LEMON TART RECIPE

fully baked tart crust
2 large eggs plus 2 egg yolks ((or 3 whole eggs))
3/4 cup (150 g/5.3 oz) granulated sugar
1 tablespoon lemon zest
1/2 cup (120 ml) freshly squeezed lemon juice (2-3 lemons for both zest and juice)
2 tablespoons heavy cream (, optional)
1/2 cup (1 stick/115 g) unsalted butter, cut into small pieces

Steps:

  • To make the lemon curd: In a medium heatproof bowl, place eggs, sugar, lemon zest, lemon juice, and heavy cream, if using, and whisk to combine. Place the bowl over a saucepan of simmering water (bain-marie). Cook on moderate heat, whisking constantly, until mixture becomes thick (mine was ready in 10 minutes, but it can take up to 20). If you have a thermometer, it should register 170°F/75°C; otherwise, it should coat the back of a wooden spoon and leave a clear pass if you run your finger through it. The curd will thicken more once cooled.
  • Remove from heat and immediately strain mixture through a sieve. Add butter, a few cubes at a time, and whisk until completely melted and incorporated, and mixture is smooth. Take your time with it-the whisking makes for an airy and light texture. Allow to cool to room temperature before filling the tart. (Lemon curd can be kept in an airtight container in the fridge for up to a week, or can be frozen for up to 2 months. To thaw, place overnight in the fridge. Whisk the mixture to smoothen it before using.)
  • Fill the tart shell with lemon curd, then refrigerate for at least 4 hours until chilled. Serve with berries and whipped cream if you like. The tart is rich, so cut your servings small.

12 tablespoons (1 1/2 sticks) unsalted butter, plus more for greasing, at room temperature
1/2 cup sugar
1/2 teaspoon pure vanilla extract
1 3/4 cups all-purpose flour
Pinch salt
4 lemons, at room temperature
1 1/2 cups sugar
1/4 pound (1 stick) unsalted butter, at room temperature
4 extra-large eggs, at room temperature
1/8 teaspoon salt

Steps:

  • Mix the butter and sugar together in the bowl of an electric mixer fitted with a paddle attachment until they are just combined. Add the vanilla. In a medium bowl, sift together the flour and salt, then add them to the butter-and-sugar mixture. Mix on low speed until the dough starts to come together. Dump onto a surface dusted with flour and shape into a flat disk. Press the dough into a 10-inch-round or 9-inch-square false-bottom tart pan, making sure that the finished edge is flat. Chill until firm.
  • Meanwhile, preheat the oven to 350 degrees F.
  • Butter 1 side of a square of aluminum foil to fit inside the chilled tart and place it, buttered side down, on the pastry. Fill with beans or rice. Bake for 20 minutes. Remove the foil and beans, prick the tart all over with the tines of a fork, and bake again for 20 to 25 minutes more, or until lightly browned. Allow to cool to room temperature.
  • Remove the zest of the lemons with a vegetable peeler or zester, being careful to avoid the white pith. Squeeze the lemons to make 1/2 cup of juice and set the juice aside. Put the zest in a food processor fitted with a steel blade. Add the sugar and process for 2 to 3 minutes, until the zest is very finely minced. In the bowl of an electric mixer fitted with a paddle attachment, cream the butter with the sugar and lemon zest. Add the eggs, 1 at a time, and then add the lemon juice and salt. Mix until combined.
  • Pour the mixture into a 2-quart saucepan and cook over low heat, stirring constantly, until thickened, about 10 minutes. The lemon curd will thicken at about 175 degrees F, or just below a simmer. Remove from the heat.
  • Fill the tart shell with warm lemon curd and allow to set at room temperature.

1 egg
1 large lemon, zested and juiced
¼ cup castor sugar or superfine sugar
1 teaspoon cornstarch
2 tablespoons unsalted butter, cubed
3 egg whites
5 tablespoons castor sugar or superfine sugar
3 egg yolks
1 large lemon, zested and juiced
2 tablespoons confectioners' sugar for dusting

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Whisk the egg in a medium saucepan, and mix in the 1 lemon's zest and juice, 1/4 cup sugar and cornstarch. Set over medium heat, and cook stirring constantly until the mixture thickens. Reduce heat to low, and continue whisking for another minute. Remove from the heat and stir in the butter. Divide between four 6 or 8 ounce ramekins. Set aside.
  • In a medium glass or metal bowl, whip egg whites with an electric mixer. When they are able to hold a soft peak, sprinkle in 1 tablespoon of the sugar, and continue mixing until stiff. Whisk the remaining 4 tablespoons of sugar into the egg yolks along with the zest and juice of the remaining lemon. Fold a couple of spoonfuls of the egg whites into the yolks to lighten them up, then fold in the rest of the whites. Spoon into the ramekins over the lemon curd, and run a finger around the inside of each rim.
  • Place the ramekins onto a baking sheet, and place in the preheated oven. Bake for 15 to 17 minutes, until puffed and golden brown. Let cool for about 5 minutes before serving.

1 stick unsalted butter, room temperature
2 tablespoons granulated sugar
1/2 teaspoon kosher salt
1 large egg yolk
1 cup unbleached all-purpose flour, plus more for dusting
4 large eggs, separated
1/3 cup plus 3 tablespoons granulated sugar
1 teaspoon grated lemon zest, plus 1/3 cup fresh juice
Pinch kosher salt
2 tablespoons unsalted butter
Confectioners' sugar, for dusting

Steps:

  • Crust: In the bowl of a stand mixer fitted with the paddle attachment, beat together butter, sugar, and salt on medium-high speed until light and fluffy, 2 to 3 minutes. Beat in egg yolk until smooth. Reduce speed to medium-low and beat in flour until smooth. Shape dough into a flat disk, tightly wrap in plastic, and refrigerate until firm, at least 45 minutes and up to 2 days.
  • Preheat oven to 375°F. Let chilled dough rest at room temperature to warm slightly, about 15 minutes. On a lightly floured surface, roll out dough to an approximate 11-inch round (if dough cracks, press back together and let stand a few minutes to warm and soften more). Transfer to a 9-by-1-inch fluted tart pan with removable bottom, pressing into edges and trimming excess dough. Freeze until firm, about 15 minutes. Place on a rimmed baking sheet, line dough with parchment, and fill with dried beans or pie weights.
  • Bake until dough is set and dry on the bottom, 30 to 35 minutes. Remove parchment and weights and continue baking until golden on the bottom, 5 to 7 minutes more. Let cool completely on a wire rack.
  • Filling: In a medium saucepan, whisk together egg yolks, 1/3 cup granulated sugar, lemon zest and juice, and salt until smooth. Add butter to saucepan. Cook over medium heat, stirring constantly, until mixture is thick enough to coat the back of a wooden spoon, about 5 minutes. Strain through a fine-mesh sieve into a large bowl. Cover surface of curd with plastic wrap to prevent a skin from forming. Refrigerate until cool and set, at least 30 minutes and up to 2 days.
  • In a mixer bowl, whisk egg whites on medium speed until frothy. Increase speed to high and gradually add remaining 3 tablespoons granulated sugar, beating until mixture forms stiff, glossy peaks, 5 to 7 minutes. Stir 1/3 of egg-white mixture into curd to loosen. Gently fold in remaining egg-white mixture just until no streaks remain (do not overmix). Transfer filling to tart shell, gently smoothing top.
  • Bake until puffed and golden brown, 18 to 22 minutes. Let cool completely on a wire rack, about 30 minutes. Carefully remove tart ring and dust with confectioners' sugar to serve.

Steps:

  • Preheat oven to 375 degrees. Make the crust: Whisk together flour, sugar, 1/2 teaspoon salt, and the lemon zest in a large bowl. Cut in butter with a pastry cutter or your fingers until dough begins to hold together.
  • Stir together 1 tablespoon water and vanilla, then mix into dough. Shape dough into a disk, and wrap in plastic wrap. Refrigerate for 30 minutes.
  • Using your fingers, press dough evenly into bottom and up sides of a 9-inch fluted tart pan with a removable bottom. Freeze for 30 minutes.

1 1/4 cups all-purpose flour
1/3 cup granulated sugar
1/2 cup cold butter (, cut into small pieces)
1/4 teaspoon salt
1 1/3 cups granulated sugar
1 tablespoon finely grated lemon zest
4 large eggs ((whole))
4 large egg yolks
2/3 cup fresh lemon juice ((I used organic))
1/4 teaspoon coarse salt
10 tablespoons unsalted butter (, cut into pieces (I used vegan sticks))

Steps:

  • In food processor, pulse the flour, sugar, butter and salt just until moist crumb come together.
  • Transfer dough to a 9-inch round tart pan with a removable bottom; with floured fingers, press evenly into bottom and up side of pan.
  • Prick the dough with a fork. Place in the freezer for 15 minutes (until firm). Freeze until firm, 10 to 15 minutes; prick all over with a fork. Place the pan on a backing sheet and bake for 25-30 minutes until golden. Bake until golden. If dough puffs while baking, gently press with a spoon back into the pan; cool completely.
  • Let cool completely before adding the lemon curd.
  • Using a vegetable peeler, remove the colored zest from the lemons, leaving the white pith and add the zest to your sauce pan.
  • Combine the lemon zest, lemon juice, sugar, and eggs in a small saucepan on medium heat, whisking constantly.
  • Bring the mixture to a simmer, whisking the entire time for at least 10 minutes.
  • Place the diced butter in a medium bowl.
  • Place the pan over medium heat and add in the butter (or vegan butter). Stir until the butter has melted. Keep stirring until the curd is thick enough to coat back of a wooden spoon. Take care not to boil and to whisk very quickly; 5-7 minutes.
  • Spoon out the curd over a fine-mesh sieve into a glass bowl. Be sure to spoon it out a small portion at a time into the sieve. Place plastic wrap over the surface of the curd let the lemon curd cool slightly, then spread it in the prepared tart shell.
  • Chill the tart for at least 1-2 hours, or until the filling is firm. Unmold before serving. Dust with confectioner's sugar.

1/3 cup confectioners' sugar
1 large egg, lightly beaten
1/2 lemon, zest of, grated
1 1/2 cups all-purpose flour, plus more for rolling
6 tablespoons almond flour
1 pinch salt
10 tablespoons sugar
4 large eggs, separated
3 tablespoons all-purpose flour
3 tablespoons fresh lemon juice
3 tablespoons freshly squeezed lime juice
confectioners' sugar, for dusting
3 large eggs
3 large egg yolks
1/2 cup sugar
1/4 cup freshly grated lemon zest (2 to 3 lemons)
1/2 cup fresh lemon juice (3 to 4 lemons)
1 pinch salt
4 tablespoons unsalted butter, softened, cut into pieces

Steps:

  • Lemon Curd (makes 2 cups, only use 1 1/2 cups).
  • In a large heatproof bowl, whisk together the eggs, egg yolks, and sugar.
  • Whisk in the lemon zest, juice, and salt.
  • Place the bowl over a pot of barely simmering water, and gently cook the curd, whisking constantly to avoid scrambling the eggs, until curd thickens enough to coat the back of a spoon, about 10 minutes (or you can cook over direct heat if you are sufficiently skilled).
  • Remove the bowl from the heat, and whisk in the butter.
  • Strain the mixture through a fine sieve, and set the bowl in a large bowl filled with water and ice.
  • Whisk until cool.
  • Cover the curd, and refrigerate until it is thoroughly cold, at least 2 hours.
  • The curd will keep for up to 3 days in the refrigerator.
  • Almond Crust.
  • To make the crust: In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and confectioners' sugar until combined, about 1 minute.
  • Beat in the egg and zest.
  • In a medium bowl, whisk together the all-purpose flour, almond flour, and salt.
  • Add the flour mixture to the butter mixture in two batches, scraping down the sides of the bowl between additions.
  • Mix until dough is smooth.
  • Scrape dough onto a piece of plastic wrap, and form it into a disk.
  • Chill for at least 1 hour and up to 3 days.
  • Make the tart.
  • Preheat the oven to 325°.
  • On a lightly floured surface, roll dough out to a 14-inch round about 1/8 inch thick.
  • Fit the dough into a 10-inch tart pan with a removable bottom.
  • Trim away any excess dough, and use a fork to prick the crust all over.
  • Bake the tart crust until pale golden, 20 to 25 minutes.
  • Transfer to a wire rack to cool.
  • (The tart shell can be made 8 hours ahead.) Increase oven temperature to 375°.
  • To prepare the filling: In the detached bowl of an electric mixer, whisk together 5 tablespoons sugar, egg yolks, flour, lemon juice, and lime juice.
  • Place the bowl over a pot of gently simmering water, and whisk the mixture constantly to avoid scrambling the eggs.
  • Continue whisking until mixture gets quite thick, about 8 minutes.
  • Strain through a fine sieve into the bowl of an electric mixer, if necessary.
  • Using the whisk attachment, beat the lemon cream on high speed until thick, cool, and light, about 5 minutes.
  • In a clean bowl of an electric mixer fitted with the whisk attachment, beat the egg whites until they hold soft peaks.
  • Slowly add the remaining 5 tablespoons of sugar, and beat until stiff peaks form, taking care not to overbeat the whites.
  • Fold a third of the meringue into the lemon cream to lighten it, then fold in the remaining meringue in two batches.
  • Spread the lemon curd in an even layer into the bottom of the crust.
  • Spoon the soufflé topping onto the lemon curd, mounding it attractively.
  • Bake the tart until the soufflé is golden brown and spongy, 20 to 25 minutes.
  • Dust the top with confectioners' sugar, and serve warm.

1/2 cup (1 stick) chilled unsalted butter, cut into 1/2-inch cubes
2 large egg yolks
Filling
4 large eggs
4 large egg yolks
3/4 cup plus 6 tablespoons sugar
1/3 cup finely grated lemon peel
10 tablespoons fresh lemon juice
3 tablespoons fresh lime juice
6 tablespoons (3/4 cup) unsalted butter, cut into 1/2-inch cubes
10 large egg whites
Pinch of salt
Powdered sugar

Steps:

  • For crust:
  • Combine flour, sugar, and salt in processor. Add butter. Using on/off turns, cut in butter until coarse meal forms. Add yolks and process until moist clumps form. Gather dough into ball. Divide into 6 equal portions. Press 1 dough portion over bottom and up sides of 4 1/4- to 4 1/2-inch-diameter tartlet pan with 3/4-inch-high sides and removable bottom. Repeat with remaining dough, forming 6 tartlets total. Place on rimmed baking sheet, cover with plastic, and chill 1 hour. (Can be made 1 day ahead. Keep refrigerated.)
  • Preheat oven to 375°F. Bake crusts until golden, pressing with back of fork if crusts bubble, about 20 minutes. Cool.
  • For filling:
  • Whisk eggs, yolks, 3/4 cup sugar, and lemon peel in medium metal bowl. Place bowl over saucepan of barely simmering water; whisk until sugar dissolves, about 1 minute. Stir in lemon and lime juices. Whisk until mixture thickens, about 4 minutes. Remove from heat; add butter in 3 additions, whisking until smooth. Strain lemon curd through fine sieve into medium bowl. Press plastic directly onto surface of curd. Chill until cold, at least 5 hours.
  • Preheat oven to 425°F. Place 1 1/4 cups lemon curd in large bowl; reserve. Divide remaining curd among tartlet crusts, spreading evenly over bottoms.
  • Using electric mixer, beat egg whites in large bowl until frothy. Add salt and beat until soft peaks form. Gradually add remaining 6 tablespoons sugar, beating until stiff but not dry. Fold half of egg whites into reserved lemon curd. Gently fold in remaining whites. Divide egg-white mixture among tartlets, sealing to crust edges and mounding in center. Bake until filling is golden brown and set, about 13 minutes. Let tartlets stand at room temperature 5 minutes. Push pan bottoms up, releasing tartlets. Transfer tartlets to plates. Dust tartlets with powdered sugar and serve warm or let stand up to 30 minutes.

HOT LEMON CURD SOUFFLES



Hot Lemon Curd Souffles image

On the How To Cook television series I called these 'everlasting', and yes, it's true, because unlike traditional soufflés, they never collapse. They will shrink down when they come out of the oven, but they will still be light and soufflé-like 15 minutes later. The quick lemon curd rounds the whole thing off into my favourite lemon recipe to date.

3 large eggs
2 oz (50 g) golden caster sugar and 1 level dessertspoon golden caster sugar
grated zest and juice 1 medium lemon (2 tablespoons juice)
grated zest and juice 1 small lemon
1 large egg
1½ oz (40 g) golden caster sugar
1 oz (25 g) cold unsalted butter, cut into small cubes
1 level teaspoon cornflour
a little sifted icing sugar

Steps:

  • First of all make the lemon curd by lightly whisking the egg in a medium-sized saucepan, then add the rest of the lemon curd ingredients and place the saucepan over a medium heat. Now whisk continuously using a balloon whisk until the mixture thickens; this won't take long - about 3 minutes in all. Next, lower the heat to its minimum setting and let the curd gently simmer for 1 further minute, continuing to whisk. After that, remove it from the heat and divide the curd between the bases of the ramekins. (This can all be done well in advance, but cover and leave at room temperature.) When you're ready to make the soufflés, separate the eggs, putting the yolks into a medium-sized bowl and the whites into a spanking-clean larger one. Now, using an electric hand whisk, whisk the whites to the stiff-peak stage, which will take 4-5 minutes - start on a slow speed, gradually increasing to medium and then high. Then add the dessertspoon of caster sugar and whisk on a high speed for 30 seconds more. Next add the zest and lemon juice and the remaining 2 oz (50 g) of sugar to the yolks and mix them together briefly. Now take a tablespoon of the whites and fold them into the yolks to loosen the mixture, then fold the rest of the whites in using a light cutting and folding movement so as not to lose the precious air. Spoon the mixture into the prepared ramekins, piling it high like a pyramid, then run a finger round the inside rim of each one. Next place them on the baking sheet and put this in the oven on the centre shelf for 15-17 minutes or until the tops are golden. Then remove them and let them settle for about 5 minutes to allow the lemon curd to cool. They will sink a little, but that's normal. Just before serving, place them on smaller plates and give them a light dusting of icing sugar.
