add orzo and cook until al dente, approx 7-9 minutes. Drain orzo in a wire-mesh strainer and set aside.
  • While orzo cooks chop kale, halve or quarter cherry tomatoes, and mince shallot.
  • Next heat a pan to medium heat with ½ teaspoon olive oil. Add minced shallot to hot pan and stir often until tender, approx. 4-6 minutes.
  • Season with garlic powder, salt, and pepper (to taste) and add lemon juice and broth.
  • Add orzo and kale and mix well until kale has wilted and some of the liquid has been absorbed into the pasta. Stir in tomatoes, Parmesan and butter, then season with a pinch of salt and pepper, to taste.
  • Optional: serve with lemon wedges to add an extra burst of citrus flavor, if you'd like! Enjoy!

Steps:

  • Cook 3 minced garlic cloves and 1/2 teaspoon each minced rosemary and kosher salt in 2 tablespoons olive oil in a saucepan over medium heat, 1 minute. Add 1 cup orzo; toast, stirring, 2 minutes. Add one 14-ounce can cherry tomatoes and 2 cups chicken broth. Bring to a boil, then reduce the heat to low. Cover and cook, stirring, until the orzo is tender, 7 minutes. Stir in 2 tablespoons pecorino.

1 tablespoon olive oil
2 cups cherry tomatoes, halved
1 clove garlic, minced
1 cup orzo
2 cups chicken stock
2 teaspoons fresh thyme, chopped
2 teaspoons capers, drained and minced
1 tablespoon pine nuts, chopped
Small handful grated Parmesan cheese
1 tablespoon lemon zest
Salt and pepper

Steps:

  • Pour the olive oil into a large skillet set over medium heat. Dump in the tomatoes and the garlic and cook, stirring often, until the tomatoes become a little soft, about 3 minutes. Turn off the heat and set aside.
  • Pour the chicken stock and orzo into a large pot. Turn the heat to high and bring to a boil. Reduce the heat to a gentle simmer, cover, and cook for 7 minutes. Turn off the and let the pot sit, covered, for an additional 3 minutes.
  • Stir in the thyme, capers, pine nuts, cheese, lemon zest, and the cooked tomatoes and garlic. Season with salt and pepper to taste.
