A great way to use all those cucumbers you get from your plants! A little zing from the jalapeno and a burst of lime add a fresh taste to cucumbers in this refreshing fresh salsa.

- In a medium bowl, stir together the cucumbers, tomatoes, green pepper, jalapeno pepper, onion, garlic, lime juice, parsley, cilantro, dill, and salt. Cover and refrigerate for 1 hour. Serve with tortilla chips.

FRESH CUCUMBER MINT LEMONADE
A delightful lemonade flavored with cucumber, lemon zest and fresh mint.

Steps:
- Wash the cucumbers very well.
- Leave their skin on and grate them in a bowl.
- Pound the mint leaves and lemon zest in a mortar and toss in the bowl.
- Stir with a spoon and transfer them in a piece of cheese cloth.
- Squeeze the juice into the bowl. Set aside. You can use a blender instead, but the flavors stand out with this method.
- Mix sugar and lemon juice in hot water until sugar dissolves.
- Combine this syrup with cucumber juice flavored with lemon zest and mint.
- Chill it at least for an hour and serve with ice cubes, mint leaves and cucumber slices.

LEMON CUCUMBER SALSA WITH FRESH MINT
Here in Oregon I can buy organic yet inexpensive lemon cucumbers from the Farmers' Market-alas, only in the summer! Sweeter and milder than standard cucumbers, this variety of cucumbers (L cucumis sativus) is light and refreshing! - *NOTE: Dark green and pretty poblano chile can be substituted for the jalapeno for less heat if you wish.
- SALSA: Combine all ingredients in a non-reactive serving bowl, cover and let sit at least 1 hour to marinate.

TOMATO, MINT AND CUCUMBER SALSA
Spearmint works best in this. This is best made by hand, not in the food processor. Good on grilled salmon fillet. Chili oil can be found in Mexican sections of larger grocery stores. Bell peppers can be subbed for the New Mexico chile, or added with it. Cooking time is refrigeration time.

Steps:
- Wash tomatoes and cut them in half; place them in a large glass bowl (or non-reactive metal bowl). Add cucumbers, salt, lemon pepper, lemon juice, onion, garlic, oil and vinegar. Gently mix and add chopped mint last. DO NOT OVER MIX.
- Cover with plastic wrap and refrigerate 30 minutes. Do not make too far in advance.
- Place in serving bowl and garnish with mint leaves.

- Cut the cucumbers in half lengthwise. Use a teaspoon to scrape out the seeds, then cut into thin slices. Toss the cucumbers with the salt in a colander. Let drain in the sink for at least 30 minutes.
- Meanwhile, soak the red onions in a small bowl of ice water for ten minutes, then drain in a fine mesh strainer. Blot dry with a paper towel.
- Tap the cucumber-filled colander on the base of the sink to release any excess water. Lay a clean dish towel flat on the counter, and then dump the cucumbers over top. Use the edges of the towel to blot the cucumbers dry.
- In a medium bowl, toss the cucumbers, onions, white wine vinegar, olive oil, vegetable oil, sugar, pepper and mint. Cover and let stand in refrigerator for at least 20 minutes or up to 12 hours. Before serving, taste and adjust seasoning, if necessary. Serve cold.
