Steps:

  • Preheat oven to 400 F.
  • Cut Salmon Filet width-wise into about 1-1/2 inch pieces.
  • Spread a thin layer of butter/margarine over each salmon steak.
  • Slice lemon, and place 1 slice of lemon on top of each salmon steak.
  • Squeeze lemon juice out of unused portion of lemon evenly over each ste ak.
  • Bake for 15-20 minutes.
  • Serve with rice. Variations: The margarine is not necessary, however my husband says it's too bland without the margarine, and the lemon flavoring is stronger without the margarine. It also prevents drying if you like your salmon cooked thoroughly.

This simple fish dish is best made with wild salmon, but it works equally well with the farmed sort. It's astonishingly easy. In a hot oven, melt butter in a skillet until it sizzles, add the salmon, flip, remove the skin, then allow to roast a few minutes more. You'll have an elegant fish dinner in about 15 minutes. Don't be afraid to play with herb and fat combinations: parsley, chervil or dill work well with butter; thyme, basil or marjoram with olive oil; or peanut oil with cilantro or mint.

4 tablespoons minced chervil, parsley or dill
1 salmon fillet, 1 1/2 to 2 pounds

Steps:

  • Preheat the oven to 475 degrees. Place the butter and half the herb in a roasting pan just large enough to fit the salmon and place it in the oven. Heat about 5 minutes, until the butter melts and the herb begins to sizzle.
  • Add the salmon to the pan, skin side up. Roast 4 minutes. Remove from the oven, then peel the skin off. (If the skin does not lift right off, cook 2 minutes longer.) Sprinkle with salt and pepper and turn the fillet over. Sprinkle with salt and pepper again.
  • Roast 3 to 5 minutes more, depending on the thickness of the fillet and the degree of doneness you prefer. Cut into serving portions, spoon a little of the butter over each and garnish with the remaining herb. Serve with lemon wedges.

3-4 tablespoons butter
1 tablespoon minced garlic
1 medium lemon (juiced)
1.5 tablespoons fresh dill

Steps:

  • First, prep salmon by patting it dry with a paper towel to remove moisture. Then, season with salt and pepper, to taste.
  • Place 3-4 tablespoons of butter and 1 tablespoon minced garlic into a large nonstick skillet and heat over medium/high heat.
  • Place salmon skin-side up in the pan and sear for 4 minutes. Flip salmon and cook for an additional 3-4 minutes or until barely pink in the middle.
  • Once flakey and cooked to an internal temperature of at least 145ºF, remove the salmon fillets from the heat.

2 pounds salmon filet (skin-on or skinless)
Salt and pepper to taste
4 tablespoons butter
4 garlic cloves, minced
1 lemon, zest and juice (about 1 tablespoon of juice)
2 teaspoons fresh dill, finely chopped plus more for garnishing (garnish is optional)
1 lemon, thinly sliced

Steps:

  • Remove the salmon from the refrigerator and let it come to room temperature while you preheat the oven. Preheat the oven to 400 degrees Fahrenheit.
  • Spray a baking dish with cooking spray or coat the bottom with a little bit of melted butter or oil to prevent the fish from sticking.
  • Place the salmon on the baking dish (skin side down if your fish has skin). Season the salmon on both sides with salt and black pepper.
  • In a small bowl, melt the butter and stir in the garlic, lemon zest, lemon juice and fresh dill. Let the flavored butter cool for about a minute.
  • Pour the lemon herb butter over the salmon. Arrange the lemon slices on top of the fish.

¼ cup bread crumbs
¼ cup salted butter, melted
2 tablespoons grated Parmesan cheese
1 medium lemon
3 (4 ounce) salmon fillets
1 teaspoon olive oil

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Combine bread crumbs, melted butter, and Parmesan cheese in a bowl; stir until well blended.
  • Cut lemon in half. Squeeze one half into the butter mixture. Cut the other half into 3 slices and set aside.
  • Place each salmon fillet on a piece of aluminum foil and fold up the sides. Brush olive oil onto fillets, then pour butter mixture over top and place a slice of lemon on each one.

2 lb salmon fillet
Kosher salt
Extra virgin olive oil (I used Early Harvest Greek extra virgin olive oil)
1/2 lemon, sliced into rounds
Parsley for garnish
Zest of 1 large lemon
Juice of 2 lemons
3 tbsp extra virgin olive oil (I used Early Harvest Greek extra virgin olive oil)
5 garlic cloves, chopped
2 tsp dry oregano
1 tsp sweet paprika
1/2 tsp black pepper

Steps:

  • Heat oven to 375 degrees F.
  • Make the lemon-garlic sauce. In a small bowl or measuring cup, mix together the lemon juice, lemon zest, extra virgin olive oil, garlic, oregano, paprika and black pepper. Give the sauce a good whisk.
  • Prepare a sheet pan lined with a large piece of foil (should be large enough to fold over salmon). Brush top of the foil with extra virgin olive oil.
  • Now, pat salmon dry and season well on both sides with kosher salt. Place it on the foiled sheetpan. Top with lemon garlic sauce (make sure to spread the sauce evenly.)
  • Fold foil over the salmon (seam-side up). Bake for 15 to 20 minutes until salmon is almost completely cooked through at the thickest part (cooking time will vary based on the thickness of your fish. If your salmon is thinner, check several minutes early to ensure your salmon does not overcook. If your piece is very thick, 1 1/2 or more inches, it may take a bit longer.)
  • Carefully remove from oven and open foil to uncover the top of the salmon. Place under the broiler briefly, about 3 minutes or so. Watch closely as it broils to make sure it doesn't overcook and the garlic does not burn.)

To prevent overcooking, the salmon bakes in a light yet comforting sauce that's made with just three simple ingredients: butter, scallions and lemon peel. The salmon comes out silky, and the sauce is nutty from the browned butter and slightly sweet from the roasted scallions and lemon peel. Serve with a squeeze of lemon for freshness and a simple side like broccolini, green beans, grains or pasta. This technique also works for other fish like cod, halibut or arctic char.

1 1/2 pounds salmon, skinless or skin-on (1 large fillet or four 6-ounce fillets)
Salt and black pepper
1 lemon
6 tablespoons unsalted butter
1 bunch scallions, thinly sliced

Steps:

  • Heat the oven to 325 degrees. Pat salmon dry, and season with salt and pepper. Set aside. Using a vegetable peeler, peel the zest of the lemon in wide strips. Cut the lemon into wedges for serving.
  • In a large, ovenproof skillet, melt the butter over medium. When it's foaming, add the scallions and the lemon peel, and season with salt and pepper. Cook, stirring occasionally, until the butter turns brown and smells nutty, 3 to 6 minutes. (If you're using a light-colored pan, you'll see the browned bits in the skillet. If you're using a dark-colored pan, look for dark spots on the white parts of the scallions; those are browned bits of butter and a sign to remove the skillet from heat.)
  • Immediately remove from heat, and add ⅓ cup of water. Stir to combine. Lay the salmon, skin side down (if there's skin), into the sauce. Cover the skillet and bake until cooked through, 15 to 20 minutes, or slightly longer if you're cooking a single, large piece. (You'll know the salmon is done when the fish flakes or an instant-read thermometer inserted into the thickest part registers 120 degrees.)
  • Eat the salmon with a spoonful of sauce and a squeeze of the lemon.

Steps:

  • Remove salmon fillets from refrigerator and allow to rest at room temperature 10 minutes.
  • Meanwhile, prepare the garlic lemon butter sauce. In a small saucepan, melt 1 tsp butter over medium heat.

  • Heat olive oil in a (heavy) 12-inch non-stick skillet over medium-high heat.
  • Once oil is shimmering add salmon and cook about 4 minutes on the first side until golden brown on bottom then flip and cook salmon on opposite side until salmon has cooked through, about 2 - 3 minutes longer.
  • Plate salmon (leaving oil in pan) and drizzle each serving generously with butter sauce, sprinkle with parsley and garnish with lemon slices if desired. Serve immediately.
