CAMPFIRE FOIL PACKS
These are easy to make for camping, my husband loves them! We prepare them at home and then leave them in the cooler until we are ready to cook. You can use any combination of meat and vegetables that you like. Do not try to use less olive oil or foil or your dinner will burn. Be careful when opening foil as steam will have formed inside and can burn you.

Steps:
- In a large bowl, or a large zip-top bag, combine the chicken, onion, mushrooms, yellow pepper, red pepper, garlic, and potatoes. Pour in the olive oil and lemon juice, then mix well.
- Evenly divide the mixture between 4 large sheets of aluminum foil. Top each with another sheet of foil, and roll up the edges tightly. Wrap each packet again, securely in another sheet of foil to double wrap.
- Cook in the hot coals of a campfire until the chicken is opaque and the potatoes are tender, around 40 minutes.

CHICKEN FOIL PACKS WITH VEGETABLES
These Chicken Foil Packets are an easy summertime meal with virtually no clean up. Perfect for camping or just an easy dinner at home!

- (makes 4-5 grill packets)
- Heat grill to 400-degrees (you can do this in your oven, too, at the same temp.).
- Season chicken with Greek seasoning and salt and pepper. Set aside.
- Divide potatoes, zucchini, and tomatoes into 4-5 equal portions.
- Evenly distribute vegetables between 4-5 12-18" foil squares.
- Drizzle a little olive oil over each portion of vegetables and season with Greek seasoning and salt and pepper.
- Place chicken over the top of each vegetable pile and drizzle with a little more olive oil.
- Place a thin slice of lemon or two over each piece of chicken.
- Tightly seal foil packets by folding up the sides over the contents and tightly folding up the ends over the seam.
- Grill 40-45 minutes or until potatoes are tender and chicken is cooked through.
- Be careful when opening packets. Steam will release and be VERY HOT.
- Open packets and season with salt and pepper, if needed.
- Sprinkle a little Feta cheese over each packet and serve with extra lemon slices.

- Preheat oven to 425˚F (220˚C).
- In a small bowl, combine olive oil, both mustards, thyme, rosemary, lemon zest, salt, and pepper. Whisk and set aside.
- Cut four sheets of foil, about 14 inches (35 cm) long.
- Divide potatoes and carrots into 4 equal portions and add to the center of each foil.
- Drizzle with olive oil and season with salt and pepper.
- Top each packet with the chicken. Using your fingers or a brush, work the mustard mixture onto the chicken. Top with lemon slices and fresh rosemary.
- Fold the sides of the foil over the chicken, covering completely and sealing the packets closed. Place foil packets in a single layer on a baking sheet. Place into oven and bake until the chicken is cooked through and the potatoes and carrots are tender, about 30 minutes. Cooking time may take longer depending on the thickness of the breast.

- First Preheat your oven to 400 degrees. Then clean off your chicken breast, your red potatoes, and fresh green beans.
- Next cut your red potatoes into slices, cut your fresh green beans in half, and chop up your fresh garlic. Then cut your lemons into slices and set asisde for later.
- Place each chicken breast on a sheet of Aluminum foil then place the slice red potatoes around the chicken breast. Place the cut green beans on the potatoes, then sprinkle the chop garlic on top of the green beans and potatoes.
- Seaon each foil packet with Italian seasoning, the salt, the black pepper, the garlic powder , then drizzle each packet with olive oil, and top each one with 2-3 slices of the lemon slices you sliced earlier.
- Then put the foil packets into a baking pan and place it in the oven to bake for 30-35 minutes. You can also grill the foil packet as well for 30-35 minutes.
- After 30-35 minutes take out the foil packet place it on a plate and enjoy but be careful because the foil gets extremely hot. This foil packet dinner is so yummy that everybody can enjoy.
