LEMON-BASIL MOJITO MOCKTAILS
In this twist on the classic summer beverage, lemon and basil take the place of mint. For a grown-up version, just add your favorite rum or vodka. -Cheryl Perry, Hertford, North Carolina

Steps:
- In a small saucepan, bring sugar and water to a boil. Cook and stir until sugar is dissolved. Place half the basil in a small bowl. With a pestle or wooden spoon, crush basil until its aroma is released. Stir into sugar mixture. Remove from heat; cool completely. Strain; refrigerate until cold., Place 2 cups crushed ice and remaining basil in a 4-qt. pitcher. Using a muddler or a wooden spoon, press basil leaves against ice until their aroma is released. Stir in basil syrup and soda. Serve over crushed ice in tall glasses; squeeze lemon wedges into drink.

- Muddle verbena leaves, lemon slices and the 1 ounce of simple syrup in shaker.
- Add citrus rum and ice. Shake vigorously.

- Put the lemon balm and the sugar in a short glass, and muddle until well mushed together (don't go crazy, or you will have bits of lemon balm in your teeth).
- Add the shot of rum, a squeeze of lime, and fill the glass with tonic water. Add ice and stir gently. Garnish with a lime or lemon balm sprig. Cheers!

- To make the lemon sugar: combine the zest of 1 lemon, with 3/4 cups of sugar in a bowl. Rim your tumbler glasses in sugar.

- In a small saucepan, bring the sugar, 1/2 cup water, and ginger to a boil over high heat, stirring to dissolve the sugar. Turn heat down low and simmer, covered, for an hour. Remove from the heat, add the mint leaves, stir to combine, cover and let sit overnight. The next day strain the syrup through a fine mesh strainer and store in a glass container.
- For the mojito, muddle 2 sprigs of fresh mint in the bottom of a glass, add the juice of ½ lime, syrup, rum and ice, top with seltzer, stir well and top with a slice of lime. Refreshing as a virgin drink also.
