1 small lemon
2 teaspoons kosher salt, plus more to taste
1 teaspoon black pepper
1 teaspoon chopped rosemary, plus 4 sprigs
Large pinch of red-pepper flakes, plus more for serving (optional)
1 (3 1/2- to 4-pound) whole chicken, patted dry
Extra-virgin olive oil, for drizzling
1/3 cup finely grated Parmesan

Steps:

  • Finely grate 1 teaspoon zest from the lemon and place it in a small bowl. (Save the zested lemon for the drippings.) Stir in 2 teaspoons salt, pepper, chopped rosemary and red-pepper flakes, if using. Season the chicken inside and out with salt mixture. Let sit at room temperature for 20 minutes or refrigerate uncovered for up to overnight.
  • Heat oven to 425 degrees. Place chicken, breast-side up, in a large skillet, sheet pan or roasting pan. Stuff cavity of chicken with rosemary sprigs. Drizzle breast with a little olive oil.
  • Roast chicken for 30 minutes. Sprinkle chicken all over with Parmesan, then continue roasting until bird's juices run clear when skin is pierced with a knife and the skin is golden, 25 to 30 minutes longer.
  • Let chicken rest for 10 minutes. Squeeze juice from the zested lemon, to taste, into the pan drippings and season with more salt and red-pepper flakes if you like. Carve and serve with drippings spooned over the meat.

  • In a large skillet add olive oil, garlic cloves and cook the chicken on medium high heat for 3-5 minutes on each side or until brown on each side and cooked until no longer pink in center. Remove chicken and set aside on a plate.

1 1/4 cups dry breadcrumbs

Steps:

  • Pound each chicken piece to thickness of 1/2 inch between sheets of waxed paper. Place chicken in baking dish. Pour 4 tablespoons lemon juice over chicken and turn to coat. Let stand 10 minutes. Beat eggs with remaining 1 tablespoon lemon juice in medium bowl. Combine breadcrumbs, Parmesan and lemon peel in shallow dish. Dip 1 chicken breast into egg mixture. 1 lb chicken breasts (4), boneless, skinless and cut in the same thickness anywhere from 3/4" thick to an inch and a half (1-1/2")
1/2 tsp salt

1 cup flour
1 stick butter
1/4 cup onions, finely chopped
3 garlic cloves, minced
1-1/2 cups chicken broth/stock
1 cup heavy cream
1 - 2 Tbsp. freshly-squeezed lemon juice (add more if you want a stronger lemon flavor)
1 - 2 tsp Dijon mustard (add the amount that you prefer for your own taste)
1-1/2 cups Parmigiano (Parmesan) cheese (see notes)

Steps:

  • Slice chicken breasts so that each is a thin cutlet; making sure that all cutlets are as equal in size as possible.
  • Sprinkle each side of the chicken cutlets with salt and pepper.
  • Coat lightly with flour and shake off excess flour.
  • Melt butter in large skillet on medium-high heat.
  • Add onions, chicken and garlic. Saute until golden crust develops . . . about 5 minutes on each side if thickly cut, or 3 minutes on each side if thinly cut.
  • Add the chicken broth/stock and lemon juice. This will deglaze the flavor bits on the bottom of the pan to blend into the cream sauce.
  • Lower the flame heat to low and add the cream.

2 tablespoons flour ((all purpose or plain))
2 tablespoons finely grated fresh Parmesan cheese
1 teaspoon salt
Cracked pepper
1 tablespoon olive oil
2 teaspoons butter ((or oil))
2 tablespoons minced garlic
1 1/4 cup chicken broth ((stock))
1/2 cup half and half or heavy cream ((or evaporated milk))
1/3 cup finely grated fresh Parmesan cheese
2 tablespoons capers ((plus 2 tablespoons extra to garnish))
1 teaspoon cornstarch ((cornflour) mixed with 1 tablespoon of water)

Steps:

  • In a shallow bowl, combine the flour and parmesan cheese. Season the chicken with salt and pepper; dredge in the flour mixture; shake off excess and set aside.
  • Heat 1 tablespoon of oil and 2 teaspoons butter in a large skillet over medium-high heat until butter has melted and pan is hot. Fry the chicken until golden on each side and cooked through and no longer pink (about 3-4 minutes, depending on the thickness of your chicken). Transfer onto a warm plate.
  • Add the garlic to the oil in the pan (spray with a light coating of oil if needed) and fry until fragrant (about 1 minute). Reduce heat to low-medium heat, add the broth and cream.
  • Bring the sauce to a gentle simmer; season with salt and pepper to your taste; add in the parmesan cheese and capers. Continue cooking gently for about 2 minutes until thicker. (If the sauce is too runny for your liking, add the cornstarch/water mixture into the centre of the pan and mix through fast to combine into the sauce. It will begin to thicken immediately).
  • Pour in the lemon juice, allow to simmer for a further minute to combine. Add the chicken back into the pan, allow to simmer gently in the sauce for about a minute to soak up all of the flavours in the sauce.
  • Serve with the sauce over pasta, steamed vegetables, zucchini noodles or rice. Top with extra capers to garnish, lemon slices and parsley.

Steps:

  • Place the chicken breasts in between to sheets of parchment paper or plastic and flatten out to approximately 1cm/half inch with a rolling pin or a meat mallet.
  • Drizzle over the olive oil and season on both sides with the oregano, paprika, salt and pepper. Rub in the spices.
  • Heat a large pan over high heat. Add the chicken and allow to cook for 2-3 minutes per side until golden brown on both sides. Remove and set aside.
  • To make the sauce, add the olive oil and garlic to the pan and cook for 30 seconds. Pour in the cream and lemon juice. Bring to a simmer then add the Parmesan and season to taste.
  • Add the chicken back in, reduce the heat and allow to cook for 5-7 minutes or until the chicken is cooked through and the sauce has reduced slightly.

2 teaspoons minced garlic

1/3 cup fresh grated parmesan cheese
4 skinless (, boneless chicken breasts (or thighs))
8-10 (1 pound | 500 g) baby potatoes, quartered

1 pound | 500 g green beans (, cut into thirds)

Steps:

  • Preheat oven to 200°C | 400°F. Lightly grease a baking tray / sheet with cooking oil spray, or a light coating of oil. Set aside.
  • In a large bowl, whisk together the egg, lemon juice, 2 teaspoons garlic, parsley, salt and pepper.
  • Dip chicken into egg mixture, cover and allow to marinade in the refrigerator for 30 minutes to an hour (if time allows).*
  • In another bowl, combine the breadcrumbs with the parmesan cheese.
  • Dredge the egg coated chicken in the breadcrumb/parmesan mixture, lightly pressing to evenly coat.

  • Cut each chicken breast in half lengthwise. Place chicken between 2 sheets of heavy-duty plastic wrap; flatten to 1/4-inch thickness, using a rolling pin or flat side of a meat mallet. Sprinkle chicken with salt and pepper. Lightly dredge chicken in flour, shaking off excess.
  • Melt 1 Tbsp. butter with 1 Tbsp. olive oil in a large nonstick skillet over medium-high heat. Cook half of chicken in skillet 2 to 3 minutes on each side or until golden brown and done. Transfer chicken to a serving platter, and keep warm. Repeat procedure with 1 Tbsp. butter and remaining olive oil and chicken.
  • Add broth and lemon juice to skillet, and cook 1 to 2 minutes or until sauce is slightly thickened, stirring to loosen particles from bottom of skillet. Add 8 lemon slices.
  • Remove skillet from heat; add parsley and remaining 2 Tbsp. butter, and stir until butter melts. Pour sauce over chicken. Serve immediately. Garnish, if desired.
