LEMON CHICKEN STIR-FRY



Lemon Chicken Stir-Fry image

Spiked with lots of zesty lemon, this delectable chicken stir-fry has a colorful mix of snow peas, carrots and scallions. But feel free to substitute other thinly sliced vegetables, such as bell peppers or zucchini. Serve with: Rice noodles or brown rice.

1 lemon
½ cup reduced-sodium chicken broth
3 tablespoons reduced-sodium soy sauce
2 teaspoons cornstarch
1 tablespoon canola oil
1 pound boneless, skinless chicken breasts, trimmed and cut into 1-inch pieces
10 ounces mushrooms, halved or quartered
1 cup diagonally sliced carrots, (1/4 inch thick)
2 cups snow peas, (6 ounces), stems and strings removed
1 bunch scallions, cut into 1-inch pieces, white and green parts divided
1 tablespoon chopped garlic

Steps:

  • Grate 1 teaspoon lemon zest and set aside. Juice the lemon and whisk 3 tablespoons of the juice with broth, soy sauce and cornstarch in a small bowl.
  • Heat oil in a large skillet over medium-high heat. Add chicken and cook, stirring occasionally, until just cooked through, 4 to 5 minutes. Transfer to a plate with tongs. Add mushrooms and carrots to the pan and cook until the carrots are just tender, about 5 minutes. Add snow peas, scallion whites, garlic and the reserved lemon zest. Cook, stirring, until fragrant, 30 seconds. Whisk the broth mixture and add to the pan; cook, stirring, until thickened, 2 to 3 minutes. Add scallion greens and the chicken and any accumulated juices; cook, stirring, until heated through, 1 to 2 minutes.

1 lb boneless skinless chicken breast
1 tablespoon cornstarch
1 tablespoon dry sherry
8 ounces shiitake mushrooms, fresh
8 ounces bamboo shoots
1 cup snow peas (for best results, it is suggested to use peas that are "fresh from the pod", rather than frozen etc.)
vegetable oil cooking spray
1 tablespoon soy sauce
1 teaspoon sugar
1/2 cup chicken stock
1 tablespoon cornstarch, dissolved in water
2 cups minute instant brown rice

Steps:

  • Remove all visible fat from chicken and cut into bite size pieces.
  • Marinate in cornstarch, one teaspoon soy sauce and sherry.
  • Slice mushrooms.
  • Remove stems from pea pods.
  • Heat oil in wok.
  • Add snow peas and stir fry until covered with oil.
  • Add chicken stock.
  • Cover and cook about 30 seconds until jade green.
  • Remove and drain.
  • Stir fry chicken until no longer pink.
  • Add mushrooms and bamboo shoots and stir fry for one additional minute.
  • Add back snow peas and toss to heat.
  • Make well in center of wok or skillet and add sauce mixture.
  • Stir until it starts to thicken, then mix in chicken and vegetables.
  • Serve over rice.

I love this recipe-very light and fast. If you wish you can sub shrimp for the chicken, and I have been known to add a can of drained mandarin oranges to the mix.

4 tsp vegetable oil,divided
1 1/2 c thinly sliced sweet red bell peppers
1 1/2 c snow peas, trimmed
1 small onion, cut into thin strips or wedges
1 lb boneless, skinless chicken breat, cut into thin strips
1/4 c white rice flour
1 tsp salt
1 c chicken stock
4 tsp fresh lemon juice
2 tsp sugar
1 tsp vegetable oil
4 tsp cornstarch
1 tsp sesame oil
1 tsp fresh lemon zest
2 clove garlic, minced
2 tsp chopped fresh parsley or cilantro

Steps:

  • 1. Prepare vegetables, set aside.
  • 2. Place rice flour and salt in a medium mixing bowl, whisk to combine.
  • 3. Thinly slice chicken, toss with rice flour. Set aside.
  • 4. In a medium saucepan combine the chicken stock, lemon juice, sugar, sesame oil, cornstarch, 1 teaspoon vegetable oil, lemon zest and garlic.
  • 5. Whisking constantly, bring sauce mixture to a boil over medium high heat.
  • 6. Cook for 3 minutes or until sauce has thickened.
  • 7. Remove from heat and set aside.
  • 8. In a large skillet or wok heat 2 teaspoons vegetable oil over medium-high heat.
  • 9. Add peppers, snow peas and onions.
  • 10. Stir/toss constantly until tender/crisp, about 2-3 minutes.
  • 11. Using a slotted spoon remove to a large serving bowl, set aside.
  • 12. Add remaining 2 teaspoons vegetable oil.
  • 13. Add coated chicken strips, stir-fry for 8 minutes or until done. (8 minutes is the longest you want to cook your chicken unless it's cut thick)
  • 14. Using a slotted spoon remove chicken and place it on top of the pepper/snow pea mixture.
  • 15. Quickly reheat sauce.
  • 16. Pour half of the sauce over the chicken mixture-stir or toss well to combine.
  • 17. Reserve the rest of the sauce to serve at the table.
  • 18. Serve over hot white rice.
  • 19. You can easily sub shrimp for the chicken if you prefer.

1 1/2 cups thinly sliced red peppers (, or a combo of red, orange and yellow)
1 1/2 cups snow peas
1 small onion, cut into thin lengths
1 lb boneless skinless chicken breast
1/4 cup flour
1 teaspoon salt
2 teaspoons vegetable oil (yes, again)
1 cup chicken stock
4 teaspoons lemon juice
2 teaspoons sugar
1 teaspoon vegetable oil
4 teaspoons cornstarch
1 teaspoon sesame oil
1 teaspoon lemon, rind of, grated
2 cloves garlic, minced
2 teaspoons chopped parsley or 2 teaspoons chopped cilantro

Steps:

  • In a large skillet heat 1 t.
  • of oil over medium heat and saute peppers, peas and onions until just tender/crisp-3 min-remove and place on bottom of serving dish.
  • Cut chicken into thick strips and dust with flour/salt.
  • Add 3 t's of oil into skillet and cook chicken until done-around 8 min- Meanwhile in a saucepan combine stock, lemon juice, sugar, oil, cornstarch, sesame oil, zest and garlic-cook over medium high heat for 3 minutes or until thickened.
  • Place chicken on pepper/snowpea mixture and pour a little sauce over it.
  • Reserve the rest for the table.
  • Serve with hot rice and vegetable spring rolls.

Lemongrass Chicken with Snow Peas and Jasmine Rice image

Transform leftover cooked chicken into a dish that will delight the senses with color, texture, aroma, and flavor. Lemongrass, Thai red curry paste, and coconut (our heart-healthy recipe uses coconut extract) are the popular Thai ingredients that do the trick.

Yield serves 4, 1 cup chicken mixture and 1/2 cup rice per serving

Number Of Ingredients 9

3/4 cup uncooked jasmine rice
1 1/2 cups water and 2 cups water, divided use
1 stalk lemongrass or 1 teaspoon grated lemon zest
2 cups fat-free, low-sodium chicken broth
2 cups diced cooked skinless chicken, cooked without salt (3 to 4 ounces)
3 ounces snow peas, trimmed and cut into thin strips
2 medium green onions, thinly sliced
1 tablespoon Thai red curry paste
1/2 teaspoon coconut extract

Steps:

  • Prepare the rice using the package directions, except use 1 1/2 cups water and omit the salt and margarine.
  • Meanwhile, trim and discard about 6 inches from the slender tip end of the lemongrass stalk. Remove the outer layer of the leaves from the bottom part of the stalk. Carefully cut the stalk in half lengthwise. Put in a large saucepan (don't add the lemon zest yet if using).
  • Add the broth, remaining 2 cups water, and chicken to the pan. Bring to a boil over high heat. Reduce the heat to medium low. Cook, covered, for 6 to 8 minutes, or until the mixture has a lemon flavor. Don't stir. Discard the lemongrass.
  • Add the remaining ingredients (if you are using lemon zest instead of lemongrass, add it now). Cook for 1 to 2 minutes, or until the snow peas are tender-crisp, stirring occasionally. Serve over the rice.
  • Lemongrass is an herb that often is used in Thai cooking. Although the outer leaves and tops are too tough and fibrous to eat, they can be cooked to provide lemony flavor and an appealing fragrance without the acidity of fresh lemon. Chop or slice the lower part of the stem, the only edible part, for use in a variety of chicken and seafood dishes.
  • Made of fresh chile peppers, herbs, and spices, Thai red curry paste is very hot and aromatic. The hotter the chile pepper used (Thai bird's eye is among the hottest), the hotter the chile paste; check the ingredients and make your selection accordingly. Among the many other ingredients that may be included in the paste are cinnamon, coriander seeds, cumin seeds, galangal or fresh ginger, garlic, kaffir lime leaves, lemongrass, onion, shrimp paste, turmeric, and vinegar.
