SHRIMP AND CILANTRO RAMEN WITH LEMON

Number Of Ingredients 6

1/4 to 1/2 lb frozen shrimp, peeled, deveined, tail off. (If they're tail on, be careful when eating, or remove them post cooking!)
1 packet Ramen noodles, or the noodle of your choice.
1 small bunch cilantro, approx 1/8 cup, chopped roughly.
The Juice of 1/2 lemon.
2 tbsp extra virgin olive oil or canola oil.
Salt and pepper to taste.

Steps:

  • Bring a small saucepan of water to a rolling boil, add ramen noodles, cover and remove from heat.
  • On a separate burner, heat oil in a small sauté pan over medium high heat. When oil begins to shimmer, add frozen shrimp, turning once at about 3 minutes, then cook until just done. (About another 2 minutes.) Remove shrimp from pan, reserving liquid. (There will be quite a bit, since the shrimp were still frozen.)
  • Add lemon juice, salt and pepper to sauté pan, reduce heat to a simmer and reduce by 1/2.
  • Drain noodles and plate, add shrimp back to sauce and toss until heated well, pour shrimp and sauce over noodles, sprinkle with cilantro.
  • Serve warm and enjoy.

20 jumbo shrimp, peeled and deveined
6 lemons, zested
2 cups chopped fresh cilantro
¼ cup extra virgin olive oil
salt to taste
1 lemon, juiced
ground black pepper to taste

Steps:

  • In a bowl, toss shrimp with lemon zest and cilantro to coat.
  • Heat the oil in a skillet over medium heat. Sprinkle oil with salt, then stir in the shrimp, lemon zest, and cilantro. Cook, stirring, 5 minutes, or until shrimp are opaque. Transfer to a serving bowl, drizzle with remaining oil, lemon zest, and olive oil from the skillet. Squeeze lemon juice over shrimp, season with pepper, and serve immediately.

Garlic shrimp cooked in a creamy cilantro lime butter sauce. Serve this as an appetizer, with pasta, over rice or in tortillas for tacos. The recipe is easy to adapt. Swap lime for lemon and try other tender herbs like parsley, dill, basil or tarragon in place of cilantro.

Yield Makes 1 pound shrimp (16 to 20 shrimp, depending on size)

Number Of Ingredients 8

1 pound extra large shrimp, peeled with tails left on and deveined
1 lime plus a few extra wedges for serving
Salt and fresh ground black pepper
3 tablespoons unsalted butter
2 tablespoons minced garlic, about 6 cloves
1/2 teaspoon ground coriander, optional
2 scallions, chopped
1/2 cup fresh cilantro leaves and tender stems, chopped

Steps:

  • Pat the shrimp dry then season with 1/4 teaspoon of salt and fresh ground black pepper.
  • Use a microplane to zest the lime and set aside. Cut the zested lime in half ready for the sauce later in the recipe.
  • Add one tablespoon of the butter to a wide skillet. Save the remaining two tablespoons for later.
  • Place the skillet with butter over medium heat then add the garlic and coriander. Stir the garlic around the pan until the butter melts and is bubbling; about 1 minute.
  • Add the shrimp, nestling them into the pan so that they are in one layer. A few shrimp stacked on top of each other is okay. Cook until the shrimp start to turn pink, about 1 minute.
  • Stir in the scallions and lime zest. Continue to cook, stirring, until the shrimp are firm and opaque throughout; another 1 to 2 minutes. Slide the skillet off of the heat.
  • With the skillet off of the heat, add the cilantro, juice from the lime and the remaining two tablespoons of butter. Stir the butter around the pan so that it melts into the lime juice making the creamy butter sauce.
  • Taste then season as needed with salt and pepper. Serve with extra lime wedges on the side.

1 1/8 teaspoons salt
1/2 cup fresh lime juice
1/4 cup orange marmalade
1/4 cup finely chopped fresh cilantro
4 tablespoons olive oil
1 tablespoon soy sauce
1/2 teaspoon red pepper flakes (adjust to taste)
1/2 teaspoon fresh ground black pepper
1 lb large shrimp, peeled and deveined (20-24 to the pound)

Steps:

  • Mix together garlic and 1 teaspoon salt.
  • Whisk together garlic paste, lime juice, marmalade, cilantro, 3 tablespoons oil, soy sauce, red pepper flakes, remaining 1/8 teaspoon salt and pepper in a small bowl.
  • Transfer 1/3 of mixture to small serving bowl and reserve for dipping sauce.
