GRILLED LEMON YOGURT CHICKEN

Grilled Lemon Yogurt Chicken image

There is something special about what yogurt does to chicken in its smoky, sizzling time over charcoal. It imparts a tangy flavor that lifts all the other flavorings. It tenderizes slightly, without turning the meat into mush. It grills to a caramelized dark brown without tasting burnt.

Provided by Chef John

Categories     Meat and Poultry Recipes     Chicken

Time 3h50m

Yield 6

Number Of Ingredients 14

½ cup plain low-fat Greek yogurt
½ lemon, juiced
1 tablespoon lemon zest
1 tablespoon olive oil
4 cloves garlic, crushed
1 tablespoon paprika
1 teaspoon herbes de Provence
1 teaspoon salt
1 teaspoon ground black pepper
1 (5 pound) whole chicken, cut into 8 pieces
½ cup plain low-fat Greek yogurt
1 tablespoon lemon juice
1 teaspoon harissa
1 pinch salt

Steps:

  • Whisk together the 1/2 cup yogurt, the juice from 1/2 lemon, lemon zest, olive oil, garlic, paprika, herbes de Provence, 1 teaspoon salt, and black pepper in a bowl. Pour into a resealable plastic bag. Add chicken, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in refrigerator for at least 3 hours.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Combine 1/2 cup yogurt, 1 tablespoon lemon juice, and harissa in a small bowl. Set aside.
  • Remove chicken from bag and transfer to a plate or baking sheet lined with paper towels. Pat chicken pieces dry with more paper towels. Season with pinch of salt.
  • Grill chicken, skin-side down, on the preheated grill for 2 minutes. Turn each piece and move to indirect heat.
  • Grill, turning often, with lid down until well-browned and meat is no longer pink in the center, 30 to 35 minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 165 degrees F (74 degrees C).
  • Serve chicken with the yogurt harissa mixture on the side.

LEMON AND THYME GRILLED CHICKEN BREASTS

Lemon and Thyme Grilled Chicken Breasts image

These classic herb and lemon-seasoned chicken breasts will win over fans, especially when cooked over charcoal to give them the deepest, smokiest taste. For dark meat lovers, this recipe will also work with boneless, skinless thighs, though you might have to add a minute or so to the cooking time. Or use a combination of breasts and thighs and make everyone happy.

Categories     barbecues, main course

Time 1h30m

Yield 4 servings

Number Of Ingredients 8

4 (6-ounce) boneless, skinless chicken breasts
1 1/2 teaspoons kosher salt
1 teaspoon black pepper
2 tablespoons chopped thyme leaves
4 garlic cloves, crushed and peeled
2 lemons, as needed
2 tablespoons extra-virgin olive oil, more as needed
Torn basil or mint leaves, as needed

Steps:

  • Place chicken breasts between two sheets of parchment or plastic wrap. Using a mallet or rolling pin, pound each to an even thickness of 1/2 inch. Do not make them any thinner or they could dry out.
  • Place chicken in a large bowl and toss with salt, pepper, thyme, garlic and the zest and juice of 1 lemon. Mix in olive oil. Cover and refrigerate 1 to 2 hours. Remove chicken from fridge while you heat the grill.
  • Light the grill, building a hot fire, or heat your gas grill to high. Once grill is fully heated, brush breasts lightly with olive oil and place chicken on the grill. Cook until undersides are browned and chicken is about halfway cooked, 3 to 5 minutes. Flip breasts and grill until cooked through, 3 to 5 minutes more.
  • Transfer chicken to a platter. Drizzle with oil and garnish with additional lemon juice, olive oil and basil or mint leaves.

This is a copycat recipe of Applebee's Cedar Grilled Lemon Chicken. It's incredibly delicious and everyone who has tried this recipe swears by it! It's my favorite Applebee's chicken dish to make and eat!

Provided by DWELL by Michelle

Categories     Main Course

Time 1h20m

Number Of Ingredients 7

4 boneless skinless chicken breasts
3 tbsp lemon juice
1 tbsp olive oil
salt and pepper (, to taste)
1 tsp garlic powder
cedar plank
water

Steps:

  • In a large bowl, mix together the lemon juice, olive oil, salt, pepper, and garlic powder. Add in the chicken breasts and make sure that they are well-coated in the marinade mixture. Cover with a plastic wrap and refrigerate for at least 30 minutes, or overnight.
  • About 1-2 hours before grilling, soak the cedar plank in water (or add a splash of apple juice for extra flavors).
  • Preheat your grill on medium heat and lightly oil the grill grate. Once preheated, place the soaked cedar plank on the grate over direct heat. Place the marinated chicken breasts directly on the cedar plank.
  • Close the grill lid and cook for 10 minutes, turning the chicken breast every 2.5 minutes. Don't be nervous if the cedar planks smoke while the chicken is cooking, this is good! Just close the grill lid as much as possible, and only open when you need to check and flip the chicken breasts.
  • Right before serving, remove the cedar plank from underneath the chicken and grill the chicken breasts directly on the grill grate on high heat until grill marks appear.
  • Your Cedar Grilled Lemon Chicken is ready to serve. Slice the chicken and pair with your sides of choice. ENJOY!
