Lemon & Onion Barbeque Pork Chops are easy to make, super tasty, and something the whole family will enjoy!

4 boneless pork chops
4 thin slices onion
4 thin slices lemon
4 tbsp brown sugar
4 tbsp ketchup

Steps:

  • Preheat the oven to 350 degrees
  • Place the pork chops in a 9x13 pan
  • Place a slice of onion on each pork chop
  • Place a slice of lemon on top of each onion
  • Put a tablespoon of brown sugar on each lemon slice
  • Put a tablespoon of ketchup on top of brown sugar
  • Cover the pan with foil
  • Bake for 1 hour (depends on the thickness of the pork chops. I used thin cut and 45 minutes was good)
  • Take the foil off the pan and baste the pork chops with juice from the pan
  • Bake an additional 20-30 minutes
  • Enjoy

1 tbsp dried oregano ((or other herbs, Note 1))
Zest of 1 lemon
1/3 cup (85 ml) lemon juice ((1 large or 2 medium lemons))
1/4 cup (65 ml) olive oil
3/4 tsp salt
1/4 tsp black pepper
4 pork chops bone in (, 2cm / 4/5" thick about 280g/9 oz each (Note 2))
Oil (, for cooking)

Steps:

  • Whisk Marinade ingredients in a bowl (or ziplock bag). Add pork. Marinade for 1 hr minimum, 3 hours ideal, 12 hours max (Note 3).
  • Take the pork out of the fridge 20 minutes before cooking.
  • Shake excess marinade off (but don't wipe dry) and cook using preferred method. Pictured in post served with Minted Yoghurt - see notes!

2 tablespoons vegetable oil
4 cloves garlic, minced
1 teaspoon salt
¼ teaspoon dried oregano
¼ teaspoon pepper
6 (4 ounce) boneless pork loin chops

Steps:

  • In a large resealable bag, combine lemon juice, oil, garlic, salt, oregano, and pepper. Place chops in bag, seal, and refrigerate 2 hours or overnight. Turn bag frequently to distribute marinade.
  • Preheat an outdoor grill for high heat. Remove chops from bag, and transfer remaining marinade to a saucepan. Bring marinade to a boil, remove from heat, and set aside.
  • Lightly oil the grill grate. Grill pork chops for 5 to 7 minutes per side, basting frequently with boiled marinade, until done.

1/2 cup lemon juice
2 teaspoons grated lemon zest
2 tablespoons olive oil

  • Place enough barbecue sauce to coat chops in a shallow dish or bowl. Add chops and smother in sauce to coat.   • Place pork chops in the marinade for at least 30 minutes.

6 big pork loin chops
3 garlic cloves , crushed
small handful flat-leaf parsley , chopped
½ tsp fennel seeds , roughly chopped
zest and juice 1 lemon , plus 1 lemon, quartered
3 tbsp olive oil
6 bay leaves

Steps:

  • Sit the chops in a dish. Mix together the garlic, parsley, fennel seeds, lemon zest and juice, oil and bay, then rub all over the chops. Leave the chops to marinate for at least an hour, or up to a day.
  • Heat a barbecue, frying pan or griddle pan. Season the chops, then cook for 5-8 mins on each side until cooked through (if cooking in batches, wrap the cooked chops in foil while you finish the rest). Add the lemon quarters for the last min to char, then serve alongside the pork.

85g pack of prosciutto
juice of 3 lemons , zest finely grated
3 tbsp fresh sage leaves, roughly chopped
3 x 350-450g/12oz-1lb pork tenderloins , trimmed of any fat
oil for brushing
50g butter , chilled and cut into thin slices
sage sprigs, to garnish

Steps:

  • Whizz together the prosciutto, the zest of three and the juice from 11⁄2 lemons, the chopped sage and plenty of seasoning until blended to give a thick paste. Put aside and reserve the rest of the lemons.
  • Cut each tenderloin lengthways down the centre, but not all the way through. Open out the meat, butterfly style, and flatten slightly. Make about 10 deep slashes in each tenderloin, cutting about three quarters of the way through. Rub the paste over the meat and into the slashes.
  • Brush the tenderloins with oil. Barbecue the meat, paste side down, for 6-8 minutes. Turn over and cook for a further 6-8 minutes until tender and cooked through.
  • Transfer the pork to a platter and, while hot, top it with the slices of butter. Leave for a minute or two to melt. Squeeze the reserved lemon halves over the pork (or use fresh ones). Scatter with sage sprigs, then serve cut into thick slices.
