3 tilapia (scaled and cleaned)
2 Tbsp. Lea & Perrins Lemon and Dill 5-minute Marinade
1 tsp rock salt
1 chopped red chili
1 sliced onion
1 tsp chopped ginger
3 sliced kamias
1/2 tsp pepper
3 quartered tomatoes
1/2 tsp salt
3 Tbsp. Lea & Perrins Worcestershire Sauce
Banana leaves

Steps:

  • Season fish with salt. Place each fish in three layers of banana leaves.
  • Top each fish with slices of onion, kamias and tomatoes.
  • In a bowl, mix Lea & Perrins Worcestershire Sauce and Lea & Perrins Lemon and Dill 5-minute Marinade, chili, ginger, salt and pepper.
  • Pour Lea & Perrins Worcestershire Sauce mixture over each fish and fold banana leaves to wrap fish.
  • Cook over hot charcoal for 15 minutes. Serves 3.

1/4 cup lemon juice
1/2 cup extra virgin olive oil
1 tablespoon fresh thyme leave, minced
salt, to taste
pepper, to taste
4 (8 ounce) red snapper or 4 (8 ounce) halibut fillets
16 lemon slices
8 sprigs fresh thyme
4 banana leaves, washed, soaked in water and cut into 10-by-12 inch rectangles
1 tablespoon extra virgin olive oil
1 garlic clove, minced
1 cup onion, sliced into thin strips
1 cup yellow pepper, sliced into thin strips
1 cup carrot, sliced into thin strips
1 cup tomatoes, sliced thinly

Steps:

  • Heat grill to medium.
  • In a small bowl, whisk the lemon juice with ½ cup olive; add thyme, salt and pepper.
  • Brush both sides of fillets generously with lemon mixture and place each in a banana leaf.
  • Place 4 lemon slices and a sprig of thyme on each fillet.
  • With the short side of the leaf facing you, fold bottom edge over fish; fold sides over fish, then fold package away from you to envelop the fish.
  • Secure each packet with 3 wet toothpicks or tie like a girtbox with a wet piece of string.
  • Cook the fish packets on grill, about 6 minutes per side ( the leaves will brown, which is OK).
  • While the fish grills, sauté garlic in 1 Tbs olive oil over medium-high heat about 1 minute.
  • Add the onions through tomatoes and sauté about 5 minutes until vegetables are tender; season with salt and pepper.
  • To serve, put a fish packet in the center of each plate, open the leaf and spoon vegetables around fillet.

2 pounds snapper filets
Salt and pepper
1 Bali lemon, or two regular limes
Betutu spice, recipe follows
Banana leaves, or tin foil
3 salam leaves, or substitute bay leaves
2 sliced green tomatoes
2 kaffir lime leaves
1/4 sweet basil leaves
1/2 cup peeled shallots
1/4 cup peeled garlic
2 tablespoons fresh turmeric
2 tablespoons fresh peeled ginger
2 tablespoons galangal
3 pieces lemongrass
2 tablespoons fresh hot chili peppers seeded and cleaned
2 tablespoons palm sugar chopped
4 tablespoons shrimp paste
1/4 cup coconut oil, for frying

Steps:

  • Tamarind water, to soften, or substitute with the juice of 2 lemons
  • In a bowl season the fish with salt, pepper, lime juice, and betutu paste.
  • On a sheet tray, lay down the banana leaf. Place a salam leaf on the banana leaf. Place the fish on the middle of the banana leaf over the salam leaf. Place sliced green tomatoes, lime leaf, sweet basil, and tamarind water on the fish. Season with salt and pepper.
  • Wrap the fish folding both ends together and secure with a bamboo skewer. Grill until cooked, approximately 4 to 5 minutes per side depending on the thickness of the fillets.
  • Grind shallots, garlic, tumeric, ginger, galangal, lemongrass, chili peppers, palm sugar, and shrimp paste in a food processor. Saute paste with coconut oil.

  • To Prep Cut 100g of barramundi fillet into small pieces and put in a food processor or use a mortar and pestle to make fish paste. Put coconut cream, fish sauce, rice flour, red curry paste, turmeric powder and crack egg into the bowl. Using a large wooden spoon, mix all ingredients together until combined then, add fish paste into the bowl. Keep stirring fish paste for about 2-3 mins until the fish paste is a bit sticky. Add 300g medium size cut barramundi into the bowl then, add all basil leaves and 2 julienned kaffir lime leaves. Gently mix through. Prepare banana leaf by putting one banana leaf onto the kitchen bench (shiny side down) then put another sheet of banana leaf on top (if you have small pieces of banana leaf you can put 3-4 pieces on top of each other).
  • To Cook Put fish curry in the center of the banana leaf then fold the leaf to cover the fish curry, using wooden toothpicks to make banana leaf parcels. Continue until all of the fish curry is finished. Place the banana leaf parcels on BBQ grill, cook for 20-25 mins or until the fish mixture is cooked. Before eating, open banana parcel and garnish with julienned kaffir lime leaves and sliced chillies (if you like). Enjoy Grilled Barramundi Curry in Banana Leaf.
  • Note If you don’t have banana leaf you can put the fish mixture onto baking paper and wrap it with aluminum foil then prepare with the same method above (but you will lose the banana leaf smoked flavor in your fish curry).

Even though your fishmonger gutted the fish for you - here's an important tip. The lining of the gut area is very fishy tasting and smelling. Usually, the thin membrane is still attached. Just use the tip of the knife to scrape the tough membrane lining and pull it out. Sometimes the color is white, sometimes it is pinkish. After cleaning, with sharp knife, slash fish diagonally 3 times per side to allow it to cook more evenly (which I totally forgot to do in my photo).
  • Season & stuff the whole fish: Season fish inside with sea salt and freshly ground pepper. Stuff with fresh herbs - stems and all. Use twine to tie the fish so that the herbs don't fall out during grilling. Brush both sides of fish with cooking oil. Season outside with sea salt and pepper.
