Time 4h

Yield 16

Number Of Ingredients 10

1 (4 pound) beef London broil steak (about 1 1/2 inches thick)
1 tablespoon lemon zest
½ cup lemon juice
⅓ cup olive oil
4 teaspoons white sugar
2 tablespoons thinly sliced green onions
1 tablespoon Worcestershire sauce
1 teaspoon Dijon mustard
1 ½ teaspoons salt
⅛ teaspoon ground black pepper

Steps:

  • Prick the London broil on both sides several times with a fork; place into a resealable plastic bag. Whisk together the lemon zest, lemon juice, olive oil, sugar, green onions, Worcestershire sauce, Dijon mustard, salt, and black pepper in a bowl. Pour into the bag with the meat, coat with the marinade, squeeze out excess air, and seal. Marinate in the refrigerator at least 3 to 4 hours, but overnight is best.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Remove the beef from the marinade, and shake off excess. Discard the remaining marinade.
  • Cook the beef until it is beginning to firm, and is hot and slightly pink in the center, about 17 to 20 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C). Cover the meat with two layers of aluminum foil, and allow to rest in a warm area for 10 minutes before slicing thinly across the grain.

Categories     main-dish

Time 2h10m

Number Of Ingredients 8

1/3 cup minced shallots
3 tablespoons soy sauce
1/2 cup olive oil
3 tablespoons fresh thyme
Big dash hot sauce
3 tablespoons freshly squeezed lemon juice
1 1/2 pounds flank steak
Cress, for garnish

Steps:

  • Mix shallots, soy sauce, olive oil, thyme, hot sauce and lemon juice together in a non-reactive broiling pan. Score the steak, place it in the pan and turn in the marinade. Marinate for at least 2 hours at room temperature or up to 24 hours refrigerated. If refrigerated, turn the steak in the marinade occasionally. Drain off marinade and put into a saucepan. Place steak under broiler at 1 inch from the heat for 3 to 4 minutes on each side for rare, for 4 to 5 minutes on each side for medium. Leave the broiler door slightly ajar, so the heat stays on and air circulates. Meanwhile bring marinade to the boil. Remove from heat. Carve the meat in thin diagonal slices across the grain. Arrange the slices on a warm platter. Pour the carving juices and the marinade over the meat. Decorate with cress.

"My taste in food is pretty simple," writes Sara Hainsworth of Frederick, Maryland. "I'm a meat-and-potatoes - and chocolate - kind of person. My husband, Greg, and I cook together a lot, which is fun and makes weeknight dinners and cooking for friends easier to manage now that we're starting our own family. I worked before our son, William, was born, but as my husband says, William is my boss now. So I count on these quick, dependably good dishes more than ever."
1 2- to 2 1/4-pound top sirloin steak, about 1 1/4 inches thick
1/4 cup olive oil
1/4 cup fresh lemon juice
6 large garlic cloves
2 tablespoons Dijon mustard
1 tablespoon chopped fresh rosemary
2 teaspoons grated lemon peel

Steps:

  • Place steak in heavy large resealable plastic bag. Puree remaining ingredients in blender or processor. Season marinade with salt and pepper. Pour marinade into bag with steak; seal bag. Let steak marinate at room temperature 2 hours or chill up to 6 hours, turning bag occasionally.
  • Preheat broiler or prepare barbecue (medium-high heat). Broil or grill steak until cooked to desired doneness, about 7 minutes per side for medium-rare. Transfer steak to platter; let stand 15 minutes. Thinly slice steak crosswise.

  • Tenderize the steak by piercing the meat with a needle tenderizer, a fork or a paring knife all over both sides of the top round beef. Generously season both sides of the meat with salt and freshly ground black pepper and place the steak into a zipper sealable plastic bag or non-reactive container.
  • Make the marinade by whisking together the olive oil, red wine, Worcestershire sauce, soy sauce, Dijon mustard, brown sugar, garlic, thyme and parsley. Reserve and set aside ⅔ cup of the marinade to use as a basting sauce for grilling. Pour the rest of the marinade into the bag or container with the steak. Seal the bag or cover with plastic wrap and refrigerate for at least 8 hours or overnight. Flip the meat over a few times during the marinating process.
  • Place the reserved, unused marinade in a saucepan and simmer for a few minutes to reduce and thicken the sauce.
