Steps:
- Pour the juice of 5 lemons into a glass bowl; whisk in the sea salt and garlic. Add the catfish fillets, cover, and marinate in the refrigerator 1 to 4 hours.
- Preheat the oven's broiler for 400 degrees F (205 degrees C) and set the oven rack to the lowest position.
- Remove the catfish fillets from the marinade, and shake off excess; discard the remaining marinade. Place the fillets on a broiling pan; sprinkle with the lemon pepper seasoning, garlic and herb seasoning, and Creole seasoning. Arrange the lemon slices over the fillets.
- Broil in the preheated oven until the fish flakes easily with a fork, 12 to 15 minutes. You may wish to turn the broiler on fully for the last few minutes if you like the edges of the fish blackened. Sprinkle the fillets with shredded carrot and parsley to garnish. Serve with lemon wedges on the side.

Steps:
- 1. Prepare the relish first and set it aside while you prepare the fish. Combine all relish ingredients in a small bowl and stir occasionally. Prepare the grill. Rinse fish; pat dry with paper towels. Combine lemon juice, butter and garlic in a bowl; mix well. Coat both sides of filets lightly with some of the butter mixture; sprinkle with lemon pepper.
- 2. Place fish in a greased grill basket, tucking under any thin edges. Or, grill fish directly on the greased rack of the grill.
- 3. For a charcoal grill, place grill basket or fish on the rack of an uncovered grill 4 to 6 inches above a solid bed of hot coals (you can hold your hand at grill level only 2 to 3 seconds) and grill until fish is barely opaque and flakes easily when tested with a fork (allow 4 to 6 minutes per 1/2-inch thickness of fish), turning basket once halfway through grilling, basting with remaining butter mixture.
- 4. For a gas grill, preheat grill on high for 10 to 15 minutes. Reduce heat to medium. Place grill basket on grill rack over heat. Cover and grill as above.

- Prep. For the Blackening Rub, combine the smoked paprika, sweet paprika, garlic powder, onion powder, pepper, cayenne, thyme, and oregano in a small bowl and blend well.
- For the fish, season both sides of the catfish fillets with kosher salt and the blackening seasoning. Slice the lemon in half. Cut each orange into 4 thick slices.
- Fire up. Prepare a grill for indirect cooking by placing a chimney full of pre-heated charcoal briquets on one side of the grill’s charcoal grate in order to create direct and indirect cooking zones. Adjust the grill vents to bring the temperature to about 400°F. Add 2 to 3 chunks of your favorite smoking wood to the charcoal for flavor. On a gas grill, adjust the temperature knobs so that one half of the grill is off and the other half is heated enough to maintain a temperature of approximately 400°F.
- Cook. Place the halved lemon, cut sides down, on the hot side of the grill. Grill the lemon halves until the flesh is lightly charred and softened, approximately 4 to 5 minutes. Remove the charred lemon halves from the grill and set them aside until ready to use for the cream sauce. If you’re using the optional lemon for a garnish, cut it into 1/4-inch slices then grill the slices until they are lightly charred, 2 to 3 minutes per side.

- Make sauce by combining wine, lemon juice, shallot, garlic, vinegar, and thyme in a saucepan. Bring to boil, reduce heat to med-high, and simmer until reduced to 1/4 cup...about 10 minutes. Reduce to med-low and half butter, whisking until just melted, then add rest of butter.Whisk in lemon zest, salt and pepper, and set aside.
- For the rice, melt butter over medium heat in a large sauce pan. Add onion, celery and garlic and cook about 3 minutes until softened. Stir in green onions, tomatoes, parsley, and rice and cook 2 minutes stirring. Stir n 1/4 cup water, chicken broth, salt and bay leaves, then bring to boil. Reduce heat, cover, and simmer until liquid is absorbed and rice is tender, about 20 minutes. Remove sauce pan from heat and let stand. (Don't worry if very bottom layer of rice is a little burned or crusty...this is natural and also delicious if you can scrape it up!
- For fish, preheat grill and grease with olive oil. (Tip...spray or brush olive oil directly on fish, instead of on grill, to get maximum effect with minimum use of oil) Sprinkle Creole seasoning liberally over the fish so that it has a nice, redish coat. Grill fillets over medium-high heat, until firm and opaque throughout, about 2.5 minutes per side. Grill lemon wedges on medium-high about 30 seconds per side for looks (optional).
- Reheat sauce over low heat. Spoon rice onto plates (removing bay leaves if you see them), place a fillet on top of rice, and spread with sauce or serve sauce on the side. Garnish with lemon wedges, parsley and/or rosemary.
