This is a very elegant dish good for a nice simple meal. Tasty and pretty enough for company, but my husband and I enjoy it as a nice weekend meal. The brining of the shrimp takes the longest, but is very easy and improves the taste and texture of the shrimp.

¾ cup kosher salt
1 gallon cold water
2 pounds peeled and deveined large shrimp (21 to 30 per pound)
1 (16 ounce) package angel hair pasta
¼ cup unsalted butter
¼ cup olive oil
3 tablespoons minced garlic
⅓ cup white wine
¼ cup lemon juice
½ teaspoon crushed red pepper flakes
1 teaspoon freshly ground black pepper
½ cup chopped fresh parsley
1 tablespoon lemon zest

Steps:

  • Dissolve the kosher salt in 1 gallon of water in a large pot. Add the shrimp, and refrigerate 2 to 4 hours. Drain and pat shrimp dry with paper towels.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the angel hair pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through but is still firm to the bite, 4 to 5 minutes. Drain well in a colander set in the sink.
  • Meanwhile, melt the butter and olive oil in a large skillet over medium-low heat. Stir in the garlic, and cook until softened, 3 to 4 minutes. Add the shrimp, white wine, lemon juice, and red pepper flakes. Cook and stir until the shrimp is no longer translucent in the center, about 6 minutes. Stir in the black pepper, parsley, and lemon zest before tossing with the angel hair pasta.

2 pounds (17 to 21 count) shrimp, peeled and deveined
Good olive oil
Kosher salt and freshly ground black pepper
1 pound angel hair pasta
4 tablespoons (1/2 stick) unsalted butter, melted
Zest and juice of 2 lemons

Steps:

  • Preheat the oven to 400 degrees F. Place the shrimp on a sheet pan with 1 tablespoon olive oil, 1/2 teaspoon salt and 1/2 teaspoon pepper.Toss well, spread them in one layer and roast for 6 to 8 minutes, just until they're pink and cooked through.
  • Meanwhile, drizzle some olive oil in a large pot of boiling salted water, add the angel hair and cook until al dente, about 3 minutes. Drain the pasta, reserving some of the cooking liquid. Quickly toss the angel hair with the melted butter, 1/4 cup olive oil, the lemon zest, lemon juice, 2 teaspoons salt, 1 teaspoon pepper and about 1/2 cup of the reserved cooking liquid. Add the shrimp and serve hot.

Steps:

  • Make the shrimp: In a medium saute pan, heat the olive oil over medium-high heat. Season the shrimp with the salt and pepper; add to the preheated pan in a single layer. Cook for 2 to 3 minutes per side, or until pink and cooked through. Set aside.
  • Make the pasta: Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally to prevent sticking, about 8 minutes. Drain, reserving 1 cup pasta water. Meanwhile, whisk the olive oil, parmesan and lemon zest and juice in a large bowl to blend.
  • Toss the pasta with the lemon sauce, shrimp and the reserved cooking liquid, adding it 1/4 cup at a time as needed to moisten. Season with the salt and pepper; stir in the basil. Garnish with the fried capers and more parmesan, if desired.

24 medium shrimp, peeled and deveined
1 lb linguine
3 tablespoons extra virgin olive oil
3 tablespoons real butter (unsalted)
1 tablespoon italian seasoning
3 fresh garlic cloves, finely chopped
salt
fresh coarse ground black pepper or lemon pepper seasoning
2 tablespoons sesame seeds (optional)
1 fresh lemon
lemon zest

Steps:

  • Boil pasta in salted water; remove from heat just before pasta reaches al dente.
  • Heat skillet on medium; add olive oil & garlic, When heated thru add shrimp and butter - cook for 2 minutes and add lemon zest. Gently toss shrimp with garlic until shrimp turns pink. Remove from heat.
  • Drain pasta; return to pan.

1 lb. medium/large shrimp, peeled/deveined (tail can be left on or off)
1 tablespoon olive oil
3 teaspoons minced garlic, divided

zest of 2 lemons (about 1 tablespoon)
⅓ cup lemon juice
1 cup chicken or vegetable broth
½ cup half and half (or heavy cream)
Parmesan cheese, for sprinkling

Steps:

  • In a large pot of boiling salted water, cook the pasta according to package directions. Reserve 1 cup pasta water; drain pasta and return to pot.
  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 teaspoon of the garlic along with the red pepper flakes and the shrimp and cook till the shrimp turn opaque, about 3 -5 minutes. Cooking time will vary based on the size of shrimp and the pan. Remove shrimp to a plate.
  • Add broth, remaining 2 teaspoons of garlic, along with the lemon juice into the skillet. Using a whisk, deglaze the pan until any brown bits are removed from the bottom. Let the sauce cook on a gentle simmer for 5 minutes on medium heat. Add in the butter, stirring until it melts. Then, add the lemon zest and the half and half. Let the sauce come to a gentle simmer, then add the pasta and shrimp into the skillet. Toss to combine and coat. Taste for seasonings, adjust salt and pepper as desired. Add pasta water if needed to help thin sauce to coat pasta. Sprinkle with parmesan cheese and chopped basil. Serve immediately.

I was in the mood for shrimp so I choose the Lemon Garlic Linguine flavor. I also bought the Roasted Garlic Herb Fettuccine (Recipe: Ginger Beef Stir Fry with Roasted Garlic Herb Pasta). 1 large yellow onion, chopped

2 tbsp all-purpose flour
½ tsp salt
½ tsp black pepper (crushed)
1 tsp granulated garlic
1 tsp lemon pepper

1 lb linguini

1 lemon
2 tbsp olive oil
½ cup white wine
1 ½ cup chicken broth
½ tsp red pepper flake

Steps:

  • Put a large pot of salted water to boil while you begin to prepare your shrimp.
  • To begin preparing your shrimp, whisk together the flour, salt, black pepper, granulated garlic, and lemon pepper in a bowl. Then toss your shrimp in this mixture until fully coated.
  • In a large skillet, heat up the olive oil on high heat. Once hot, carefully lay the shrimp in and flip when they develop a crust and are golden brown. When the second side becomes golden brown, remove the shrimp from the skillet and set aside on plate with paper towels to allow them to drain off and remain crisp.
  • After the shrimp is finished cooking, I take the skillet off of the burner to cool down a bit while I put the linguini to boil. Typically, the linguini takes about the same length of time to become al dente as the amount of time it takes to make the sauce (about 12 minutes). Keep your strainer ready either way.
  • Put the skillet back on the burner at medium heat and add in more olive oil. Begin cooking your garlic in the olive oil just until it starts to become golden. Then add the red pepper flake, lemon pepper, black pepper, and salt to the pan and stir in with the garlic.
  • Carefully pour in the white wine and stir until the the alcohol is fully cooked out. Next, add in your chicken broth, the juice of a lemon and the butter. Stir and allow the sauce to come to a low simmer and reduce slightly.
  • When the linguini is al dente, strain it and add into the skillet with the sauce. Carefully stir the linguini into the sauce to fully coat it. Right before serving, toss the shrimp in the pasta and sauce, dish onto a plate or bowl and garnish with chopped parsley.

12 ounces thin spaghetti (or linguini)
3 tablespoons olive oil
1 1/2 pounds large shrimp (peeled and deveined )
Dash of salt
Dash of freshly ground black pepper
2 cloves garlic (minced)
1/4 teaspoon hot red pepper flakes (crushed, or to taste)
1 1/2 tablespoons freshly grated lemon zest
1/4 cup white wine
1/4 cup fresh lemon juice
1/2 cup Parmesan cheese (freshly grated)
Optional: 3 tablespoons pine nuts (toasted)

Steps:

  • Gather the ingredients.
  • Bring a large pot of salted water to a boil. Add the pasta to the boiling water and cook according to the package directions, or until al dente . Before draining, reserve 1/3 cup of pasta cooking water.
  • While the pasta is cooking, heat 2 tablespoons of the oil in a large skillet over medium heat. Add the shrimp in a single layer. Sprinkle with salt and pepper.
  • Cook for 2 minutes, turn the shrimp over, add the remaining tablespoon of oil, the garlic, and red pepper flakes. Stir constantly for 1 to 2 minutes.
  • Add the lemon zest and white wine to the shrimp. Stir and let the wine reduce slightly. Stir in the lemon juice.
  • Ladle the pasta cooking water into a large serving bowl. Drain the pasta and add to the bowl.
  • Pour the shrimp with the sauce over the pasta.
  • Add the Parmesan and pine nuts, if using, and toss to mix and coat.
  • Serve with a drizzle of olive oil and extra red pepper flakes on each serving, if desired.

  • In a medium-sized bowl, toss shrimp with 1 tsp olive oil, 1 tbsp minced garlic, 1/2 tsp kosher salt, and 1/4 tsp red pepper flakes. Increase the pepper flakes to 1/2 tsp if you like things spicy. Cover and refrigerate for about 10 minutes.
  • Boil pasta in salted water according to package direction, under cooking by about a minute. Reserve 1/2 cup of cooking water. Drain and set aside.
  • Coat a very large skillet in cooking spray. Saute shrimp over medium-high heat until just cooked through, about a minute or two a side depending on the size of your shrimp. Transfer cooked shrimp to a bowl and squeeze the juice of 1/2 a lemon over them. Set aside.
  • Lower the heat in the same skillet to medium and add in 1 tsp olive oil. Add asparagus to the skillet along with 1 tsp italian seasoning, 1 tbsp minced garlic, and 1/4 tsp salt. Saute until just softened, about 5 minutes. If the browned bits on on the bottom on the skillet start to get too dark, add in a few splashes of reserved pasta water to scrape them up.
