OLD-FASHIONED LEMON BALM LEMONADE



Old-Fashioned Lemon Balm Lemonade image

An old-fashioned, simple lemonade but with the extra flavor of lemon balm! Enjoyed by children and adults alike. Serve well-chilled.

Number Of Ingredients 7

4 lemons
1/2 cup fresh lemon balm leaves
1/2 cup sugar
2/3 cup boiling water
2 1/2 cups water
ice (optional)
2 -3 fresh sprigs lemon balm, to decorate

Steps:

  • Scrub the lemons well. Peel the rind thinly, avoiding the white pithe, and set aside the lemons.
  • Place the lemon rind, lemon balm leaves, and the sugar into a small heat-proof pitcher. Pour the boiling water into the pitcher and stir well, crushing the lemon balm leaves to release their flavor. Leave mixture to infuse for about 15 minutes.
  • Now, cut the lemons in half and squeeze out the juice. Strain juice into a large glass pitcher, add a few fresh sprigs of lemon balm, and add the cooled, strained syrup. Top up with water or half-water half-ice, and chill until needed.

1 cup fresh lemon balm leaves
2 tablespoons honey
2 quarts boiled water
1 quart natural ginger ale (or carbonated water)

Steps:

  • Steep lemon balm leaves in boiled water for 20 minutes.
  • Strain
  • Add honey
  • Cool to room temperature.
  • Before serving, add ginger ale or carbonated water and ice.
  • Enjoy!

This is from Cd Kitchen, I haven't been able to find the lemon balm or verbena to make this yet but always love a natural alternative to aerosols so aim to give this a go once I can find all the ingredients.

1 cup water
1/4 cup fresh lemon balm (chopped) or 1/4 cup lemon verbena (chopped)
2 tablespoons lemon peel (Grated)
2 tablespoons fresh lemon juice
1 teaspoon baking soda

Steps:

  • Bring water to boil in a large saucepan. Add lemon balm, lemon peel, lemon juice, and baking soda and stir until baking soda dissolves thoroughly.
  • The mixture will foam up after you add the baking soda so be sure your saucepan is large enough. Let cool and fill a spray bottle.

Lemon Balm Cake with Lemon Sauce image

I love herbs and lemon balm is one of my favorites and I'm always trying to incorporate fresh herbs into my cooking and baking. I created this cake for a family gathering we had with some of our boys and their wives. It was a huge hit with all and the cake was gone in no time!

Number Of Ingredients 15

1 c sugar
1 stick unsalted butter
1 egg
1 c sour cream
1/2 tsp baking soda
1 c all purpose flour
2 tsp lemon balm chopped fine
1 lemon, juice only half and use all the rind of the lemon (see note)
LEMON SAUCE
butter the size of a large egg (2 tbsp give or take)
1 c sugar
1 egg, well beaten
1/4 tsp nutmeg
1 lemon, juice and rind
1 c boiling water

Steps:

  • 1. Cream together the sugar and butter and then add the egg until blended and creamy.
  • 2. Next add the sour cream and baking soda.
  • 3. Fold the flour into the creamy mixture. Gently fold in the lemon balm and add the juice of 1 lemon and the rind. Mix and pour into a greased and floured small Bundt pan or a 8 x 8 pan.
  • 4. Bake in an oven preheated to 350° for 45 to 50 minutes until toothpick inserted comes out clean. Notes: I grated the rind off the lemon first before cutting it in half to juice it. Also, baking time may vary from one oven to the next. Just keep checking it.
  • 5. Lemon Sauce Directions: Cream the butter and sugar until well mixed, add the egg, nutmeg and the juice and rind of the lemon. Beat several minutes and place in a saucepan. Add boiling water and bring sauce just to a boil over low heat. Do not boil!
