This recipe comes from a First magazine. My husband loves lemon merigue pie and thinks this milkshake sounds fabulous. I haven't made this yet.

1/4 cup milk
1 tablespoon lemon zest, grated
2 tablespoons lemon juice
3 tablespoons lemon curd, heaping
1 3/4 cups vanilla ice cream, packed
whipped cream, for garnish
lemon zest, for garnish

Steps:

  • In blender, combine milk, lemon zest, lemon juice, and lemon curd.
  • Blend 5 seconds.
  • Add vanilla ice cream and blend until smooth, about 10 seconds.
  • Pour into serving glasses.
  • Top with whipped cream and additional lemon zest.
  • Serve immediately.

This is a very fun recipe to follow, because Grandma makes it sweet and simple. This pie is thickened with cornstarch and flour in addition to egg yolks, and contains no milk.

1 cup white sugar
2 tablespoons all-purpose flour
3 tablespoons cornstarch
¼ teaspoon salt
1 ½ cups water
2 lemons, juiced and zested
2 tablespoons butter
4 egg yolks, beaten
1 (9 inch) pie crust, baked
4 egg whites
6 tablespoons white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • To Make Lemon Filling: In a medium saucepan, whisk together 1 cup sugar, flour, cornstarch, and salt. Stir in water, lemon juice and lemon zest. Cook over medium-high heat, stirring frequently, until mixture comes to a boil. Stir in butter. Place egg yolks in a small bowl and gradually whisk in 1/2 cup of hot sugar mixture. Whisk egg yolk mixture back into remaining sugar mixture. Bring to a boil and continue to cook while stirring constantly until thick. Remove from heat. Pour filling into baked pastry shell.
  • To Make Meringue: In a large glass or metal bowl, whip egg whites until foamy. Add sugar gradually, and continue to whip until stiff peaks form. Spread meringue over pie, sealing the edges at the crust.
  • Bake in preheated oven for 10 minutes, or until meringue is golden brown.

1/2 c whole milk
1 Tbsp grated lemon zest plus more for garnish (optional)
2 Tbsp fresh lemon juice
3 heaping tablespoons store bought lemon curd
11 oz vanilla ice cream (about 1 3/4 packed cups)
whipped cream, sweetened
pizzelle cookies for garnish (optional)

Steps:

  • 1. In blender, combine milk,lemon zest,juice and curd; blend 5 seconds.
  • 2. Add vanilla ice cream and blend until smooth (about 10 seconds)
  • 3. Top shakes with whipped cream. Garnish with zest and pizzelles, if desired. Serve immediately.

We love this shake! The powdered lemonade mix adds just the right punch of tongue-tingling tart lemon flavor to balance the sweet pie.

2 cups vanilla ice cream, slightly softened
1/4 cup milk
1 teaspoon sugar-free lemonade flavor drink mix (from 2.1-oz container)
1 slice cold lemon meringue pie, cut into chunks (from 9-inch pie)
Crushed lemon drops, if desired

Steps:

  • In blender, place ice cream, milk and lemonade mix. Cover and blend on high speed until smooth and creamy. Add pie chunks; cover and blend until smooth, stopping blender to scrape down sides if necessary.
  • Pour into 2 glasses; sprinkle with crushed lemon drops. Serve immediately.
