BLUEBERRY-LEMON CAKE MIX COBBLERS
These mini lemon cake mix cobblers are a fast and easy way to enjoy a single serving of dessert without the temptation to eat an entire pan! Don't like blueberries? That's all right, try using other berries and fruits instead!

- Preheat the oven to 350 degrees F (175 degrees C). Spray 4 ramekins with cooking spray.
- Place blueberries into a bowl. Add sugar, water, and cornstarch. Stir gently until well mixed, 30 seconds to 1 minutes.
- Divide the blueberries evenly among the ramekins, filling them about 3/4 to the top.
- Heat butter in a large, microwave-safe bowl until melted, about 1 minute.
- Stir lemon cake mix into the butter to combine; mixture will still be a little dry and lumpy. Scoop about 1/2 cup of the mixture into each ramekin. Spray tops lightly with cooking spray.
- Bake in the preheated oven until tops are lightly browned, 25 to 30 minutes. Serve warm.

- In a large bowl, combine the flour, 3/4 cup sugar, baking powder, salt, cinnamon and nutmeg. Combine the eggs, milk and oil; stir into dry ingredients just until moistened. Spread the batter evenly onto the bottom of a greased 5-qt. slow cooker. , In a large saucepan, combine the berries, water, orange zest and remaining sugar; bring to a boil. Remove from the heat; immediately pour over batter. Cover and cook on high for 2 to 2-1/2 hours or until a toothpick inserted into the batter comes out clean., Turn cooker off. - In a medium saucepan combine blueberries, sugar, lemon juice, cornstarch,lemon peel, cinnamon and salt.
- Cook stirring over medium heat for about 5 minutes or until thickened.
- Pour into an 8-inch baking dish greased or sprayed with Pam; set aside.
- In a small mixing bowl stir together flour, 3 tablespoons sugar, baking powder, cinnamon and salt.
- In a separate bowl whip together milk and egg, gradually pour into dry ingredients stirring until just moistened.

- Preheat the oven to 375 degrees F.
- In a medium bowl, combine the berries with the honey and cornstarch Mash together slightly with a fork just to release a little berry juice and combine with the cornstarch. Divide the berry mixture between 4 shallow (12-ounce) oven-safe dishes and reserve.
- In the bowl of a food processor add the flour, sugar, nutmeg, salt, and lemon zest and pulse to combine. Add the butter and pulse until the butter and flour are just barely combined, about 15 seconds. Transfer the butter mixture to a bowl and toss with the sliced almonds. Evenly divide the topping between the 4 dishes by sprinkling it over the berries to almost cover completely. Transfer to the oven and bake for about 20 minutes or until the top is lightly browned. Remove from the oven and serve warm with a scoop of ice cream.

- Put 1/2 cup each of the blackberries and blueberries in a saucepan and add the sugar, blackberry jam, honey, lemon zest, vanilla extract and 1/4 cup water. Bring to a boil and simmer for 5 minutes. Using a potato masher, mash the berries gently until they are good and broken up.
- Add the remaining 2 cups each blackberries and blueberries to a mixing bowl. Pour the warm berry mixture over the fresh berries and fold everything together with a spatula until well coated. Allow everything to cool 10 minutes or so before serving. Serve atop your favorite dessert.
