Steps:
- Slice the onions ¼ inch thick and separate the rings.
- Mix all ingredients in a container you can cover and shake, and store in the refrigerator.
- Marinate at least 24 hours before serving.

MARINATED ONIONS
This recipe is so creamy & delicious. It takes away the strong onion taste, but still gives you the flavor. The recipe was given to me by a great friend from my church family. It is so simple & easy. The flavor will surprise you.

Steps:
- 1. Slice the onions into rings.( something like between 1/4 to 1/2 inch thick).Put in a sealable bowl.
- 2. Boil the water, sugar, & vinegar.
- 3. Pour over onion rings. Put on the lid.
- 4. Refrigerate over night.
- 5. The next day, DRAIN OFF liquid. Mix several Tablespoons of mayonnaise & the celery seeds. Add salt to taste.
- 6. Refrigerate until ready to serve.

- Preheat broiler to high. Place jalapeño on a foil-lined baking sheet. Broil the jalapeño until blackened on all sides (5 to 6 minutes). Cut jalapeño open lengthwise and place in a large bowl.
- In a small bowl, combine citrus juice, vinegar, salt, pepper and allspice, whisking to combine. Pour the pickling liquid over the sliced red onion, jalapeño and bay leaves, tossing to combine.
- Let the mixture sit at room temperature for 6 hours, tossing the ingredients every 2 hours. If you like a crunchier pickle, you can reduce the time to 3 hours. Season to taste with additional salt. Transfer pickled onions to a jar, cover tightly, and store in the refrigerator.
