1/4 cup(s) butter or margarine, softened
1 cup(s) sugar
2 large eggs
1 1/2 teaspoon(s) freshly grated lemon peel
1 1/2 cup(s) all purpose flour
2 teaspoon(s) baking powder
1/2 cup(s) mounds sweetened coconut flakes
- powdered sugar
1/4 teaspoon(s) salt

Steps:

  • heat oven to 300. beat butter, sugar, eggs and lemon peel in large bowl until well blended.
  • stir together flour, baking powder and salt. gradually, add to butter mixture, beating until blended.
  • stir in coconut. cover, refrigerate dough abut 1 hour or until firm enough to handle. shape into 1 inch balls, roll in powdered sugar.
  • place 2 inches apart on ungreased cookie sheet.
  • bake 15-18 minutes or until edges are set. immediately remove from cookie sheet to wire rack. cool completely.

1-1/2 cups all-purpose flour
1/2 cup confectioners' sugar
3/4 cup cold butter, cubed
4 large eggs, room temperature
1-1/2 cups sugar
1/2 cup lemon juice
1 teaspoon baking powder
3/4 cup sweetened shredded coconut

Steps:

  • In a small bowl, combine flour and confectioners' sugar; cut in the butter until crumbly. Press into a lightly greased 13x9-in. baking pan. Bake at 350° for 15 minutes. , Meanwhile, in another small bowl, beat the eggs, sugar, lemon juice and baking powder until combined. Pour over crust; sprinkle with coconut. , Bake at 350° until golden brown, 20-25 minutes. Cool on a wire rack. Cut into bars.
