3 to 4 boneless chicken breast halves (, cubed)

1 pint sweet grape tomatoes (, halved)
1 package ((8-ounces) mushroom slices)
1/4 cup loosely packed fresh flat leaf parsley
2 tablespoons Borges Extra Virgin Olive Oil
1 lemon (, juiced)
1 teaspoon garlic paste
salt and pepper (, to taste)
grated parmesan cheese

Steps:

  • Heat olive oil in a large skillet over medium heat; add cubed chicken pieces.
  • Season with salt and pepper; cook until chicken is browned on all sides, stirring occasionally.
  • Add halved grape tomatoes, sliced mushrooms and parsley; frequently stirring, continue to cook for 3 to 4 minutes, or until chicken is thoroughly cooked.
  • Add cooked fettuccine to chicken mixture and cook until heated through, stirring frequenty.
  • In a mixing bowl or a jar, combine olive oil, lemon juice, garlic, salt and pepper; shake it or stir it until thoroughly mixed.
  • Stir into pasta mixture.
  • Remove from heat.
  • Taste for salt and pepper; adjust accordingly.
  • Sprinkle with grated parmesan cheese.
  • Serve.

1 pound vegetable penne pasta
4 boneless skinless chicken breasts
5 tablespoons olive oil
3 cloves garlic, finely chopped
1 large shallot, finely chopped
1/2 cup freshly squeezed lemon juice
1 1/2 cups trimmed and sliced sugar snap peas
One 10-ounce bag frozen peas
3 cups baby spinach
3 tablespoons chopped fresh basil
3 tablespoons chopped fresh flat-leaf parsley, plus additional leaves for serving

Steps:

  • Bring a large pot of water to a boil and salt it generously. Add the pasta and cook until al dente, 8 to 10 minutes. Reserve 1/4 cup of the cooking liquid. Drain the pasta and set aside.
  • Sprinkle the chicken with salt and pepper. Add 2 tablespoons olive oil to a large pan over medium-high heat. Cook the chicken until the internal temperature reaches 160 degrees F, about 5 minutes per side. Remove the chicken and slice it into strips.
  • Add 1 tablespoon olive oil to the pan. Add the garlic and shallot and sprinkle with salt and pepper. Cook until fragrant, 1 minute. Add the lemon juice and sugar snap peas and cook, 2 minutes. Add the reserved pasta water and the frozen peas. Cook until the peas are just cooked through, 2 minutes more.
  • Add the cooked pasta, spinach, sliced chicken, chopped basil, chopped parsley and the remaining 2 tablespoons olive oil. Toss all the ingredients together to coat, season with additional salt and pepper and garnish with parsley leaves. Serve immediately.

1 Pound Boneless Skinless Chicken Breasts (- sliced into 3/4-1'' wide strips)
2 TBS Unsalted Butter (- DIVIDED)
1 large Shallot (- finely diced)
2 Cloves Garlic (- minced)
1 TBS All Purpose Flour
2 Cups Chicken Broth
1 ½ Cups Half-and-Half
8 ounces Linguine (- broken in half)
1 ¼ Cup Peas (- (thawed if frozen) (SEE NOTES))
1 bunch fresh Basil (- 1 large sprig left whole, the rest chiffonade (thinly sliced))
1 Lemon (- zest and juice)
½ Cup Parmesan Cheese (- grated, plus more for serving)
Kosher Salt and Fresh Ground Pepper (- to taste)
Optional Garnishes: Lemon Slices, Crushed Red Pepper Flakes

Steps:

  • Cook Chicken: Melt 1 tablespoon butter in a Dutch oven, or large straight sided skillet, over medium high heat. Add the chicken and season generously with salt and pepper. Cook until golden brown on all sides, but not cooked through, about 4-6 minutes total. Remove chicken to a plate.
  • Saute Aromatics, then add flour: Add in the remaining tablespoon of butter. Once melted, add in the shallot and season with salt and pepper. Cook until softened, about 2 minutes. Add in the garlic* and cook until fragrant, about 1 minute. Add in the flour and cook, stirring, for another minute.
  • Add liquids, then chicken + pasta: Add in the chicken broth and half-and-half. Whisk to combine. Add back in the chicken along with the pasta and a large sprig of basil. Bring to a slow boil, stirring occasionally, then immediately reduce to a simmer. Cover and cook for 10-15 minutes, or until the pasta is al dente. Remove the sprig of basil and discard.
  • Add in the peas, lemon juice and zest. Cook for an additional minute. Stir in the parmesan and chopped basil. Taste and adjust for seasoning with salt and pepper.
  • Garnish & Serve: Garnish with crushed red pepper flakes, more parmesan cheese, and slices of lemon if using. Serve immediately and enjoy!

2 teaspoons ground coriander
1 (16 ounce) package angel hair pasta
2 tablespoons extra-virgin olive oil
2 cups chicken broth, divided
2 cups snow peas, trimmed
1 tablespoon lemon juice
salt and ground black pepper to taste
½ cup chopped scallions

Steps:

  • Bring a large pot of water to a boil. Add chicken; cook until an internal thermometer inserted into the center reads at least 165 degrees F (74 degrees C), 15 to 20 minutes. Drain and cool until easily handled; cut into cubes.
  • Mix chicken with coriander in a bowl.
  • Bring a large pot of lightly salted water to a boil. Cook angel hair, stirring occasionally, until tender yet firm to the bite, 4 to 5 minutes. Drain.

Steps:

  • Cut chicken into 1" pieces. Mince the garlic.

3/4 pound skinless boneless chicken breast halves
12 ounces lemon-pepper fettuccine or regular fettuccine
2 1/2 cups snow peas (about 5 ounces), cut into matchstick-size strips
3/4 cup pine nuts, toasted
3/4 cup chopped fresh Italian parsley
3 tablespoons fresh lemon juice
2 1/2 tablespoons Dijon mustard

Steps:

  • Heat 1 tablespoon oil in large nonstick skillet over medium heat. Add chicken and sauté until cooked through, about 5 minutes per side. Cool. Cut chicken crosswise into 1/4-inch-thick strips.
  • Cook pasta in large pot of boiling salted water until tender but still firm to bite. Drain well; transfer to large bowl. Add 1 tablespoon oil; toss to coat. Add chicken, snow peas, pine nuts and parsley; toss to incorporate all ingredients.
