Rice flour gives this a nice crunch. Backhousia citriodora (common names lemon myrtle, lemon scented myrtle, lemon scented ironwood) is a flowering plant in the family Myrtaceae. From subtropical rainforests of central and south-eastern Queensland, Australia, with a natural distribution from Mackay to Brisbane. Other common names are sweet verbena tree, sweet verbena myrtle, lemon scented verbena, and lemon scented backhousia.

- Heat 1 inch of oil in a frying pan.
- Mix rice flour, lemon myrtle, paprika, chili and salt to taste. Toss prawns into mixture. Remove excess flour.
- Fry shrimp over heat heat 1 minute per side.
- Drain on paper towel.
- Sprinkle with red pepper flakes, salt and a slice of lime.

- Place water and sugar in a heavy based saucepan over low to medium heat. Stir using a wooden spoon until sugar has dissolved.
- Add strawberries and ¼ tspn of Lemon Myrtle, stirring regularly, bring to a simmer until strawberries have softened.
- Increase the heat to medium and bring to the boil, stirring occasionally to prevent burning, until mixture has thickened to a jam like consistency.
- Remove from heat, and stir in remaining Lemon Myrtle, returning to heat to release flavours.

- Mix all ingredients together in a small bowl or resealable bag.
- The orginal recipe did not include marinating times but I would suggest at least 2 hours for chicken, preferably overnight. Since fish tends to cook in marinades, 30 minutes should do. For vegetables, firmer vegetables can go longer but something like zucchini or yellow squash might be ready in 20-30 minutes.
LEMON AND THYME MARINADE FOR POULTRY
This is a wonderful marinade for dark meat such as chicken thighs or turkey legs. It can be used for white meat also, but it's best to leave the skin on white meat until it is cooked.
