2 cups all-purpose flour
1 cup butter, softened
2 (8 ounce) packages cream cheese
1 cup white sugar
2 (3.4 ounce) packages instant lemon pudding mix
3 ½ cups milk
1 (12 ounce) container frozen whipped topping, thawed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, combine the flour and butter using a pastry cutter until a ball forms. Press into the bottom of a 9x13 inch baking dish.
  • Bake for 25 minutes in the preheated oven, or until lightly golden. Remove from oven and allow to cool completely.
  • In a medium bowl, beat the cream cheese and sugar together until smooth and well blended. Spread evenly over the cooled crust. In another bowl, whisk together the lemon pudding mix and milk for 3 to 5 minutes. Spread over the cream cheese layer. Chill until set, then top with whipped topping.

1 pouch (17.5 oz) Betty Crocker™ sugar cookie mix
Butter and egg called for on cookie mix pouch for drop cookies
1/4 cup butter, melted
1 package (8 oz) cream cheese, softened
1 cup powdered sugar
1 tablespoon finely grated lemon peel
1 container (12 oz) Cool Whip frozen whipped topping, thawed
2 boxes (4-serving size each) Jell-O™ lemon instant pudding & pie filling mix
3 cups cold milk

Steps:

  • Heat oven to 375°F. Make and bake drop cookies as directed on pouch. Cool completely, at least 30 minutes. Set aside 6 cookies for garnish.
  • In food processor, process half of the remaining cookies to coarse crumbs. Remove to medium bowl. Continue to process second half of remaining cookies to coarse crumbs; add to bowl. Stir in melted butter until well blended. In ungreased 13x9-inch pan, press cookie crumb mixture firmly in bottom. Set aside.
  • In medium bowl, beat cream cheese, powdered sugar and lemon peel with electric mixer on medium speed until smooth, scraping down sides of bowl frequently. Beat in 2 cups whipped topping. Spread over cookie crust.
  • In another medium bowl, beat dry pudding mix and milk with whisk about 2 minutes or until thick. Spread over cream cheese mixture. Spread remaining whipped topping over pudding layer. Cover and refrigerate 4 hours.
  • When ready to serve, place 6 reserved cookies into quart-size resealable food-storage plastic bag. Seal bag; coarsely crush cookies with rolling pin. Sprinkle on top. Cut into 6 rows by 4 rows. Cover and refrigerate any remaining pieces.

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into the bottom of an ungreased 9x13 inch pan.

Making the crust with melted butter rather than softened keeps it crisp and perfectly contrasted to the creamy, lemon filling on top. Don't skip chilling the crust before baking, it really helps keep the crust crisp and crunchy. Lemons can vary when it comes to how sour they are. We like to taste our lemons to check for sourness. If they are really sour, we might consider adding a little extra sugar to the filling. Alternatively, if they are sweeter than usual, we'll pull back the sugar amount (2 to 4 tablespoons should do it).

12 tablespoons (170 grams) unsalted butter, melted and cooled
1/2 cup (100 grams) granulated sugar
1 teaspoon lemon zest
1/2 teaspoon kosher salt
1 teaspoon vanilla extract
2 cups (250 grams) all-purpose flour
1 1/2 cups (300 grams) granulated sugar
3 tablespoons (25 grams) all-purpose flour
1/4 teaspoon fine sea salt
2 teaspoons lemon zest
4 large eggs
3/4 cup (180 ml) freshly squeezed lemon juice, from 4 to 5 lemons
1 to 2 tablespoons powdered sugar, for sifting tops of bars

Steps:

  • Line a straight-sided 13 x 9-inch metal baking pan with foil, leaving an overhang on two opposite sides. (This will help when it comes to removing the cooled bars from the pan). Lightly coat the sides of the foil, but not the bottom, with non-stick cooking spray or extra melted butter to prevent the lemon topping from sticking.
  • In a medium bowl, use a spatula to stir and press the sugar, salt, lemon zest, and the vanilla extract together until it looks moist and is fragrant. Stir in the flour and melted butter until a crumbly, stiff dough forms.
  • Press the dough evenly into the bottom of the prepared baking pan (it may not look like enough dough at first, but it will cover the bottom nicely).   • Once the crust has baked, pour the lemon topping over the hot crust. Return the pan to the oven and increase the oven temperature to 350 degrees Fahrenheit. Bake until the topping is set in the center and it no longer wiggles when the pan is moved, 20 to 25 minutes.
  • Set the pan on a cooling rack and cool until the lemon bars are firm and the bottom of the pan is no longer warm, about 1 hour. (You can speed this up a little by placing the bars into the refrigerator once the pan is no longer hot).
  • Once cooled, use the overhang of foil to carefully lift the bars from the pan and place on a cutting board. Peel away the foil then cut into 16 bars or 32 small bars. Sift the powdered sugar over the bars.

1 cup walnuts, finely chopped
1 teaspoon lemon peel, finely grated

2 (3 1/2 ounce) packages instant lemon pudding
3 cups milk

Steps:

  • Cut margarine into flour until it forms a crumbly dough.
  • Add the nuts.
  • Spread into a 9x13 ungreased pan, and cook at 350°F until lightly browned (20-25 minutes).
  • Cool Completely.

1 1/2 c flour
1/2 c chopped nuts plus more for sprinkling on top
1 pkg 8 ounce cream cheese
1 c powdered sugar
3 c cool whip
2 small pkg. instant lemon pudding
3 c milk

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Cut butter into flour until mixture is crumbly, pea-size. Stir in chopped nuts.
  • 3. Press into 9x13 baking pan and bake 15 -20 minutes until light brown. Remove from oven and cool completely.
  • 4. Beat cream cheese and powdered sugar until creamy. Fold in 1 cup of the cool whip. Spread over cooled crust.
  • 5. Mix jello and milk until well mixed and creamy, pour over cream cheese layer and spread evenly.
  • 6. Top with 2 cups cool whip and chopped nuts if desired. Refrigerate.

1 cup unsalted butter
1/2 cup powdered sugar
2 cups all purpose flour
1/4 teaspoon salt
4 large eggs
1 1/2 cups sugar
Zest of 1 medium lemon
Pinch of salt
1/2 cup fresh lemon juice (from about 4 medium lemons)
Powdered sugar (for topping)

Steps:

  • Preheat oven to 350°F. Line a 9x9 or an 8x8 pan with foil and spray with nonstick cooking spray.
  • Make the crust by creaming the butter with a hand or a stand mixer (fitted with the paddle attachment) until smooth. Add powdered sugar, flour, and salt and mix slowly until the mixture is crumbly but sticks together when you press it between your fingers. Press the crust into the bottom of the prepared pan. Bake for about 13 minutes, or until it just starts to get a light golden brown around the edges.
  • While the crust is baking, whisk the eggs until beaten. Whisk in the sugar, lemon zest, salt, and lemon juice. Pour over hot crust, then continue to bake for 15-18 minutes, or until the mixture is no longer liquid in the center and it's lightly golden brown on top.
  • Cool completely before removing from pan. Remove foil, then dust with powdered sugar. Slice and serve, dusting with more powdered sugar as desired.

1 cup butter (melted and cooled)
1/2 cup pecans (finely chopped or food processor processed )
1/4 cup granulated white sugar
16 ounces cream cheese (softened to room temperature)
1 cup powdered sugar (sifted)
2 tablespoons fresh squeezed lemon juice
6.8 ounces instant lemon pudding mix (2 3.4-ounce packages)
2 cups milk
8 ounces whipped topping (Cool Whip or you can substitute the same amount whipped cream)
Zest of 1/2 a lemon
Optional: Sprinkle finely chopped pecans on top
Optional: Lemon quarter slices to garnish the top

Steps:

  • Preheat oven to 350 degrees F.
  • In a large mixing bowl, combine flour, melted and cooled butter, finely ground pecans and 1/4 cup sugar. Press into the bottom of a 9 x 13 inch baking pan. Bake 20-25 minutes (25 mins works best for me) until golden brown. Allow to cool completely before adding any layers.
  • Using a hand electric mixer, combine cream cheese, 1 cup powdered sugar, 1-2 tablespoons fresh squeezed lemon juice (2 tablespoons works best for me). Mixture should be even and smooth. Spread evenly on top of the baked and cooled bottom pecan crust.
  • In a large mixing bowl, whisk milk and instant lemon pudding mix until set. It may take 4-5 minutes to thicken. Spread evenly on top of the lemon cream cheese mixture.
  • Spread thawed whipped topping on top of the pudding layer. Add lemon zest and optional finely chopped pecans. Refrigerate for 1 hour to set before serving. Optionally, you can freeze the Lemon Lush overnight for more defined slices. Do not freeze if you substitute homemade whipped cream because it might not hold up like frozen whipped topping like Cool Whip. Enjoy!

1 cup flour
Confectioners' sugar, for dusting

Steps:

  • Preheat the oven to 350 degrees F.
  • For the crust, cream the butter and sugar until light in the bowl of an electric mixer fitted with the paddle attachment. Combine the flour and salt and, with the mixer on low, add to the butter until just mixed. Dump the dough onto a well-floured board and gather into a ball. Flatten the dough with floured hands and press it into a 9 by 13 by 2-inch baking sheet, building up a 1/2-inch edge on all sides. Chill.

1/2 tsp salt

7 large eggs
1 cup (240ml) fresh lemon juice (4-5 lemons)

Steps:

  • Preheat oven to 350 degrees and line the bottom and sides of a 9×13 baking pan with parchment paper that sticks up above the sides of the pan, so that you can remove the bars later for easy cutting. Set pan aside.
  • To make the crust, combine the flour, powdered sugar and salt in a medium bowl.
  • Add the melted butter and vanilla extract and stir to combine completely.
  • Crumble and distribute over the bottom of the pan and press evenly into the bottom so that it's even.

Scrape the bowl and paddle again with a rubber spatula to make sure the egg yolk is thoroughly incorporated.
  • In a medium bowl, sift together the all-purpose flour, cake flour, baking powder, and salt. On low speed (or with the wooden spoon), slowly add the flour mixture to the butter-sugar mixture and then mix for about 15 seconds, or until the flour mixture is totally incorporated and the dough is evenly mixed. Stop the mixer and scrape the bowl again to make sure all of flour mixture is thoroughly incorporated.
  • Scrape the dough out onto a sheet of plastic wrap, and wrap the dough in the plastic wrap, pressing down to form a disk 6 to 7 inches in diameter and 1 inch thick. Refrigerate the dough for about 30 minutes, or until it has firmed up but is still somewhat pliable. (At this point, the dough can be stored in refrigerator for up to 5 days or in the freezer for up to 1 month. If the dough is frozen, thaw overnight in the refrigerator, then let sit at room temperature for about 20 minutes before using.)
  • While the dough is chilling, make the lemon curd. In a medium nonreactive saucepan, combine the lemon juice, butter, and cream, place over medium-high heat, and heat to just below a boil. Meanwhile, in a medium heatproof bowl, whisk together the eggs and egg yolks until blended, then slowly whisk in the sugar until combined. Remove the lemon juice mixture from the heat and gradually whisk a little of it into the sugar-egg mixture. Continue whisking the hot liquid into the eggs, a little at a time, until all of it has been incorporated. (This is tempering, described on page 000.)
