LEMON SANDWICH COOKIE WITH LEMON CREAM FILLING

If you're a fan of lemon, you're going to adore these Lemon Sandwich Cookies with Lemon Cream Filling. They are bursting with bright, sweet, and creamy lemon flavor! You can make them any time of the year, but I especially like them as a spring or summer treat.

1 Recipe Thin Lemon Cookies (64 Cookies) (Recipe Linked Below)
4 ounces cream cheese (softened)
1 cup confectioners' sugar
1 teaspoon lemon zest
1 teaspoon vanilla extract
1/4 cup lemon juice
1 cup heavy whipping cream

Steps:

  • Begin by preparing the Thin Lemon Cookies. The recipe is linked in the notes below.
  • As the cookies cool, prepare the lemon cream filling.
  • Beat the cream cheese with an electric mixer until smooth. (Either a stand or hand mixer will work. I recommend using the whisk attachment.)
  • Then, beat in the confectioners' sugar, lemon zest, vanilla extract, and lemon juice. Next, slowly add the heavy whipping cream, beating until stiff peaks form.
  • Add the filling to a piping bag fitted with a round tip (or a plastic bag with a corner snipped off). Place 2-3 teaspoons of filling on the bottom of a thin lemon cookie and top with another thin lemon cookie to sandwich the cream. Repeat with remaining cookies.
  • Store the cookies in an airtight container in a chilled location. The cookies can also be frozen.

1 2/3 cups all-purpose flour
2/3 cup granulated sugar
1 1/2 teaspoons cornstarch
1 teaspoon grated lemon peel
1/4 teaspoon salt
1 egg, beaten
3 tablespoons lemon juice
1 tablespoon butter, melted

Steps:

  • In a small mixing bowl, cream butter and confectioners' sugar.
  • Beat in vanilla.
  • Gradually add flour.
  • Cover and refrigerate for 30 minutes or until easy to handle.
  • Preheat oven to 350 degrees.
  • Roll into 1-in. balls.
  • Place 1 in. apart on ungreased baking sheets.
  • Using the end of a wooden spoon handle, make an indentation in the center of each.
  • Bake for 12-14 minutes or until lightly browned.
  • Remove to wire racks to cool.
  • Combine the sugar, cornstarch, lemon peel and salt in a saucepan.
  • Stir in egg, lemon juice and butter until smooth.
  • Cook over medium-high heat until thickened.
  • Reduce heat; cook and stir 2 minutes longer.
  • Cool and spoon 1/2 teaspoon into each cookie.

1 cup white sugar
½ cup butter, softened
2 tablespoons fresh lemon zest
2 eggs
1 tablespoon fresh lemon juice
½ teaspoon vanilla extract
1 ¾ cups all-purpose flour
1 ½ teaspoons baking powder
¼ teaspoon salt
¼ cup powdered sugar

Steps:

  • Cream sugar, butter, and lemon zest together in a large bowl using an electric mixer until light and fluffy, about 3 minutes.
  • Combine eggs, lemon juice, and vanilla extract in a cup; mix using a fork until combined. Beat into egg mixture slowly on low speed.
  • Whisk flour, baking powder, and salt together in a medium bowl. Add to egg mixture slowly on low speed until just combined. Do not overbeat; dough will be sticky. Cover and chill dough in the refrigerator for 30 minutes; it will still be sticky after chilling.
  • Preheat the oven to 350 degrees F (175 degrees C). Line 2 large baking sheets with parchment paper.
  • Form dough into balls using a cookie scoop or tablespoon and roll each in powdered sugar. Place onto the prepared baking sheets, spacing 2 inches apart. Lightly smash each ball down using your hand.
  • Bake in the preheated oven until the middle of each cookie is just barely set, 11 to 12 minutes. Let cool on a wire rack completely before storing in an airtight container.

8 ounces unsalted butter, (softened (16 tablespoons or 226g))
1 large egg yolk, (room temperature)
1 teaspoon fresh lemon juice
⅛ teaspoon salt
1 teaspoon vanilla extract
2 ⅔ cups all-purpose flour ((337g))
½ cup unsalted butter softened ((4 ounces or 113g))
1 ⅔ cups powdered sugar plus more for dusting ((190g))
½ teaspoon vanilla extract
finely grated zest of 1 lemon
1 tablespoon fresh lemon juice

  • Preheat oven to 350°F.

The key to success with these cookies is chilling the dough before rolling it into balls. This helps slow down the spreading, giving the tops a chance to crinkle and crack during baking. Tossing the chilled dough balls in granulated sugar before coating in confectioners' sugar also helps the coating adhere, so the cookies are sweet and crunchy on the outside and soft and chewy inside.

2 cups all-purpose flour (see Cook's Note)
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 1/2 cups granulated sugar
1 stick (8 tablespoons) unsalted butter, at room temperature
1 large egg
2 tablespoons finely grated lemon zest, plus 1/4 cup lemon juice (about 2 medium lemons)
6 to 8 drops yellow food coloring, optional (for brighter yellow color)
1/2 cup confectioners' sugar

Steps:

  • Whisk together the flour, baking powder and salt in a medium bowl.
  • Beat 1 cup of the granulated sugar and the butter in a large bowl with an electric mixer on medium-high speed until light and fluffy, scraping the sides of the bowl as needed, about 2 minutes.
  • Add the egg and beat until incorporated. Add the lemon zest, lemon juice and food coloring if using and beat until incorporated. Reduce the mixer speed to low and add the flour mixture, beating until just combined. Cover the bowl and refrigerate until firm, at least 2 hours and up to overnight.
  • Line 2 baking sheets with parchment. Put the confectioners' sugar in a small bowl and the remaining 1/2 cup granulated sugar in another small bowl.   • Position the oven racks in the top and bottom thirds of the oven and preheat to 350 degrees F. Bake until the cookies spread, the tops crack and the edges are firm, 14 to 16 minutes. Let cool on the baking sheets for 5 minutes, then transfer the cookies to a wire rack to cool completely. Store in an airtight container at room temperature for up to 3 days.

Steps:

  • Form sandwiches: Place about 1 teaspoon Creamy Lemon Filling between two cookies, sugared sides facing out; squeeze gently.
