LEMON SHRIMP WITH PASTA AND BASIL
This takes no time at all to prepare. It looks like you've cooked all day! So easy, so basic, so fragrant This works well with chicken also. I sometimes prepare this with both the chicken and the shrimp, but I make a little more sauce, and I will add a little chicken broth to the sauce.

Steps:
- Make the shrimp: In a medium saute pan, heat the olive oil over medium-high heat. Season the shrimp with the salt and pepper; add to the preheated pan in a single layer. Cook for 2 to 3 minutes per side, or until pink and cooked through. Set aside.
- Make the pasta: Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally to prevent sticking, about 8 minutes. Drain, reserving 1 cup pasta water. Meanwhile, whisk the olive oil, parmesan and lemon zest and juice in a large bowl to blend.
- Toss the pasta with the lemon sauce, shrimp and the reserved cooking liquid, adding it 1/4 cup at a time as needed to moisten. Season with the salt and pepper; stir in the basil. Garnish with the fried capers and more parmesan, if desired.

PEA & SHRIMP PENNE WITH BASIL
Not only do peas announce the arrival of spring, but they're also sweet, tender, and take only a few minutes to cook, particularly when they're very fresh and young, which makes them a perfect ingredient for fast weeknight dishes or busy weekend meals. We recommend penne for this dish, but you can use other short pastas like rigatoni or ziti if you like.

Steps:
- Toss the shrimp with half of the basil, 2 Tbs. of the olive oil, and the lemon zest. Cover and refrigerate for about 30 minutes. Bring a large pot of well-salted water to a boil over high heat. Put the peas in a large metal sieve and dip them into the boiling water. Cook until just tender, 2 to 4 minutes. Lift the sieve from the water, let the peas drain, and then spread them on a baking sheet in a single layer to cool. Add the pasta to the boiling water and cook, following the package directions, until al dente. Reserve 1/2 cup of the cooking water and drain the pasta. Meanwhile, take the shrimp out of the fridge and season them lightly with salt and pepper. Heat the remaining 3 Tbs. oil in a 12-inch skillet over medium heat. Add the shallots, garlic, chile, and a pinch of salt and cook, stirring occasionally, until the shallots are soft and lightly browned, about 2 minutes. Add the shrimp and continue to cook, stirring, until the shrimp have turned pink and are almost cooked through, 2 to 3 minutes. Stir in the peas and remove from the heat. Return the drained pasta to its pot and add the shrimp mixture and 2 Tbs. of the pasta water. Cook over medium heat until the shrimp are completely cooked through, about 1 minute more. Toss the arugula and the remaining basil into the pasta. Add more pasta water as necessary to keep the pasta moist and continue tossing until the arugula is wilted, about 1 minute. Season to taste with salt and pepper and serve immediately.

- Prepare the leeks, cut off the end of and then right before the dark green part of the leek starts. Next cut in half lengthways so you have two long pieces. Flip them over so both flat parts are lying face down on the cutting board. Thinly slice through the leeks. Place all sliced leeks into a bath of cold water and swirl leeks around a little bit. (leeks tend to hide a lot of dirt in them so let them sit for a while, the dirt will fall off and gather in the bottom of the cold water bowl.) Remove leeks from the water after dirt is removed.
- Next add garlic cloves, salt, pepper, 1 teaspoon of fresh thyme, and lemon zest to the pan. Saute for 2 minutes, stirring the whole time. Remove from heat and set aside.

- If using frozen shrimp, make sure they're thawed first, then pat dry. Set aside. Line a baking sheet with parchment paper or aluminum foil, top with an oven safe cooling rack that's been lightly sprayed with cooking spray. Set aside.
- In a large mixing bowl, add lemon zest, lemon juice, honey, parsley, paprika and pepper, whisking to combine well. Add shrimp to bowl and toss gently to coat. Preheat broiler to HIGH and position rack so the food will be approximately 5 inches from the heat.
- Slice prosciutto slices in half across, then in half lengthwise, so each slice has 4 pieces. Wrap a piece of prosciutto around shrimp, securing with a toothpick. Place shrimp on prepared pan and repeat with remaining shrimp.
- Broil 5-6 minutes, turning shrimp over once about 2-3 minutes in, until shrimp is cooked through and prosciutto is crisp.
