Steps:
- Wash and finely chop the lemons, discarding the pips, then deseed and finely slice the chilli.
- Heat the oil in a small pan over a low heat and add the mustard and cumin seeds. When they start to pop, throw in the curry leaves. Fry for a minute or so, until they're nice and crisp.
- Add the lemons, sugar, chilli and a pinch of sea salt. Turn up to a medium heat and cook for around 10 minutes, or until thick, sticky and the lemons have softened.
- Leave to cool, then store in a sterilised jar in the fridge, where it will keep for up to a week. Delicious served with poppadoms, plain yoghurt and a red onion and tomato salad.

- Thinly slice the lemons. A mandoline works well and saves a lot of time. Place in a large glass bowl and add the salt. Combine and let sit for a minimum of 3 hours, overnight preferably.
- When ready to start the chutney, place the pitted dates in a saucepan with 1/2 cup water and bring to the boil to soften. Remove from heat.
- Place the ginger, garlic, softened dates and enough vinegar to cover in a food processor and process until it forms a paste.
- Place all the ingredients, except for the mustard seeds, in a large preserving pan. stir to dissolve the sugar as you bring it to a simmer. Cook until desired consistency is reached (approximately 1 hour). Add the mustard seeds and cook for a further few minutes.

- Wash and wipe all the lemons complete dry. Cut the lemons lengthwise, de-seed them and reserve the juice which is released in this process.
- Peel and finely chop the ginger and garlic. Also chop the green chilies, keep all of them aside in a big bowl.

- Make the preserved lemons: Cut off the ends of the lemons. Cut each lemon lengthwise into 6 wedges and remove the seeds.
- Pour about ½ cup of salt into the bottom of a 6-to-8-quart glass or plastic container, add the lemons and cover with a layer of salt to completely submerge. Cover and leave in the refrigerator for 14 days.
- Rinse the lemons in several changes of water, swishing them around with your hand, and cover with about 4 inches of fresh water. Let soak overnight.

- Take rinsed and wiped dry lemons. Cut each one into small pieces and remove all the seeds. Transfer it into a grinding jar and grind it coarsely. Dry roast pepper corns, methi seeds, cumin seeds until crisp.
- Crush the roasted ingredients. In a pan take the coarse paste and cook for a minute. Add jaggery powder and mix well. Then add salt, turmeric powder, chilli powder and the coarse powder. Cook this on medium flame for 5 minutes.
- Turn off the flame and let it cool completely. Lemon chutney is ready. It can be kept at room temperature for 7 days.
