JULIA CHILD'S ASPARAGUS SIMMERED IN ONIONS, GARLIC, AND LEMON

- Before peeling asparagus, start on the marinade. In a heavy saucepan, cook onions slowly in the olive oil with garlic, zest, herbs, and bay leaf. When tender (about 10 minutes), add peppercorns, wine, lemon juice, water, and salt. Cover and simmer slowly for about 20 minutes.
- Peel asparagus. Lay in a flameproof casserole dish and pour marinade over so asparagus is just covered with liquid (more water may be added if needed). Bring to a boil, cover, and simmer slowly for 20 minutes, or until asparagus is tender. Take out asparagus and arrange on serving platter. Boil down the cooking liquid until lightly syrupy and spoon over the asparagus. Sprinkle with parsley.

- Preheat oven to 375°F.
- Prepare asparagus. First rinse thoroughly and cut off fibrous ends. To do this, pull one spear out of the bunch. Gently bend the spear until it snaps. Then cut the remaining spears at the same length as the first.
- Arrange asparagus in a baking pan with all spears in one layer.
- Drizzle with olive oil and lemon juice, season with salt and pepper and toss within baking pan to combine. Rearrange into one layer.

- Coat asparagus with vegetable and arrange on a baking sheet. Season with salt and black pepper to taste.

THE BEST ASPARAGUS LEMON PASTA
I came across this at Epicurious and fell in love, and its been elsewhere. Years of looking for the lemon pasta I remembered as a child, and finally found it. Tweaked it a little to my own taste, replacing parsley with fresh basil and using linguine. If you don't have tender asparagus, the europes best frozen ones are far better than woody fresh ones. Do NOT substitute lighter creams, it just does not work that well.

- Cut the asparagus into 1/2 inch slices on the diagonal, or just into 3 pieces.
- In a steamer set over boiling water steam asparagus, covered, until crisp-tender, about 3 minutes.Drain and rinse under cold water to stop cooking. set aside.
- In a 6-quart kettle bring 5 quarts salted water to a boil for pasta.
- In a deep 12-inch skillet heat butter and cream over moderately low heat until butter is melted and stir in zest, lemon juice, and salt. Remove skillet from heat and keep sauce warm, covered.
- Add pasta to boiling water and boil, stirring occasionally, until al dente. Ladle 1/4 cup pasta water into sauce and drain pasta in colander.
- Immediately add pasta and asparagus to sauce and cook over moderate heat, tossing, 1 minute, or until heated through. Add basil and salt and pepper to taste and toss well.
- Sprinkle pasta with a little Parmesan and serve more Parmesan on the side.

- Preheat the oven to 350 degrees F.
- Heat the oil in a saute pan over medium-high heat. Stir in the onions and garlic; saute until translucent and fragrant and season with salt and pepper. Add the asparagus and saute until just tender. Remove from heat and let cool.
- In a small bowl, whisk together the eggs, heavy cream, dill and cheeses.
- In a separate bowl, add panko, paprika and butter. Mix well to combine.

- Preheat oven to 400 degrees.
- Line a large casserole dish with foil (3 qt Rectangle).
- Brush bottom and sides of foil with Olive Oil.
- Cut Salmon into 6 equal pieces.

I love fresh asparagus, so I wanted to post some of our family's favorites. This is a great spring dish and is perfect for brunch or dinner! You can substitute a good quality Italian bread crumb mixture for the topping (still mixed with the canned fried onions).

- For the topping:.
- Pulse bread, garlic, oil and parsley in food processor until coarsely ground.
- Combine with crushed fried onions.
- For the asparagus:.
- Adjust oven rack to middle position and heat oven to 425°.
- Fill large bowl with ice water.
- Bring 4 quarts water to boil in dutch oven over medium-high heat.
- Add 2 tbsp salt and asparagus and cook until just tender, about 6 minutes.
- Transfer asparagus to ice water, cool and drain on paper towels.
- Melt butter in the empty dutch oven over med-high heat.
- Cook onion until golden brown (5 minutes).
- Add garlic, zest and flour and cook until fragrant (1 minute).
- Whisk in broth and cream and simmer over medium heat until thickened (10 minutes).
- Toss asparagus in sauce and season with salt and pepper.
- Transfer mixture to a 13x9-inch baking dish.
- Top with crumb mixture and bake until golden brown (15 minutes).
- Serve and enjoy.
