GRILLED SHRIMP WITH CITRUS DIPPING SAUCE

Number Of Ingredients 10

1 cup rice, regular or instant, cooked according to package directions
Cooking spray
2 pounds large or jumbo shrimp, peeled and deveined
Salt and freshly ground black pepper
2 tablespoons freshly chopped cilantro leaves
1 cup orange juice
2 tablespoons fresh lime juice
2 teaspoons minced fresh ginger
2 teaspoons cornstarch
1/2 teaspoon garlic powder

Steps:

  • Coat a stove-top grill pan or griddle with cooking spray and set over medium-high heat to preheat. Season both sides of shrimp with salt and black pepper. Place shrimp on hot pan and cook 2 to 3 minutes per side, until bright pink and cooked through. Sprinkle shrimp with cilantro.
  • Meanwhile, in a small saucepan, whisk together orange juice, lime juice, ginger, cornstarch, and garlic. Set pan over medium heat and bring to a simmer. Simmer 2 minutes, until mixture thickens. Season, to taste, with salt and black pepper. Transfer sauce to a serving bowl. Serve 2/3 of the shrimp with the rice and dipping sauce on the side. Reserve remaining shrimp for wraps, if desired.

1 (8 ounce) package cream cheese, softened
1 (8 ounce) container sour cream
1 clove garlic, finely chopped
¼ cup chopped fresh cilantro
1 (6.5 ounce) can small shrimp, liquid reserved
salt and pepper to taste

Steps:

  • In a food processor, place cream cheese, sour cream, garlic, cilantro and shrimp. Mix until smooth. Sprinkle with salt and pepper. Transfer to a medium serving dish. Chill covered in the refrigerator at least 2 hours before serving.

This is a zesty, fresh-tasting dip; perfect for Superbowl Sunday, or any party occasion or potluck! I used leftover peel-and-eat shrimp, but thawed cooked shrimp would be fine. The cream cheese neutralizes a lot of the pepper, making a mildly spicy dip.

1 lb cooked shrimp
1 (8 ounce) package cream cheese
1/4 cup sour cream
1/2 cup cilantro, chopped
1 fresh jalapeno pepper, minced
2 tablespoons lemon juice or 1/2 large lemon, juice of
1/2 teaspoon cayenne pepper
salt and pepper, to taste

Steps:

  • Peel cooked shrimp, if necessary.
  • Chop shrimp into 1/4 inch pieces.
  • In a medium mixing bowl, combine all ingredients.
  • Serve with good sourdough bread for spreading.

  • Place all the ingredients in a bowl and stir to evenly coat. Let sit, covered, in fridge for 10-15 minutes.
  • While the shrimp is marinating, soak wooden skewers in water until ready to add shrimp. Get your grill hot and wipe down the grill slats with olive oil or cooking spray to prevent sticking.
  • Thread the shrimp onto the wooden skewers. Turn the grill down to low and grill for 2-3 minutes per side, until shrimp turn pink and are cooked through.
  • Remove from grill and serve while hot. Top with extra cilantro and lemon wedges if desired. Enjoy!
