This Garlic Butter Salmon in Foil is an ultra-easy and flavourful dinner to make during your busy weeknights. It's ready in less than 30 minutes and is delicious with salads and roasted veggies.

1¼ pounds salmon fillet
2 tablespoons lemon juice
2 cloves garlic (minced)
3 tablespoons melted butter or melted ghee
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon dried oregano
¼ teaspoon crushed red pepper
1 tablespoon chopped parsley (to garnish)
lemon slices (to garnish)

Steps:

  • Preheat oven to 375ºF. Line a baking sheet. The piece of foil should be large enough to fold over and seal the fish.
  • In a small bowl, add lemon juice, garlic, and melted butter or melted ghee. Whisk everything together.
  • Place the salmon on the prepared baking sheet. Pour the butter mixture over the salmon.
  • Season with salt, pepper, oregano, and red pepper flakes.
  • Fold the sides of the foil over the salmon. Make sure it is well sealed so that the sauce does not leak. Place the pan into the oven, and bake until cooked, about 12-16 minutes. The cooking time depends on the thickness of the fillet.*
  • Open the foil, and broil the fish for 2-3 minutes. Be careful not to burn the fish!
  • Remove from the oven. Using a spoon, pour some of the butter sauce left in the foil onto the salmon before serving. Then, garnish with parsley.

½ cup water
1 lemon, juiced
½ cup butter, cut into 16 pieces
2 cloves garlic, thinly sliced
2 (1 pound) salmon fillets
½ cup butter, cut into 8 pieces
1 clove garlic, minced
1 lemon, cut into 8 slices

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Combine water and lemon juice in a bowl.
  • Arrange the 16 smaller pieces of butter in 2 rows on a baking dish and top with garlic slices. Place salmon fillets over each row of butter and garlic.
  • Melt remaining sliced butter in a bowl with minced garlic, about 40 seconds. Spoon about half the melted butter-garlic mixture over salmon and top with lemon slices. Pour about half the lemon juice mixture into the baking dish.
  • Bake in the preheated oven for 10 minutes. Baste fillets with juices in the baking dish, then pour remaining butter and lemon juice over the fish. Continue baking until salmon is easily flaked with a fork, about 10 minutes more.

Salt and pepper to taste
4 tablespoons butter
4 garlic cloves, minced
1 lemon, zest and juice (about 1 tablespoon of juice)
2 teaspoons fresh dill, finely chopped plus more for garnishing (garnish is optional)
1 lemon, thinly sliced

Steps:

  • Remove the salmon from the refrigerator and let it come to room temperature while you preheat the oven. Preheat the oven to 400 degrees Fahrenheit.
  • Spray a baking dish with cooking spray or coat the bottom with a little bit of melted butter or oil to prevent the fish from sticking.
  • Place the salmon on the baking dish (skin side down if your fish has skin). Season the salmon on both sides with salt and black pepper.

2 lb salmon fillet
Kosher salt
Extra virgin olive oil (I used Early Harvest Greek extra virgin olive oil)
1/2 lemon, sliced into rounds
Parsley for garnish
Zest of 1 large lemon
Juice of 2 lemons
3 tbsp extra virgin olive oil (I used Early Harvest Greek extra virgin olive oil)
5 garlic cloves, chopped
2 tsp dry oregano
1 tsp sweet paprika
1/2 tsp black pepper

Steps:

  • Heat oven to 375 degrees F.
  • Make the lemon-garlic sauce. In a small bowl or measuring cup, mix together the lemon juice, lemon zest, extra virgin olive oil, garlic, oregano, paprika and black pepper. Give the sauce a good whisk.
  • Prepare a sheet pan lined with a large piece of foil (should be large enough to fold over salmon). Brush top of the foil with extra virgin olive oil.
  • Now, pat salmon dry and season well on both sides with kosher salt. Place it on the foiled sheetpan. Top with lemon garlic sauce (make sure to spread the sauce evenly.)
  • Fold foil over the salmon (seam-side up). Bake for 15 to 20 minutes until salmon is almost completely cooked through at the thickest part (cooking time will vary based on the thickness of your fish. If your salmon is thinner, check several minutes early to ensure your salmon does not overcook. If your piece is very thick, 1 1/2 or more inches, it may take a bit longer.)
  • Carefully remove from oven and open foil to uncover the top of the salmon. Place under the broiler briefly, about 3 minutes or so. Watch closely as it broils to make sure it doesn't overcook and the garlic does not burn.)
