200g self-raising flour
1 tsp baking powder
1 tbsp golden caster sugar
½ tsp vanilla extract
200ml milk
3 eggs
25g butter , melted, plus extra for frying
1 lemon , zested
100ml double cream
2 tbsp icing sugar
100g lemon curd
1 lemon , pared zest, plus 1 tbsp juice

Steps:

  • Whisk all of the pancake ingredients together in a large bowl until smooth.
  • Put a small knob of butter in a large non-stick frying pan over a medium-low heat and cook until melted and foaming. Pour 2 tbsp of the mixture into the pan and use the back of the spoon to shape into a 8-9cm round disc. Depending on the size of your pan you may be able to get 2 or 3 pancakes to cook at the same time. Cook for 2-3 mins on the first side, then flip over and cook for another 1 min on the other.
  • Heat oven to its lowest setting. Stack the cooked pancakes on a baking tray and keep them warm in the oven while you cook the rest.
  • Softly beat the double cream with the icing sugar using a whisk, then fold in half of the lemon curd. Mix the remaining curd with enough lemon juice to make it a drizzling consistency.
  • To serve, stack the pancakes with layers of the whipped cream in between them, drizzle with lemon curd, and scatter with lemon zest to serve.

¾ cup cold water or milk
½ teaspoon baking soda
½ cup ricotta cheese
1 tablespoon grated lemon zest (just the yellow part of the skin)
1 tablespoon vegetable oil
1 tablespoon white sugar
1 large egg
⅛ teaspoon vanilla extract
2 tablespoons melted butter
1 tablespoon lemon juice
1 cup self-rising flour
2 tablespoons self-rising flour

Steps:

  • Whisk water and baking soda together in a mixing bowl. Add ricotta cheese, lemon zest, vegetables oil, sugar, egg, and vanilla. Whisk until smooth, breaking up lumps of cheese as you mix. Add melted butter, lemon juice, and 1 cup plus 2 tablespoons self-rising flour. Whisk together, stirring until most of flour disappears into the batter.
  • Let batter sit at room temperature about 15 minutes.
  • Heat lightly greased cast iron skillet or griddle over medium-high heat. Portion out 1/4 cup scoops of batter onto skillet (cook in batches). When bubbles begin to form on the surface and the edges of the pancakes start to look dry (2 to 3 minutes), flip and cook other side until cooked through, 2 to 3 minutes. Transfer to a warm plate.

225g unsalted butter, softened
225g caster sugar
4 eggs
225g self-raising flour
1 lemon, zested
1½ lemons, juiced
85g caster sugar

Steps:

  • Heat the oven to 180C/160C fan/gas 4.
  • Beat together the butter and caster sugar until pale and creamy, then add the eggs, one at a time, slowly mixing through.
  • Sift in the self-raising flour, then add the lemon zest and mix until well combined.
  • Line a loaf tin (8 x 21cm) with greaseproof paper, then spoon in the mixture and level the top with a spoon.
  • Bake for 45-50 mins until a thin skewer inserted into the centre of the cake comes out clean.
  • While the cake is cooling in its tin, mix together the lemons juice and caster sugar to make the drizzle.
  • Prick the warm cake all over with a skewer or fork, then pour over the drizzle - the juice will sink in and the sugar will form a lovely, crisp topping.
  • Leave in the tin until completely cool, then remove and serve. Will keep in an airtight container for 3-4 days, or freeze for up to 1 month.

Sunny's Easy Baked and Loaded Pancake with Lemon Maple Glaze image

3 strips bacon
1 1/3 cup store-bought pancake mix (that requires only water)
Zest of 1 lemon
1 tablespoon salted butter
1/2 cup blueberries
1/3 cup pecan halves, gently crushed in your hand
1/3 cup walnut halves, gently crushed in your hand
2 cups confectioners' sugar
1/4 cup fresh lemon juice
1/4 cup milk
1 teaspoon maple extract

Steps:

  • For the pancake: Lay the bacon side-by-side in a cold 9- or 10-inch oven-safe nonstick saute pan. Place the pan in the cold oven and heat the oven to 350 degrees F. Let the bacon cook until almost cooked through, about 15 minutes, then flip the bacon and return to the oven to finish, about 5 minutes more. Remove bacon to a paper towel-lined plate and place the pan with any leftover bacon fat back in the oven. Raise the temperature to 400 degrees F. Let the bacon cool, then chop.
  • Add the pancake mix, 1 cup water and lemon zest to a large bowl. Stir to distribute the zest and add the amount of water instructed on the packaging. Whisk together and refrigerate until the oven is at temperature.
  • Assemble the remaining ingredients, since everything happens fast once you start. Remove the pan from the oven and add the butter, tilting the pan to coat. Add the bacon, blueberries, pecans and walnuts, then quickly pour over the batter. Return to the oven and bake until cooked through and lightly golden on top, 12 to 15 minutes.
  • For the sauce: Meanwhile, add the confectioners' sugar, lemon juice, milk and maple extract to a small bowl. Whisk until the sugar melts away into the glaze. Drizzle over the finished pancake.

1 tbsp baking powder
1/2 tsp sea salt (finely ground)
3 tbsp chia seeds
1/2 tsp ground ginger
1/2 tsp ground cinnamon
3 tbsp maple syrup
1 1/2 cup oat milk ((or other plant milk of choice))
1 tbsp coconut oil (, melted (or other neutral oil))
1 tsp vanilla extract
1 lemon (zest and juice)
1/2 cup coconut yogurt (, for topping)
maple syrup ( to drizzle)

Steps:

  • In a mixing bowl combine flour, baking powder, sea salt, chia seeds, ginger and cinnamon. Mix to combine.
  • In a separate bowl whisk together maple syrup, oat milk, coconut oil (melted), and vanilla extract. Add the juice and zest of one lemon, and mix again to combine.
  • Pour wet ingredients into dry and whisk until smooth and combined. Then, wait 10 minutes for the chia to absorb and thicken. (While you're waiting, turn stove top to medium-low heat). Optional to season your non-stick skillet with 1/2 tsp coconut oil to stop pancakes from sticking.
  • Transfer batter to a measuring cup with spout (this will make it easier to pour). When pan is hot, pour approx. 1/4 cup batter into the skillet and cook pancake for 2 minutes, or until little bubbles form, flip and cook the second side for 30 seconds. Continue until you've used all your batter. (Makes approx. 16 pancakes)
  • Top pancakes with a dollop of coconut yogurt and drizzle with maple syrup to taste.

  • Pour the wet ingredients into the dry and mix just till combined. (There will be clumps If all the clumps are mixed out, the pancakes will be overmixed and get rubbery.)
  • Heat a skillet over medium heat, don't overheat the pan. Spray with nonstick spray and pour ¼ cup batter in the pan and cook till bubbles appear on the pancake. When the bubbles begin to pop, flip the pancake and cook for 15 to 30 seconds.
  • Serve the pancakes with lemon drizzle and a large spoonful of blueberry compote.

This quick batter cooks into the most tender pancakes for the most comforting breakfast. Milky ricotta and butter, along with tangy buttermilk, lend a soft, sweet creaminess, and well-beaten eggs keep them fluffy and light. Lemon- and vanilla-scented sugar makes the pancakes sweet enough to eat on their own, but they're fun to serve with blueberry syrup or your favorite toppings. If you prefer soufflé-like pancakes, separate the whites from the yolks and beat them to stiff peaks. Mix the yolks in with the wet ingredients, fold the whipped whites in after the dry ingredients are incorporated and cook as directed below.

Steps:

  • Whisk the flour, baking powder and salt in a small bowl. Heat a griddle or large nonstick pan or well-seasoned cast-iron skillet over medium-low.
  • Add the sugar to a large bowl, then finely grate the zest of the lemon directly over the sugar. Using your fingers, gently rub the zest into the sugar. Add the vanilla and whisk to evenly moisten. Add the eggs and whisk until foamy on top, then add the ricotta, buttermilk and butter, and whisk until well blended.   • Preheat the oven to 350 degrees F (180 degrees C). Line a 1-pound loaf tin with parchment paper.
