These delicious, fluffy pancakes are a version of the pancakes my dad used to make for us girls when we were little. This version is now a Sunday morning favorite of my daughter.

Number Of Ingredients 8

1 cup all-purpose flour
2 ½ tablespoons white sugar
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
1 cup milk
2 eggs
¼ cup butter, melted

Steps:

  • Mix flour, sugar, baking powder, baking soda, and cinnamon together in a bowl.
  • Whisk milk, eggs, and melted butter together in a separate bowl. Pour milk mixture into flour mixture. Whisk until well blended.
  • Heat a lightly oiled griddle over medium heat. Drop batter by 1/4 cup measures onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.

1 ¼ cups all-purpose flour
1 tablespoon baking powder
1 teaspoon white sugar
½ teaspoon salt
1 cup milk
1 egg
½ tablespoon butter, melted and slightly cooled
1 lemon, zested
2 teaspoons oil, or as needed
1 cup frozen blueberries, or as needed, thawed

Steps:

  • Sift together flour, baking powder, sugar, and salt in a large bowl.
  • Whisk together milk and egg in a small bowl. Add milk and egg mixture to flour mixture, whisking until blended. Stir in melted butter and lemon zest.
  • Lightly oil a griddle and heat over medium-high heat. Fill a 1/4-cup measure with batter and pour onto the hot griddles. Drop a few blueberries on top and cover them with a little batter. Cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.

These lemon pancakes are the best pancakes that you will EVER eat! They are soft, delicious, and have the slightest hint of lemon flavor that will go perfect with just about any topping that you put on them!

Number Of Ingredients 10

2 cups All-Purpose Flour ((scoop and level to measure))
¼ cup Granulated Sugar
4 teaspoons Baking Powder
1/2 teaspoon Salt
1 3/4 cups Milk
1/4 cup Fresh Lemon Juice
1 large Egg
1/2 cup Oil ((canola or vegetable))
1 teaspoon Vanilla Extract ((or lemon extract))
1-2 Tablespoon Lemon Zest ((more if you desire))

Steps:

  • In a mixing bowl whisk together flour, granulated sugar, baking powder, and salt. Set aside.
  • In another mixing bowl, whisk together milk, lemon juice, egg, oil, and vanilla until incorporated. Stir in the lemon zest.
  • Stir the wet ingredients into the dry ingredients. Whisk just until combined. (batter will be slightly lumpy)
  • Preheat a non-stick skillet or griddle on medium-high heat. Spray with non-stick cooking spray or coat with butter.
  • Pour 1/4 cup batter onto the buttered griddle or skillet and cook until bubbles begin to appear on the surface. Carefully flip and cook the opposite side until golden brown. Adjust and lower the heat if pancakes begin to burn.
  • Serve warm, dusted with powdered sugar, fresh whipped cream, and fresh blueberries!

3 tablespoons butter, melted
1 cup milk
1 egg
2 tablespoons honey
1 cup all-purpose flour
1 tablespoon ground cinnamon
1 lemon, halved
1 tablespoon confectioners' sugar, or to taste

Steps:

  • Melt butter in a large skillet over medium heat, about 1 minute.
  • Pour melted butter into a bowl. Add milk, egg, and honey; blend well. Stir in flour and cinnamon until batter is just combined.
  • Drop spoonfuls of batter into the buttered skillet. Cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.
  • Squeeze lemon juice over pancakes. Sprinkle confectioners' sugar on top.
